Learn Oaxacan coastal and interior cuisine in a luxurious beach-front home with a world-renowned expert. Chef Ana offers her award-winning, all-inclusive culinary vacation for a limited time on an unspoiled beach in Puerto Escondido. Pick fish and seafood right from the fisherman's boat. Scour the market looking for exotic ingredients. Meet the artists in residence at Casa Wabi and enjoy signature cocktails from your relaxing beachfront perch.
During this holiday, you will be staying at Casa Buena Vista which is a mansion and is your luxurious culinary home. The property has a wonderful kitchen, pool, and ample common areas to relax and enjoy the ocean breeze.
All rooms have air conditioning and private baths. La Villa Bonita will provide daily maid service and table service. Five rooms are available for the guests. Two rooms have up to four person capacity and three rooms have a two person capacity.
This is a luxurious culinary adventure like no other, for a limited time only! Welcome to Puerto Escondido, Oaxaca, Mexico, the new home of La Villa Bonita’s coastal weeks! Food is your major focus during the week - learn how to prepare classic Oaxacan dishes and where it comes from, and enjoy gourmet meals prepared by Chef Ana.
Guests arrive at PXM (Puerto Escondido) airport. La Villa Bonita pick you up and bring you to the house which is a 20 minutes' drive. Let the ocean breeze sweep your cares away.
Guests will be greeted with delicious cocktails as you get accommodated in your room and stroll the property. Snacks will be available throughout the day, and lunch will be served in the late afternoon/early evening depending on the arrival times. You will talk about the week to come!
Today you start early with a light breakfast at 06:00 am so that you can be present at the Bahia Principal when the fishermen arrive with their catch. Chef Ana will teach you how to select the best fish.
You will then go to the main market for a tour and selection of fruits and vegetables followed by traditional Oaxacan lunch at Las Juquileñas. You will return to the house with some time to relax before your first cooking session for lunch at 03:00 p.m. Today you will prepare fresh tuna tostadas, Amarillito with fresh shrimp and Lechilla for dinner at 08:00 p.m.
The famous breakfast will begin at 9:00 a.m. with a new main dish each morning, fresh fruit, yogurt, granola, fresh biscuits. At 11:00 a.m. class will begin with the preparation of the classic Oaxacan dish Manchamanteles with pork, Chiles Rellenos with fish, and a fresh mango dessert among other side dishes.
You will have lunch between 2:00 p.m. - 3:00 p.m. and then guests will have time to enjoy the beach and house until you have dinner at 8:00 p.m.
After breakfast at 09:00 a.m. you will begin your cooking session at 11:00 a.m. to prepare Aguachile, Chileajo, an assortment of Oaxacan ceviches, and Escabeche de Pescado for lunch. Today is a double cooking session, and you will also prepare Tapistes de Pescado, black rice with fried plantains, nopal salad, and corn cake for your dinner.
You will have lunch between 2:00 p.m. - 3:00 p.m. Later in the afternoon, La Villa Bonita will organize an excursion to go shopping in the artisan’s market and to see the release of the baby sea turtles. Dinner will be of dishes previously prepared. It will be served at 08:00 p.m.
Explore the architectural grounds of the beachfront artist compound at Casa Wabi. Today you will have breakfast at 09:00 a.m. This morning is one to relax and enjoy the house and the beach. You will be served with a light lunch in the house at 01:00 p.m.
You will leave at 2:30 p.m. for a tour of the Casa Wabi Foundation and Art Center of the famed contemporary artist, Bosco Sodi. Afterwards, you will have drinks and snacks at the Hotel Escondido which is next door.
After the fabulous breakfast, you will start the cooking session at 11:00 a.m. Today is your Oaxacan tamale day with fresh water mussel tamales, rice with chepil, cold avocado soup, and strawberry tamales.
Today you will also begin your spectacular Mole Negro that will cook for two days in preparation for your Champagne dinner on Thursday evening. Lunch will is served at 02:00 p.m. You will have a light dinner with cocktail service at 08:00 p.m.
After breakfast, you will have a relaxing rustic palapa/hammock/beach day at Aguas Blancas beach and have fresh oysters, lobster, and fish. However, today is your day to decide what you like to do (additional charges apply depending on what you would like).
You can go fishing, take a surfing lesson, go shopping in Puerto Escondido, read a book by the pool. It is a day to rest, explore or shop. You can go with La Villa Bonita to Aguas Blancas or do what your heart desires.
La Villa Bonita have a tour guide available as well if you would like to choose from a variety of options. Later in the day, they will schedule a visit to a local mezcal producer to try the different varieties. The farewell Champagne Mole dinner will be served at 08:00 p.m.
Parting is such sweet sorrow. Today you have breakfast and La Villa Bonita will take you to the PXM airport. They know that many of the flights are early to go to MEX so whenever your flight is they will get you to the airport at the appropriate time. They look forward to seeing you again on another culinary adventure with Chef Ana and La Villa Bonita.

Please also note that these are only very limited dates for this holiday. La Villa Bonita Culinary Vacations started offering coastal packages because they have over 18 years offering award-winning culinary packages at their specially designed culinary resort in Tepoztlan and their guests wanted to have a new experience with Chef Ana. There are a limited amount of weeks that they are in Puerto Escondido and they have filled up every year. Please make your reservation early. If you have a group, they can check availability for different dates and they have an additional house next door if the group is larger than the capacity of the main house.
Ana Garcia is one of the most vivacious traditional Mexican chefs and teachers in Mexico today. The inspiration for Chef Ana’s recipes and hospitality grow out of her long, rich family history in central and northern Mexico. She has taken this extensive knowledge and incorporated it into a culinary repertoire that includes traditional central and northern Mexican specialties, as well as nouvelle Mexican cuisine using traditional ingredients in new and gastronomically adventurous ways.
This holiday will take place in a mansion on an unspoiled beach 20 minutes south of Puerto Escondido, Oaxaca, Mexico. Your culinary home for the week is located in an area called Rancho Neptuno and is right on the beach in an area called the Costa Cumana. You can enjoy Puerto Escondido and then retreat to your tranquil culinary paradise on the beach. The area has very few houses and the beach is unspoiled.
Every day during this holiday, you will be served with exclusive gourmet dinners and lunches prepared by Chef Ana and staff, of the freshest local ingredients. You will have drink and snack service throughout the day, and guests are also welcome to serve themselves at any time. Also, you will be served with alcoholic and non-alcoholic beverages. This is your home! La Villa Bonita are there to serve you and will have a full pantry during your stay. If you would like to have a special food or drink on hand please let them know and they will accommodate!
Now this is what you came for - Chef Ana's wonderful repertoire of Oaxacan coastal and interior cuisine. You will have four hands-on cooking sessions in the ample kitchen preparing local coastal and central Oaxacan delicacies. Create dishes such as Amarillito, Manchamanteles, Escabeche de Pescado, a variety of ceviches, tamales de tichinda (fresh water mussels), and the crown jewel a Oaxacan Mole Negro that will be loving prepared over two days for your final dinner - a Mole and Mexican Cava celebration. These dishes among many side dishes, desserts, drinks and, of course, the signature cocktails will be prepared as well.
Your itinerary is a very complete one but you have time to enjoy the beach and house. During this holiday, you can enjoy activities that are not included in the package that La Villa Bonita can arrange for an additional fee. Yoga will be available for an additional fee every day starting on Sunday at 08:00 am. Please let La Villa Bonita know if you are interested so that they can schedule accordingly. Massages can also be scheduled a day in advance at any point during the week. The house is yours to enjoy as well as the kitchen.

Please book your flight to arrive at Puerto Escondido Airport (PXM). Transfer from and to the airport is included. La Villa Bonita Culinary Vacations will pick you up from the airport.
It is easy to get to Puerto Escondido airport (PXM) as there are many flights from Mexico City (MEX) to PXM but they do not link up to the major airlines so you will need to purchase the short 45 minutes flight from MEX to PXM separately. La Villa Bonita will help you to find the best flights! No need to worry.
You can fly into Mexico City on Friday morning and take a short 45 minute flight to Puerto Escondido from Mexico City. If you cannot find flights to match up, you could arrive to Mexico City on Thursday, stay a night, and fly out the next day to Puerto Escondido. Return flights are not a problem as there are morning flights to MEX. La Villa Bonita Culinary Vacations will pick you up from the Puerto Escondido airport (PXM) on Friday at any time you would like to arrive.
