Italian Food and Flavours has secured exclusive use of one of the most historic houses in Cossignano as the base for your Italy tours. The 17th century house built into the town walls is the blue plaque home of historian and town chronicler Nicola Pansoni. Sensitive restoration has preserved many of the original architectural features.

Set in the Centro Storico (historic center) the house is just seconds from the restaurant Castello de Marte, where you will enjoy most of your meals. The house is the ideal base for taking in the atmosphere, relaxing between cooking sessions, and exploring the refined charm of the delightfully historic Italian hill town of Cossignano. During the week you will have time to enjoy the facilities of a nearby villa set within the Italian countryside and with beautiful gardens and pool.

Day 1: Arrival

  • Saturday
  • Transfers from the airport or coast.
  • Arrive to a welcome drink and dinner at Castello de Marte with an introduction to food vacations Italy.

Day 2: Excursion, wine tasting

  • Sunday
  • In the morning we take a guided walking tour of Cossignano.
  • Lunch is a traditional Italian Sunday Lunch, a great introduction to the week!
  • The afternoon trip is to a local cantina for your first wine tasting.
  • Later, a light supper at Castello de Marte.

Day 3: Food tours, cooking class

  • Monday
  • Our first trip is to a local mill and bakery to see first hand how local grains are prepared and to pick up some flour for tomorrows pasta making!
  • The afternoon will feature your first lesson with Fabio is on the secrets of his specialist antipasti.
  • Dinner at Castello de Marte.

Day 4: Food tours, cooking class

  • Tuesday
  • The morning tours is to a local farm and cheese manufacturer with demonstrations of how to create pecorino, the local cheese.
  • In the afternoon the food vacations Italy cooking lesson is pasta making, with Fabio using some of the local flour and cheeses in ravioli, tagliatelle and gnocchi.
  • Dinner is pasta and a traditional secondo (main course).

Day 5: Food tours, cooking class

  • Wednesday
  • The morning trip is to a local butchers to see how salami local cured meats are made, learn the secrets of prosciutto and other fine meat products.
  • The afternoon lesson with Fabio will cover preparation of local delicacies such as Olive Ascolani.
  • Dinner at the restaurant.

Day 6: Wine tasting, market visit

  • Thursday
  • The food vacations Italy culture tour is to the historic city of Ascoli Piceno and later the noble town of Offida, centre of the local lace making craft industry as well as focus for much of the local wine production.
  • Lunch out in a local restaurant.
  • After lunch we take a trip to the famous Adriatic fish market at San Benedetto del Tronto to choose fish for tomorrows lesson.
  • Dinner is pizza. This area produces some of the best pizza you will have eaten - thin crispy base light fresh toppings perfectly cooked in wood fired ovens!

Day 7: Wine tasting, cooking class

  • Friday
  • The final morning food vacations Italy trip is to another specialist wine producer for a guided tour of a cantina followed by a tasting of some of more of the local wines.
  • The final lesson with Fabio will focus on traditional fish dishes.
  • Your farewell dinner.

Day 8: Departure

  • Saturday
  • After breakfast, depart for airport or coast.

    Your chef and culinary adventures tutor Fabio lives and works at his renowned restaurant “Castello de Marte” in the atmospheric main square just around the corner from your base. Fabio regularly posts authentic rural Italian recipes on the Italian Food and Flavours blog.

Italian Food and Flavours is based in the beautiful medieval hilltop town of Cossignano (cos-in-yano) in the central Italian region Le Marche, just 10 kilometers from the Adriatic coast. An area famed for its beauty, tranquility and culture. Le Marche is now considered by those in the travel industry as The new Tuscany. Le Marche has stunning countryside, rolling hills, hilltop towns with evocative medieval and renaissance architecture and elegantly frescoed churches.

The region produces a range of traditional Italian artisan food products often used in the cuisine for which it is renowned. There are numerous archeological sites, in the area as well, that show Cossignano was a flourishing centre of the Picena civilization in the era before it became part of the Roman Empire. Cossignano was originally called Castellum Martisa and your Food and Flavours holiday is based in the Trattoria Castello de Marte (the castle of Mars) which is named after it.

Our cooking holiday in Italy is designed for all. Whether you are a gastronome or simply enjoy good food and want to find out more about how to create tasty Italian dishes, this holiday is suited for you. Other costs such as drinks or snacks between meals, bottles of wine with meals other than those provided, gifts, postcard, etc. will paid for by the guest. Optional sessions by the pool in the beautiful gardens of a local Villa is also available.
  • If you come across a particular delicacy, ingredient or special wine that you would like to take away with you, but which exceeds your luggage allowance, we can arrange for shipping to your home address (customs permitting). There are no restrictions on importing food and wine into EU countries. If you live outside the EU and you would like us to arrange shipping we will do our best to organize it for you.

Arrival by train

While coaches are probably the best and fastest option if traveling from Rome, the stations at close by Grottammare and San Benedetto del Tronto can also be reached by train from anywhere in Italy.

  • A reservation requires a deposit of 30% of the total price.
  • The deposit is non-refundable, if the booking is cancelled.
  • The rest of the payment should be paid 30 days before arrival.
