Are you ready to create some memorable Thai cuisine? Why not to cook and dine with Scenn at the DaGrub and Mortarboard cookery tutorials? We'll guide you step by step in our spacious new classroom, deep in the huge, wild and biodiverse Western Forest complex; a great place to study. This is an animated new cookery tutorial which will light up your taste landscape, with insights into the real Thai country-side family meal to educate your palate. Meals are better appreciated if cooked with a lively variety of whole foods, both more appetizing and more satisfying.

Cool and spacious rooms will be your home in Sangkhlaburi. Its private, in a gated compound with high ceilings, water or hill views. A good place to stay, the place has Wi-Fi connectivity, hot water, wheel chair access, to mention some facilities. A small theater with stage is available for relaxing or writing. Each room has own bathroom and modern ceramics.


  • Tutorials start at 09:30 until 12:30 plus an hour to dine and chat.
  • Sourcing food is from 07:00 -08:00 giving a total of 4 to 5 hours per day.
  • Menus jointly will be chosen by Scenn, gardeners and the season, day by day.
  • You will enjoy up to 8-course family and traditional Thai 5-hour cookery tutorials prepared from scratch, fast paced, hands-on, or observe only.
  • All tutorials are going to be taught by chef Scenn using just-picked whole organic and wild ingredients.
  • You will learn the right skills of sourcing, cutting and combining, the right sequence, timing, taste placings and taste adjustments.
  • Luckily there's a dazzling array of wild and cultured, medicinal and culinary herbs and plants in the gardens, jungles, small holdings, and markets here in Sangkhla.
  • The hill town where three rivers join in the jungle, also called "Fish Palace", a perfect spot to train and calibrate your taste buds.
  • Chef Scenn will explain and demonstrate (source and cook her own meal too) for the students to imitate and practice. Questions accumulated can be answered during the meal, if not before.
  • Food quantities are the same for everyone. When sharing, one person is hands-on cooking allowing the other to assist, or record, in their own language, and they can switch.


This retreat will take place in Sangkhla Bur, a district in the Kanchanaburi province in western Thailand.


Seasonal dishes compositions might include:

  • Fresh giant catfish, grilled and served with wild goose neck mushrooms, scalded spinach flowers, and a side dish of raw just picked katin shoots, galangal flowers, and young lime leaves.
  • Fresh giant, tender, succulent and crispy Siamese spinach leaf salad. With thinly sliced braised fillet of beef, garlic, and just picked lemon juice dressing.
  • Oysters on papaya salad with a fish egg topping and just dug turmeric sticks.
  • Oil free pan saut, fresh Pbla Orh served with a wild roselle leaf spicy sour relish topped with roast onion and garlic.


Optional extras: if unusual, you have the option to choose exotic or just first in season ingredients become available such as extralarge fresh water prawns. If (occasionally) the cost is beyond our forecast for the tutorial, we will inform you first of any extra charges.

Cancellation Policy

  • A reservation requires a deposit of 50% of the total price.
  • The deposit is fully refundable if the booking is cancelled up to 14 days before the arrival date.
  • The rest of the payment should be paid 2 days before arrival.
