Alejandra Kauachi

Chef Alejandra Kauachi is passionate for Mexico, her culture, food, fiestas, holidays, and celebrations. She thinks she was born in a kitchen, so the decision of being a cook was natural. Her two grandmas were amazing cooks, who taught her a lot of Mexico's traditions. She grew up helping them and enjoying spices, scents, and amazing flavors. With that, she decided to study culinary arts in Mexico City. She has been everywhere in the food industry, but where she really felt complete is in a classroom, sharing with her guests.

    Alejandra and her staff are warm, inviting people who care about your time with them, and go out of their way to make this a fun, relaxing and tasty experience. This was our second time with them. My husband, who does not cook, nor is he interested in learning, couldn't wait to go back to Mexico Lindo for the great hospitality and delicious food. And yes, he cooked and learned a few things too. Go, you will come home telling all your friends about it.

    My friends and I enjoyed Mexico Lindo, the well organised and entertaining cooking school in the jungle. Not only did we have fun, but we learnt to cook some tasty dishes. The atmosphere was relaxed and well worth the cost.

    We took backroads to get there and I want to tell everyone how special and memorable the decor, the foods, the stories the level of professionalism we experienced in our cooking demo day. Not as hands-on as I would have liked but others in our group thought it was perfect!

    We spent the most most incredible day of our week-long vacation to Cancun with Alejandra and her gracious and friendly staff.

    I had no idea what to expect from the day but we were picked up at our hotel, driven the 40 minutes to her secluded facility and gardens, had a delightful breakfast of intriguing and delicious local treats and beverages, were shown around the gardens, then proceeded to the spend the day cooking, talking, and laughing with our gracious hosts. At the conclusion of the day we all sat back down with Chef Alejandra and enjoyed the fruits of our labors. The food was delicious! The experience was a joy! Alejandra and her team were just delightful people and we learned a lot about not only cooking but also about Mexico and her people.

    I was not at all sure about this experience beforehand as it was a preference of my traveling partner and seemed like an expensive side trip on our vacation that I was really not sure I would enjoy. In effect I was going along to please her. I was wrong. This was by far the most enjoyable and interesting day of our week in Cancun and I would highly recommend this experience for anyone who has an interest in cooking, eating, and learning about Mexico. Above all, it was a private and unique experience away from the usual touristy activities and crowds that would have cost double or more in the United States.

    Chef Alejandro is a talented chef, a consummate host, and a well-traveled, interesting, and joy-filled person to spend time with if you open yourself to letting her into your life. I cannot recommend this authentic experience enough.

    My husband and 22 year old son spent the day at this venue and absolutely loved it. They transported you to and from the venue and the people are lovely! The food was excellent and my husband can't wait to cook at home what he learned there. They also provide you with a folder of the recipes you made. The environment was fabulous, a gorgeous kitchen in the jungle!

    My son and I were staying at the Club Paradise Club and he registered us for class at Mexico Lindo. Alejandra picked us up and took us to her school. We were so surprised at the beauty and tranquility of the place. Not sure what we expected...but this was over the top. Ale' and her staff were amazing. We started at 10 am and finished around 4. A full day of instruction, history of Mexico, the best coffee I ever had, and delicious food, prepared with love. We had about six courses. I will never forget this day.

    Mexico Lindo is a charming place where we feel welcome and very comfortable! We learn a lot of recipes hands on. Its very organized and food is delicious! We pick different day for different menu. My husband and I love to go through all day starting with a rich breakfast. Dinner is fabulous! Unforgettable!

    While staying at a local resort in Riviera Maya, our concierge recommended Mexico Lindo due to a problem with another vendor (they were able to book us with one day notice - wow). What an amazing experience - not only the food but the overall culinary experience. Chef Alejandra, Claudia, and staff were very welcoming. The cooking skills learned were immediately used when coming back to Pennsylvania - everyone loved the food!

    Mexico Lindo and Chef Alejandra were absolutely the best. My husband and I were on vacation in Cancun with his company and the cooking class was the excursion we chose. I thought 7 hours learning how to cook sounded rough, but we had so much fun and Chef Alejandra made us feel so welcome. We did learn so many new cooking tips and we got to cook about 7 different Mexican dishes. Every bit of it was extremely good. From the best Mexican coffee, pastries, and beyond good hot chocolate to the dessert, which was a cornbread with caramel drizzled over it and the tequila shot, I would recommend this to everyone. You should absolutely go and do it, if you can.

    I found Mexico Lindo on TripAdvisor. Our hotel told us that they were not aware of Mexico Lindo and suggested we participate in another cooking class. I insisted that I wanted to go to Mexico Lindo, so I made the reservations for myself. I was so happy I did. This was one of the best excursion I have done in Cancun and this was my 10th visit! I summarize the day with three Fs - fun, facts, and food! We learned about Mexico, the culture, the history, and modern day living. We learned how to cook an entire meal (8 or 9 different items) and then sat down to the great feast that we prepared. It was truly a top notch operation. Thank you so much, Chef Alejandra. You are amazing and we will be back. Thanks to Claudia and the team too!

    My fiancé and I had a wonderful time at Chef Alejandra's Mexican culinary school. They arranged for transportation from our resort in Puerto Morelos. When we arrived, we were greeted by her staff and enjoyed a lovely breakfast with Chef Ala, who also hosted one of her childhood friends and his family. We then took a tour of her budding garden and learned about many of the plant ingredients that we would be using later that day. From there, we entered the kitchen, which as others have noted, is set up for a more intimate, hands-on experience with the chef. We prepared two types of salsa, flautas, beef salad (which would later be used in tacos), and pozole. Chef Ala also helped us to improve our cutting skills and showed us proper technique for cutting and preparing several ingredients, such as avocado and beans. We also made a delicious rice pudding. As others have stated, this is a very hand-on experience, where you do most of the actual cooking. We then learned how to prepare sopes and corn tortillas, while enjoying each other company with a few rounds of tequila. Special thanks to her friends, who taught us about the many varieties of tequila in Mexico! We then had a fantastic lunch together with great conversation, which left our bellies completely full. Her kitchen is well designed and spacious. The overall experience is very well-organized. Thank you for a wonderful cultural experience, one that we will certainly repeat on our next visit.

    A wonderful day in the kitchen with excellent Mexican food! Chef Alejandra and her staff provided easy to understand instructions for preparing several traditional Mexican dishes. We were served a light breakfast, before heading to the kitchen to get started making lunch. This is an experience that both men and women can enjoy, whether you like to cook or you like to eat! My boyfriend had as much fun as I did at Mexico Lindo! Sitting at the table with the other people attending the class, enjoying interesting conversation, and with excellent food we helped prepare was a perfect ending to a perfect day!
