  • 2 tablespoons of fresh lime juice
  • 1 clove of minced garlic
  • 2 tablespoons of white sugar
  • 1/2 teaspoon of garlic chili sauce
  • 3 tablespoons of hoisin sauce
  • 1 teaspoon of finely chopped peanuts

How to prepare

After gathering your ingredients, you can start by bringing a medium saucepan with water to a boil. Boil your rice vermicelli here for three to five minutes, or until al dente, and drain it.

Next, you should fill a large bowl with hot water. Dip one wrapper into the hot water for a second to soften. Then, lay your wrapper flat. In a row across the center, place two shrimp halves, a handful of vermicelli, basil, mint, cilantro, and lettuce. This leaves around two inches of the wrapper uncovered on each side. Fold the uncovered sides inward, then tightly roll the wrapper. Repeat the same process with the remaining ingredients you have.

Then, gather two small bowls. In one, mix the fish sauce, water, lime juice, garlic, sugar, and chili sauce. In the other, mix the hoisin sauce and peanuts.

And voila! You may enjoy your spring rolls by dipping it into the fish sauce and hoisin sauce.

 

For lunch - penne pasta with chicken and asparagus

What you’ll need:

  • 1 (16-ounce) package of dried penne pasta
  • 5 tablespoons of olive oil, divided
  • 2 skinless and boneless chicken breast halves - cut into cubes
  • Salt and pepper, plus garlic powder to taste
  • 1/2 cup of low-sodium chicken broth
  • 1 bunch of trimmed slender asparagus spears - cut diagonal into 1-inch pieces
  • 1 clove of thinly sliced garlic
  • 1/4 cup of Parmesan cheese

How to prepare

Once the ingredients are ready, bring a large pot of lightly salted water to boil. Add your pasta and cook until al dente, for eight to ten minutes. Then, drain it and set it aside.

Next, warm three tablespoons of olive oil in a large skillet over medium-high heat. Stir in your chicken, and season it with salt, pepper, and garlic powder. Cook the chicken for about five minutes or until it turns brown. After that, you may remove the chicken and set it aside.

You can then pour your chicken broth into the skillet. Then stir in your asparagus, garlic, and a pinch more of garlic powder, salt, and pepper. Cover and steam until the asparagus is just tender. This can last from five to ten minutes. Then, you can put the chicken back on the skillet.

After all these steps, stir the chicken and other ingredients with the pasta and mix it well. Let it sit for five minutes and then drizzle it with 2 tablespoons olive oil. Stir it again and add the final touches by sprinkling it with Parmesan cheese. With that, you’ve got yourself the perfect homemade lunch for spring!

 

For dinner - grilled halibut with cilantro garlic butter

There’s nothing like wrapping up your day with a meal that’s flavorful and also melts in your mouth. Here’s a dish that is definitely easy to make. Give it up for the grilled halibut with cilantro garlic butter!

What you’ll need:

  • 4 (6-ounce) fillets of halibut
  • 1 lime, cut into wedges
  • Salt and pepper to taste
  • 3 cloves of coarsely chopped garlic
  • 1/2 cup chopped fresh cilantro
  • 1 tablespoon of fresh lime juice
  • 2 tablespoons of butter

What you’ll need:

  • 3 pints of fresh strawberries
  • 1/2 cup of white sugar
  • 2 1/4 cups of all-purpose flour
  • 4 teaspoons of baking powder
  • 2 tablespoons of white sugar
  • 1/4 teaspoon of salt
  • 1/3 cup shortening
  • 1 egg
  • 2/3 cup of milk
  • 2 cups of whipped heavy cream

How to prepare

Begin by slicing your strawberries and mixing them with a half cup of white sugar. Then, set it aside.

Preheat your oven to 425 degrees F (220 degrees C) and grease and flour a one eight-inch round cake pan.

In a medium bowl, combine the flour, baking powder, two tablespoons white sugar, and the salt. With a pastry blender, cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until everything is mixed thoroughly.

Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for fifteen to twenty minutes or until golden brown. Let it cool partially in a pan on a wire rack.

You can then slice the partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top it with the other layer. Use the remaining strawberries on top of the cake and cover it with whipped cream. Rather than a cherry on top, you’ve got yourself sweet little strawberries of delight on top!
