Italian Food and Flavours is based in the beautiful medieval hilltop town of Cossignano (cos-in-yano) in the central Italian region Le Marche, just 10 kilometers from the Adriatic coast. An area famed for its beauty, tranquility and culture. Le Marche is now considered by those in the travel industry as The new Tuscany. Le Marche has stunning countryside, rolling hills, hilltop towns with evocative medieval and renaissance architecture and elegantly frescoed churches.

The region produces a range of traditional Italian artisan food products often used in the cuisine for which it is renowned. There are numerous archeological sites, in the area as well, that show Cossignano was a flourishing centre of the Picena civilization in the era before it became part of the Roman Empire. Cossignano was originally called Castellum Martisa and your Food and Flavours holiday is based in the Trattoria Castello de Marte (the castle of Mars) which is named after it.

Our cooking holiday in Italy is designed for all. Whether you are a gastronome or simply enjoy good food and want to find out more about how to create tasty Italian dishes, this holiday is suited for you. Learn in the ideal setting in central Italy, rolling hills between the the Sibillini Mountains National Park and the coast of the Adriatic, one of Italy's most beautiful regions. "We have had an amazing holiday with Italian Food and Flavours; great communication prior to holiday with Debby; flawless transfer. The B&B was a beautifully renovated house that was part of the village wall. The program for the week was packed full. The cooking lessons were run by Fabio who was passionate about food and local ingredients. The food and wine were free flowing. Throughout the course we had lovely Jo with us as an interpreter and guide. She spread her happiness and joy around us all day.We had very high expectations for this course and we were amazed how they managed to exceed the expectations on every level. The overall feeling of passion for food and region, the warmth and welcome we received will stay with us for life."

"We have eaten in the restaurant for a week, and had the privilege of being taught to cook Italian food by Fabio. The food is authentic Italian food with first class ingredients. Fabio is passionate about his food, sourcing his ingredients locally, using traditional recipes with a modern twist. You are made to feel very welcome by him and his lovely small team. The deep fried courgettes are an absolute must, other good antipasti is the Ascoli olives and aubergine/Parmesan layers. For secondos, try the pork casserole with apples and orange."
