This holiday will take place at The Relais Il Falconiere and Spa. The Relais Il Falconiere and Spa is a charming house kept in the heart of the Tuscan countryside, where the hills give way to the enchanting Etruscan hill-town of Cortona. Silvia and Riccardo Baracchi’s love for this land, rich in history and ancient traditions, is the foundation of the best expression of food and wine of Tuscany which inspired and guided this great dream of them, transforming the ancient villa of the 17th century, once home to the famous poet Antonio Guadagnoli, into a jewel of hospitality.

The classic rooms are in the Tuscan style of a noble family home. In the five classic rooms the décor is simple and elegant, consisting of four poster beds, linen curtains, and upholstered headboards. You will find yourself with all the intimacy of staying in an old manor house, with views of box hedges, fruit or chestnut trees, or vineyards or perhaps the hillside of cortona, the architectural jewel that is at your fingertips.

The room is composed of double room (queen size) and bathroom with shower. This room features air conditioner, mini bar, safe, phone, television LCD, tea making facilities, bathroom with shower, as well as hairdryer.

Program

Welcome to the Cooking Under the Tuscan Sun experience! This cooking school offers you cooking classes, cooking vacationsm and fun! When you walk through the front door of the kitchen, you are walking into a house. Il Falconiere carefully designed the cooking kitchen to avoid comparisons with stainless steel dominated restaurant kitchens and cookery schools.

They want you to feel relaxed and at home and so the courses are designed around the sort of cooking you would do in your own kitchen to entertain family and friends. Il Falconiere aims to inspire you and send you home with new and exciting recipes whilst at the same time giving you time to cook with like-minded people. It doesn’t matter what level you are, just come along and enjoy the experience!

Day 1

Upon arrival, you are shown to your rooms and made comfortable. You will be served with welcome cocktail with Silvia Baracchi your host for the week. The aperitif will be followed by a delicious gourmet dinner in the Michelin star restaurant.

Day 2

After breakfast, you are welcome in the kitchen for your first cooking lesson. As an example: Frances Mayes menu eggplant roll with prosciutto and buffala mozzarella; pici with cherry tomatoes and aromatic herbs; beef loin with shallot and balsamic vinegar; pear cooked in red wine with cheese and sabayon.

Lunch for the day is based on your creations paired with wines. You can relax at the spa enjoying sauna, steam bath, hydro massage pool, and perhaps schedule one of the massages. In the evening, there is a tour of the vineyards and winery of the Baracchi estate including a guided walking through the vineyards and an in-depth explanation of wine making from the vineyards to the bottles. Followed by the sabrage of the Metodo Classico and wine tasting during the dinner at the restaurant.

Day 3

In the morning, after breakfast, you will depart for a guided sightseeing tour of Cortona for a visit of this charming city, setting of the book and movie “Under the Tuscan Sun.” The lunch will be served at Bottega Baracchi, the Tuscan Bistrò. You will return to the relais for the second cooking class with recipes from Frances Mayes’ best seller. You will be served dinner with your creations matched by great Tuscan wines.

Day 4

Today, you will visit a local farm: you can see sheep, chickens, rabbits, geese and many other animals. You will buy the milk which you will use for the third lesson focused on making cheese. Light lunch and ready to become expert cheese makers! In the afternoon Montalcino and Montepulciano: you will be captured from the enchanting landscape of Val d’Orcia. You will visit outstanding wineries and will taste the famous Rosso di Montepulciano and his majesty the Brunello. Dinner will be served at the restaurant.

Day 5

All your day is dedicated to the amazing little Tuscan towns famous for food and wine excellence. You will visit one of the most important town among the truffle production areas, Asciano where the white truffle grows. Depending on the season, you could be guided by truffle hunters in a funny and interesting walking through the woods, looking for the precious “white gold”. You will have lunch with the truffle hunters. In the afternoon the fourth lesson “the Etruscan cuisine” will take place followed by dinner.

Day 6

After breakfast, you will go to visit a local vegetables producer, close to the relais. You will buy some seasonal vegetables that will be the ingredients of your last cooking lesson at the Locanda del Molino. There will be a farewell candlelight dinner with music and fun. You will also receive your cooking certificates.

Day 7

After breakfast, you will be checking out depending on your departure schedule.
