Il Palagio in Panzano in Chianti is a small family-owned wine estate. The philosophy merges values like family and tradition with their love for nature, human relationships, and customer satisfaction as well as the comfort and well-being of their guests. Their care and effort are continuously aiming to preserve the natural setting and achieve uncompromising wine quality while maintaining the fullest respect for man and nature.

This is the soundest method for restoring to wine its peculiarity and its sensory relation to its terroir. These values were learned from their grandparents. Furthermore, quality is another reason why they decided to change to organic production; quality is important for us because it ensures the viability of their business and the satisfaction of their customers.

The Conca d'Oro in Panzano in Chianti

Il Palagio is an estate of approximately 13 hectares: about 3 hectares are occupied by olive trees, 7.5 hectares are occupied by vineyards and the rest by wood. The vineyards are located in the so-called Conca d'Oro (Golden basin) of Panzano, a privileged area of its perfect altitude of 400-500 meters, the minimum temperature variation as well as the morphology and the composition of the soil which is rich in clay and marl.

Bio-organic production and certification

In 2009, they turned their business into an organic production and will receive the official certification in 2013. They cultivate their vineyards according to the biological methods preserving the integrity, the richness and vitality of their ground and ensuring you the highest wine quality. The wines results from an accurate work and careful selection of the grapes and are immediately recognized as alive and natural. All this reflects their philosophy, values, and mission. They believe in wines that reflect their region, whether through the grape variety or through land.

From the vineyard to the wine cellar

The wine cellar is used for winemaking, as well as for bottling and storing. Since 2009, they are using medium-size French oak barrels for their wines Chianti - Classico Il Palagio and Chianti Classico Riserva. Il Palagio are using 400-liter French oak barrels for their wine, Torgentile. Winemaking occurs in thermo-conditioned stainless vat. For their wines, they use grapes only from their vineyards, where they make a careful selection. Marco Chellini, agronomist and enologist, supports the process of winemaking in the wine cellar.

Award winning wines

In 2007, Il Palagio launched its products on the market for the first time. In 2010, the famous guide to Italian wine, titled Vini d'Italia and published from the Italian food and wine magazine and publishing group Gambero Rosso, awarded their wine, Chianti Classico Il Palagio with the highest rating: three glasses.

Il Palagio Italian Wine, Oil, Cooking Holiday Itinerary

Day 1 - Arrival, free time, welcome dinner

  • Expected arrival at the Il Palagio at 16:00.
  • Free afternoon, you can visit the old center of Panzano in Chianti, an old village of the 12th-century with its old butcher, its old bakery and a peaceful atmosphere of ancient times.
  • Welcome dinner at a local restaurant.

Day 3 - Cooking course, free time

Il Palagio is located in Panzano in Chianti, in the heart of Tuscany, exactly halfway between Florence and Siena (approximately 30 kilometers). Immersed in its natural settings made of vineyards and olive groves, the estate offers lovely and comfortable apartments, large gardens, a swimming pool, barbecue as well as a wonderful view of the Tuscan countryside.

Already in the 1980s the first English tourists came to the farmhouse for holiday. In the 1990s it has been renovated without modifying its rural retreat but maintaining the original style (stone walls, ceilings with wooden beams). Even the furniture is antique, and it is nice to see how the rustic Tuscan style combines with the functionality and comfort. This is the perfect place for those looking for peace, rest and a quiet place to stay.

Chianti Riserva Il Palagio

  • Grapes: 95% Sangiovese small grape, 5% Merlot.
  • Annual production: 4000 - 5000 bottles of 0,750 liters.
  • Grapes are selected among our vineyards with specific organoleptic consistency. It is aged in medium size barrels for 24 months and refines in the bottle for a minimum period of time of 3 months.
  • Organoleptic notes: The color is ruby bright red, the perfume is intense and persistence, topic and very gentle. The flavor releases notes of red fruits and flowers.
  • Finely structured with a balanced acidity and rich of well smoothly tannins.
  • Service temperature: 18 - 20 Celsius.
  • Best served with red meat, cheeses, game, and more complex dishes.

Torgentile Il Palagio

  • Grapes: 50% Sangiovese 50% Merlot, manual harvest.
  • Torgentile Il Palagio is aged in French oak barrels. Tonneauxs of 400 liters.
  • Organoleptic notes: Bright ruby red color with light grain reflections, intense perfume with hints of red fruits, spices, and oak. Well structured, harmonious with well-rounded and persistent tannins. After taste of pleasant spices, oak, and liquorices. Best served with red meat, aged cheeses.

Ignobile Igt Toscana Red

  • Production: Location Panzano in Chianti (FI) Loc. Il Palagio.
  • Varietals: 100 % sangiovese, small grape.
  • Yearly production: 3.200 bottles - 0,750 liters.
  • Harvest: Hand picking.
  • Fermentation: Carried out in stainless steel tanks at the temperature of max. 28 Celsius.
  • Duration: 7 days.
  • Maturation: Carried out in oak barrels of medium capacity and in stainless steel tanks.
  • Color: Pretty ruby red, with granade shades.
  • Nose: Pretty intense, topic and recalling red fruits.
  • Flavor: Finely structured, harmonious, fresh, flavorful, and persistent.
  • Serving temperature: 18-20 Celsius.

EVOO Il Palagio

  • Varieties: 50% Frantoio - 25% Moraiolo - 5% Morcaio - 20% Leccino.
  • Harvest: hand-picked harvest, conserved for up to 36 hours in 10 kilograms containers.
  • Average annual oil yield in kilograms: 1000 circa.
  • Pressing: by pounding.
  • Extraction: by centrifugal separation.
  • Preservation method: stainless steel containers Hl 4 or 6 at a constant temperature.
  • Organoleptic analysis: bright intense green color with soft golden tones. Very intense perfume of fresh olives with underlying scent of artichokes. Strong, fruity flavor, mildly spicy soft sweet tones with a pleasurably bitter and persistent aftertaste.
