Italian Food and Flavours has secured exclusive use of one of the most historic houses in Cossignano as the base for your Italy tours. The 17th century house “Casa Pansoni” is built into the town walls is the blue plaque home of historian and town chronicler Nicola Pansoni. Sensitive restoration has preserved many of the original architectural features.

Set in the “Centro Storico” (historic center) the house is just seconds from the restaurant “Castello de Marte”, where you will enjoy most of your meals and for your Italian Food and Flavours cooking schools in Italy. The house is the ideal base for taking in the atmosphere, relaxing between cooking sessions and exploring the refined charm of the delightfully historic Italian hill town of Cossignano.

One of the highlights of your Italy cooking school week will be experiencing recipes and tastes that will almost certainly be new. On a typical day you will go shopping with chef Fabio to select the finest ingredients then you will learn how to turn the wonderful local fresh ingredients into traditional rural Italian dishes. Taught by a local chef Fabio, you will learn the secrets of creating the tastes, textures and flavors of Italy. To round off a truly memorable day sit down to dinner and relax with your companions and enjoy a meal at Fabios fabulous, atmospheric, TripAdvisor 5 star rated restaurant, Castello de Marte, Cossignano.

    Your chef and culinary adventures tutor Fabio lives and works at his renowned restaurant “Castello de Marte” in the atmospheric main square just around the corner from your base. Fabio regularly posts authentic rural Italian recipes on the Italian Food and Flavours blog.

Your holiday is based on one of the most picturesque hill-towns of the region. Its charm stems partly from its history which formed its architecture, as well as from the efforts of the current mayor, and townsfolk that support his efforts in restoring many important town buildings to their former glory. Le Marche is an unspoiled region of Italy. It is rich in tradition and the locals are justly proud of their heritage, is divided into five regions and Cossignano is located in the most southerly side, the area called after its regional capital Ascoli Piceno.

As with many Italian regions Le Marche retains its cultural differences and while clearly Italian in language, architecture and landscape, many local customs are unique to the region. Not least of these differences is the local cuisine which of course our cooking travel in Italy holidays are designed to explore.

The focus of your Food and Flavours Italy cooking school is learning how to cook Italian food in the land in which the cuisine was created. Understanding what makes Italian food - and wine - special is all about meeting and understanding the Italians that create it and the countryside from which it emerges.

On your Italy cooking school adventure you will have the opportunity to meet with artisan producers and specialist wine makers in their workplace. You will see how they weave their magic and have the opportunity to have a go yourself and then to taste the specialist products. Unlike many food courses, our cooking classes and eating Italy food tours are designed for vegetarians as well as meat and fish lovers.

Arrival by airplane

The nearest airport to the location is Ancona Falconara airport (AIO) or Leonardo da Vinci-Fiumicino airport in Rome (FCO).

Arrival by bus

Coaches from Rome: if it is not convenient for you to travel to Italy via Ancona, we will meet you in Grottammare (ten minutes from Cossignano) where luxury coaches from Rome and Rome Fiumicino (FCO) airport arrive. If you are considering traveling via Rome contact us, we will be happy to book a coach seat for you and provide detailed information on where and when to catch the coach.

Arrival by train

Coaches are probably the best and fastest option if traveling from Rome, however the stations at close by Grottammare and San Benedetto del Tronto can also be reached by train from anywhere in Italy. You may check the Tren Italia website for prices and schedules.

    "We have had an amazing holiday with Italian Food and Flavours; great communication prior to holiday with Debby; flawless transfer. The B&B was a beautifully renovated house that was part of the village wall. The program for the week was packed full. The cooking lessons were run by Fabio who was passionate about food and local ingredients. The food and wine were free flowing. Throughout the course we had lovely Jo with us as an interpreter and guide. She spread her happiness and joy around us all day.We had very high expectations for this course and we were amazed how they managed to exceed the expectations on every level. The overall feeling of passion for food and region, the warmth and welcome we received will stay with us for life."

    "If you enjoy a meal of the freshest local ingredients that lead to another, course after course, Fabio the propietor and chef will inspire your pallate to new heights. From the first anti-pasta serving, to salad, to entree, and dessert and a fine Mistra or Vino Cotto to close out your dining experience, the flavours and presentations are other-worldly. The care in preparation and presentation at this local cafe in Cossignano, Italy have garnered many awards. The rich textures and flavors from apetizers and anti-pasties to 'il secondo' meat entre' and contorno vegatable will leave you wanting to come again to this fabulous restaurant."

    "We have eaten in the restaurant for a week, and had the privilege of being taught to cook Italian food by Fabio. The food is authentic Italian food with first class ingredients. Fabio is passionate about his food, sourcing his ingredients locally, using traditional recipes with a modern twist. You are made to feel very welcome by him and his lovely small team. The deep fried courgettes are an absolute must, other good antipasti is the Ascoli olives and aubergine/Parmesan layers. For secondos, try the pork casserole with apples and orange."

    "What a great find , gorgous evening meal , waiter explained every dish that we tasted and wow was there many dishes six first courses from buckwheat to cheeses and meats to lovely vegetable dishes . Fabrio has such a talent in his cooking the main course of my husbands meat dishes looked mouth watering and my homemade pasta dish was so full of favour , we were so full but we could not miss sweet all served with lovely wine . The setting in a lovely square is just so tranquil to enjoy but the lovely friendly manner of this resturant is a must while in cossigano , looking forward to our visit next year Fabio."
