Demonstration of the world-famous Dum Pukht cuisine

"Dum" means to "breathe in" and "pukht" to "cook". Dum pukht cooking uses a round, heavy-bottomed pot, a handi, in which food is tightly sealed and cooked over a slow fire. There are two main aspects to this style of cooking: bhunao and dum, or "roasting" and "maturing" of a prepared dish.

In this style of cuisine, herbs and spices play an extremely critical role. The process of slow roasting gently persuades each to release maximum flavor. And the sealing of the lid; the sealing of the lid of the handi with dough achieves maturing.

Cooking slowly in its juices, the food retains all its natural aromas and becomes imbued with the richness of flavors that distinguishes the cuisines).

Sample daily itinerary

Day 1

Pick up from Indira Gandhi International Airport (DEL) and drive to Kurukshetra where Asia's biggest pond is located. On arrival, check in at hotel and rest of the day free to explore the spirituality of the place.

Day 2

Early morning, visit fresh vegetable and fruits market and purchase the items for cooking demonstration. After breakfast, start cooking demo and cook food on your own and have the same in lunch. Evening classes of Indian spices.

Day 3

Enjoy cooking demo with other sightseeing i.e. school mess and canteen visit. Biggest kitchen visit of this area where many people have lunch free of cost.

Day 4

Departure transfer to Indira Gandhi International Airport (DEL) to board your international flight.

The classes will be in the lap of nature which is 160 kilometers from Delhi, this place is called Kurukshetra. Kurukshetra is the birth place of Bhagwad Gita which has a 5000-year old history. This place also has one of south India's biggest water pond.

Finally, stay in the grand Fort at Pachewargarh the home of the Rathore family, with talks, demonstrations on local cooking, visits, and real hands-on lessons in the kitchen.
