The best way to learn to cook is to do it yourself. On this intensive, hands-on course, you will cook, cook, and cook! Your class will be divided into 2 sessions - theory and demonstrations in the morning session, and practical application (cooking) and critique in the afternoon section.

Morning session starting at 09:00

The head chef discusses theory, ingredients preparation, and demonstrates how to cook each dish, discussing flavors, ingredients, substitutions, cooking methods, while you ask questions and take notes.

Afternoon session starting at 14:00

You get to prepare each dish based on recipes, notes taken, and observations. Of course, as you have questions, assistance is provided. By independently preparing each dish, you truly learn how to prepare it. Your creation is then critiqued, and the head chef tells you how to improve it. Typically, 5-6 professional Thai dishes are covered in-depth daily. Your class ends upon satisfactory completion of assigned dishes. Please find a sample menu for your cooking class below. Day 1, Monday

  • You will have a morning and an afternoon cooking class during which, you will cook the following dishes:
  • Chicken wrap with Pandanus leaves (Gai Hor Toey)
  • Deep fried shrimp in spicy sauce (Phat Khi Mao Goong Thod)
  • Grilled long eggplant salad (Yam Ma-Kya Yaw)
  • Steamed fish with ginger sauce (Pla Neung Khing)
  • Sweet dip (prepare)
  • Thai layer cake (Ka Nom Chan)

Day 2, Tuesday

  • You will have a morning and an afternoon cooking class during which, you will cook the following dishes:
  • Crispy catfish green mango salad (Yam Pla Duke Foo)
  • Jungle curry chicken (Gaeng Pah Gai)
  • Jungle curry paste (prepare) (Nam Phrik Gaeng Pah)
  • Pork and tomato chili dip (Nam Prik Ong)
  • Stir-fried shrimp with asparagus (Goong Pad Nor Mai Farang)
  • Sweet coconut stuffed dough (Ka Nom Saide Sai)

Day 3, Wednesday

  • You will have a morning and an afternoon cooking class during which, you will cook the following dishes:
  • Banana blossom salad (Yam Hua Plee)
  • Crispy roti
  • Dressing up shrimp (Goong Song Khuang)
  • Goong Song Khuang sauce (prepare)
  • Stir-fried clams with Thai chili paste (Hoi Laai Pad Naam Prik Phao)
  • Stir-fried morning glory (Phad Pak Bung Fai Daeng)

Day 4, Thursday

  • You will have a morning and an afternoon cooking class during which, you will cook the following dishes:
  • Chinese plum sauce (prepare) (Naam Jim Buay)
  • Crispy spring roll pie (Goong Ka Bueang)
  • Lemongrass wrap with shrimp (Goong Hor Ta Khai)
  • Golden thread (Ka Nom Foi Thong)
  • Seaweed wrap with chicken (Gai Hor Sa-Rai)
  • Shrimp spring rolls (Po Pia Poo Thot)

Day 5, Friday

  • You will have a morning and an afternoon cooking class during which, you will cook the following dishes:
  • Fruit and vegetable carving
  • Hai Tom Yam pork noodle soup

    Mandarin Oriental Hotel Apprenticeship Program (OHAP) (Thai)

    Chef Nat grew up in a small village on the banks of the Tha-Jeen river, just a short ways northwest of Bangkok. He acquired his love of cooking by helping his aunt Cha-Loy in the family kitchen. After graduating from Srinakharinwirot University with a degree in Business Education, he realized his real love was Thai cooking. He thereupon enrolled in the intensive one year Traditional Thai Cuisine program of the Mandarin Oriental Hotel Apprenticeship Program (OHAP). Upon graduation, he was recognized as their outstanding student.

    "We've had a great experience at Phuket Cooking Academy. Our teacher, King, spoke very good English and was easy to understand. We started the day at the market where she made us try a bunch of fruits, veggies and herbs. Next we went to the school where we ate sticky rice desserts for breakfast and got an overview of the course. The class is on a covered deck in the back of a private residence. Each student gets an apron, a hat, a burner and several woks to cook in. It was very clean and well organised. We started with making our own coconut cream and milk then made curry for our recipes. My wife and I went for the full day course. We cooked 10 meals. It was a lot of fun and I was impressed with the quality and taste of the meals we were able to cook. I recommend you take the course early in your trip because you get to understand more about the products available at the markets and it breaks the ice for the rest of your trip, you get to enjoy more of the desserts, sweets, and meals available in Thailand. This is a great activity to do in Phuket and it was one of my favorite. Thank you, King, for your kindness and the quality of your teaching. I highly recommend the Phuket Cooking Academy!"

    "We spent a great day at the cooking academy; this school is great for people who actually want to learn how to cook Thai food, both on the day and once they return home again. We were told all about the ingredients, and which ones we could swap them for if we were unable to get certain spices or vegetables in the UK. It's a long day and a lot of food to eat; however, it's good value for money as the detail of instructions and hands-on learning were superb.We have done classes in other countries before, but not really had the correct help to be able to recreate it once we got home. This time, we are sure we can reproduce some very nice dishes. It's a little tricky to find, but once you arrive, it's a lovely location with really nice people. This really was the highlight of our holiday! Thank you very much!"

    "I've tasted some of the best Thai food from Phuket Cooking Academy. Ying has a few hidden tricks that bring a subtle punch to the spices. I feel I can now open a Thai restaurant with the menu of mango and sticky rice, papaya salad, Phad Thai, duck and red curry, and delicious stir-fry seafood dish.I highly recommend this for a great family experience. We have three kids: 16, 14, and 11. Suggestion: Don't eat breakfast before you come. We cooked enough food to cover breakfast, lunch, and dinner."
