Hotel La Casa del Califa - Viejer de La Frontera (4 nights)

This hotel takes its inspiration from the days when Vejer formed part of a great Islamic empire that stretched from Damascus to Granada. Vejer is one of the earliest and best-preserved of the Arab towns and formed a strategic part in the Moors' defense of their new homeland. Almost 500 years of Islamic domination left an indelible mark on the culture, architecture, and landscape of the region.

La Casa del Califa is situated in the towns' most important old square, its baroque-style fountain surrounded by palm trees forms the focal point of what is considered to be one of Andalucía's most seductive "plazas". The entrance to the hotel is directly opposite a fortified 15th-century tower and the original town walls.

The bedrooms look over a pedestrianized area of quiet narrow streets (two overlook the plaza). A large south-facing sun terrace gives uninterrupted views over the Marismas Nature Park and the Sierras de Retin. The skyline is dominated by the various ranges of the Alcornocales of the nature park.

In this small very personal hotel, you will find just the right balance of comfort and decor combined with wonderful views, tranquility, and, of course, excellent service.

The rooms

Staying at the Califa is like staying at a large private house with multiple levels, corridors, and courtyards dividing up the eight houses that make up the hotel of varying ages and architectural styles. There is a degree of intimacy in whichever part of the hotel you are staying in. Every room at the Califa is different in shape, size, style, and decoration and each has slightly different aspects.

Most rooms overlook a quiet pedestrian area except no.18 and "Palmera" (which overlook the palm-filled Plaza de España) and the "Torre" and "Africa" suites which are double fronted and overlook both the views across the town and country and the Plaza de España.

All rooms come equipped with:

  • Full tea and coffee-making equipment (except "Small Doubles")
  • Air-conditioning and heating
  • Full bathrooms with full-length baths and powerful showers (except no.12 and "Ãttico" with power showers)
  • Telephone
  • Safe
  • Satellite
  • TV and radio (Stereo systems and flat screens TVs in all suites)
  • Hairdryers in bathrooms
  • Junior suites and the Africa suite have mini-fridges

Program

Vejer de la Frontera has become the Spanish equivalent of Ludlow with its extraordinary selection of brilliant places to eat in a very out-of-the-way place. It's gained the reputation of the dining room of Costa de la Luz. As the new trend for Sherry bars takes hold in London and elsewhere, join a gourmet cooking, sherry, and shopping odyssey with your chef's Spanish kitchen in the historic Andalucian white town of Vejer de la Frontera.

As well as being a fabulous cook and an inspiring cooking teacher, your chef is one of the few British women to have qualified as a sherry educator in Costa de la Luz. She will share her passion for sherry and the delicious food flavors of this enchanting southern corner of Europe.

In addition to three half-day cooking classes and sherry tutorials in the kitchen, join her in the Vejer market and learn how to spot fresh fish, recognize different fish types, and top quality Andalucian Jamon (rather than Serrano). Don't leave without buying some Spanish food goodies to take home: smoked paprika, bunches of wild oregano, and bottles of spray Sherry vinegar.

Your skillful chef will also escort guests on a tapas tour around her favorite tapas bars around Vejer and visit the home of the fortified wine, Jerez, for sherry tasting at the selected family-run bodegas, which continues the tradition of one of the oldest wineries in the region.

During her classes, she cooks with the freshest fish, meat, and gourmet local ingredients. Tasty dishes on the menu prepared during the classes can include fish baked in (local) salt, fennel and lemon roasted pork, a classic paella, as well as sherry and chocolate cake, and Moroccan pastries, all washed down with tasty local Manzanilla among other sherries, rich reds from Toro and Ribera del Duero, and fruity whites from Rueda. Later, guests enjoy the fruits of their labor around the communal table.

Day 1: Vejer de la Frontera

Private transfer from either Jerez or Gibraltar airport to your charming hotel in Vejer de la Frontera (other airports or locations on request). In the evening, you will be collected from the hotel and escorted to your chef's for drinks on the roof terrace, followed by a welcome supper which you will have the opportunity to participate in preparing.

The dinner will take place on the patio, around the pool. You will sample dishes such as a salad of local lettuces, toasted walnuts, blue cheese from Asturias, fresh pears picked that day, topped with pan-fried bacon, and PX Sherry followed by delicious Presa Iberica a la Brasa until the acorn infused fat crispens, then served atop potatoes from Sanlucar mixed with lemon zest and sundried tomatoes from Granada.

A little mouthful of dark chocolate something and a glass of sweet PX to help you head downhill to an early to bed for the following day's class.

Day 2: Barbate - Vejer de la Frontera

In the morning you will be collected at the hotel and transferred to Barbate Fish Market to buy lunch. Barbate is a fishermen's small village, very famous for the fishing of the Almadraba Tuna. It's an almost non-stop feast when you start nibbling on the fruits of your labor.

Sipping on your first Manzanilla around 1 p.m., ahead of sitting down to lunch at 2 p.m. Leisure afternoon. In the evening, your chef will take you to your Tapas tour of Vejer. Vejer is bursting with wonderful eateries. Recently dubbed ''Spain's Tastiest Town'' by the Sunday Times, you will be sampling most of Annie's favorites tapas such as Carpaccio de Atun del Almadraba, Croquettas del Puchero, Chicherones con Limon y Sal, Costas con Boquerones y Anchosa, Chocos Fritos, and many Sherries and different wines too.

Day 3: Jerez Cadiz - Vejer de la Frontera

In the morning, you will be collected from your hotel and transferred to Jerez where you will visit Bodegas Tradición, home of wonderful Sherry and one of the most valuable privately-owned Spanish art collections. Sherry tasting. Transfer to Cadiz where you will enjoy lunchtime. Tapas tour around the old city.

Cadiz is famous for its pescados fritos and this is where you will indulge, following your first stop at Casa Manteca to sharpen your palates with Jamon y mojama. After lunch, a guided tour of the area around the cathedral. Shopping at Moroccan shop en route to Vejer. Large reviving G&Ts in Plaza d'Espana. Leisurely dinner at El Califa, a Moroccan restaurant in Vejer.

Day 4: Vejer de la Frontera

The chef will meet you to enjoy a short tour of Vejer to learn more about the locally grown and made products. Return to the kitchen to start on lunch which will be a feast of Spanish dishes such as Gazpacho, tuna, and roasted pepper salad, Gambas Ajillo, Albondigas of pork and chorizo, clams with Jamon and oloroso, tortilla - also, chicken with rosemary followed by chocolate and almond cake with PX raisins. Leisure afternoon.

In the evening, return to Casa Alegre for cocktails and a paella cooking class, the best and most delicious paella of chocos, chicken, chorizo, and saffron. Sublime! This evening, you will have your discussions of everything you have enjoyed. A time to enjoy your last mouthfuls of Vejer before you head onto your next delicious destination.
