How the course works

The classes are conducted with a maximum of 4 connections on Zoom. In one household, maximum 3 people.

This is also suitable for gluten-free guests. Rita shall send you also the ingredients list. She is also available for special requests or if you wish to do a family course, just one-to-one (the family and her).

At the booking

Once you book, Rita shall send you the recipes so that you can print them out and follow them as you cook. The recipes will feed 4 people.

You will have 2 vouchers and can then confirm with Rita the days you would like to join in. She will invite you on Zoom.

Classes will be held at 5 p.m. local Italy time, available on Monday, Tuesday, Thursday, Friday, and Saturday.

Course information

You can choose off of the below menus:

Day 1: Basic ragu sauce, tomato, and basil, fresh pasta Tagliatelle and maccheroni

Ingredients

  • 500 grams of ground beef
  • 1 Italian salsiccia
  • 1 carrot
  • 1 small onion
  • 1 celery stick
  • Chopped parsley
  • 1 clove garlic
  • 2 liters of passata (tomato juice)
  • Tomato paste
  • 1 beef stock cube (buillion)
  • Fresh basil
  • 1 kilogram of plain all-purpose or 00 flour
  • 5 eggs
  • Extra virgin oil
  • Salt
  • Pepper
  • Grated parmesan for your pasta

Cooking utensils

  • 3 pots: 1 for ragu, 1 for tomato, and 1 for boiling your pasta
  • Pasta machine for rolling the pasta, if you do not have one, just a rolling pin
  • Pasta cutter
  • You will require a working top for making and rolling the pasta, make sure your machine fits onto the worktop. You can do this before the class starts.
  • A couple of trays to put the fresh pasta once made

Day 2: Gnocchi, sausage and mushroom sauce, creamy mushroom sauce, speck and mascarpone sauce

Ingredients

  • 2 kilograms of white starchy potatoes
  • 500 grams of all-purpose or 00 flour
  • 60 grams of dried porcini mushrooms
  • 1 Italian sausage
  • 1 small onion
  • 100 grams of pancetta
  • 100 grams of smoked ham
  • 400 cubic centimeters of cream
  • 250 grams of mascarpone cheese
  • Chopped parsley
  • Milk
  • 1 veg buillion (you will have leftover tomato from the day before)

Cooking utensils

  • You will need an area for making gnocchi
  • Pot for boiling gnocchi
  • Gnocchi board, if you have one or else, 1 fork will be fine
  • 3 pans for making each sauce

Day 3: Cheese and spinach ravioli, mushroom-filled ravioli, salmon filling ravioli

Ingredients for pasta

  • 1 kilogram of flour
  • 8 eggs
  • 500 grams of ricotta cheese
  • 150 grams of boiled spinach
  • Nutmeg
  • 30 grams of dried porcini mushrooms
  • 50 grams of smoked salmon
  • 200 grams of grated parmesan
  • Plus some for serving chopped parsley
  • Extra virgin olive oil
  • 100 grams of butter
  • Sage leaves

Cooking utensils

  • You will need a pasta maker/roller
  • Pasta cutter
  • Ravioli tray, if you don't have one, you can use a round cookie cutter
  • Rolling pin
  • 3 bowls for preparing fillings
  • Pot for boiling gnocchi

Day 4: Crespelle ai funghi (mushroom pancakes), tiramisu

Ingredients for crespelle ai funghi (mushroom pancakes)

  • 2 eggs
  • Approx. 250 grams of all-purpose or 00 flour
  • 1 liter of milk
  • 200 grams of butter
  • Chopped parsley
  • 30 grams of dried porcini mushrooms
  • 100 grams of mozzarella cheese
  • 150 grams of grated parmesan

Cooking utensils

  • You will need a rectangular baking tray
  • Small non-stick pan for making pancakes
  • Small pot for making the bechamel sauce

Ingredients for tiramisu

  • 5 fresh pasteurized eggs (Rita does not use fresh farm eggs for risk of salmonella)
  • 6 spoonfuls of sugar
  • 500 grams of mascarpone cheese
  • 1 packet of Pavesini biscuits or ladyfingers
  • Cocoa powder
  • Some grated chocolate
  • 2 cups of coffee, either instant or Italian coffee
  • 3 tablespoons of rum

Day 5: Risotto agli asparagi and Cantucci (biscotti)

Ingredients for asparagus risotto

  • 500 grams of long grain rice
  • A bunch of asparagus, you can cook asparagus beforehand (this will save time) or buy a packet of frozen asparagus and you can do it together
  • 50 grams of butter
  • 100 grams of grated parmesan
  • 1 veg stock (buillion)

Ingredients for Cantucci

  • 400 grams of all-purpose or 00 flour
  • 250 grams of sugar
  • 5 eggs
  • 4 spoonfuls of sambuca, if you have it, anise
  • 1 orange
  • 1 teaspoon baking powder

Cooking utensils

  • 1 baking tray, with oven paper
  • Large pot for risotto and baking tray for Cantucci

This cooking course is conducted online. Rita Lucherini from La Mezzaluna is based in Italy (GMT +2) and she will live-stream the classes via Zoom. You can participate from the comfort of your home by just using your phone or computer.
