Graduated in Il Corso Superiore di Cucina Italiana of ALMA, La Scuola Internazionale di Cucina Italiana, Nino then started his professional job: cooking, calculation, gastronomy actions, making lists of needed foods, responsibility for timely food supply, and time management of all kitchen employees - in adherence to HACCP standards. Since then, he has built several partnership as Executive Chef to open and start restaurant in Italy, France, and Montecarlo (Spain). He then opened PizzAcademy Sanremo as a new way to teach and cook for individuals and companies.
