Enjoy a very Tuscan culinary experience - Under the Tuscan Sun, funny but professional moments, and meeting with locals and ingredients at a true kilometer 0! The classes celebrate traditional Tuscan recipes and are designed by Silvia Baracchi, a Michelin Star chef and the owner of The Relais Il Falconiere and Spa. You will learn to cook authentic Tuscan cuisine in focused, spirited classes in the residential style kitchen, using local ingredients personally selected by the chef under healthy, ethic, and protection of the land criteria. Following your cooking class, you will enjoy a seated, served dinner in the charming dining room, in which you will enjoy the food you have prepared. When you walk through the front door of the kitchen, you are walking into a house. Il Falconiere carefully designed the cooking kitchen to avoid comparisons with stainless steel dominated restaurant kitchens and cookery schools.
Il Falconiere, along with a Michelin star restaurant, a wine resort, and exclusive spa is a small world of charm suspended in time, that has preserved the simplicity of two youths in love with a dream, from which a wonderful story has been created. The Relais Il Falconiere and Spa is an old world charm in Tuscany. Guests are invited to choose their own corner of their heart. The rooms in the old villa, which preserve the intimacy of a stay in the main house, the little chapel to those adjacent or very close to the spa. Whatever type of holidays you are having, all rooms share the style of refined simplicity reminiscing of the most important Tuscan houses with picturesque views of the countryside of Cortona always at your front door. Il Falconiere wants you to feel relaxed and at home and so the courses are designed around the sort of cooking you would do in your own kitchen to entertain family and friends: the aim is to inspire you and send you home with new and exciting recipes while at the same time giving you time to cook with like-minded people. It doesn’t matter what level you are, just come along and enjoy the experience!
Upon arrival, you are shown to your rooms and made comfortable. Enjoy welcome cocktail with Silvia Baracchi, your host for the week. The aperitif will be followed by a delicious gourmet dinner in Il Falconiere’s Michelin star restaurant.
After breakfast, you will be welcomed in Il Falconiere’s kitchen for your first cooking lesson. Examples are as follows:
Your lunch for the day is based on your creations paired with the wines. In the afternoon, depart for a guided sightseeing tour of Cortona for a visit of this charming city, setting of the book and movie “Under the Tuscan Sun.” Your dinner will be served at Bottega Baracchi, Il Falconiere’s Tuscan Bistrò.
Today, you will visit a local farm: you can see sheep, chickens, rabbits, geese and many other animals. You will buy the milk you will use for the third lesson focusing on making cheese. Enjoy light lunch and be ready to become an expert cheese maker5! Pici Pasta and recipes with ricotta cheese just made will be the ingredients of the recipes. Enjoy dinner with your creations at the restaurant.
In the morning, depart to Montalcino and Montepulciano: you will be captured from the enchanting landscape of Val d’Orcia. You will visit outstanding wineries and will taste the famous Rosso di Montepulciano and his majesty the Brunello. Later, enjoy lunch. In the evening, join a tour of the vineyards and winery of the Baracchi estate including a guided walking through the vineyards and an in-depth explanation of winemaking from the vineyards to the bottles, followed by the sabrage of the Metodo Classico and wine tasting during the dinner at the restaurant.
After breakfast, you will go to visit a local vegetable producer, close to the relais: you will buy some seasonal vegetables that will be the genuine ingredients just cut of your last cooking lesson at the Locanda del Molino. Farwell candlelight dinner will be at the Locanda: you will receive your cooking certificates.
After breakfast, do for the checking out procedure depending on your departure schedule.

Silvia is really Etruscan! She was born in Perugia and grew up in Cortona in the heart of the Etruscan territory one of the most suggestive parts of Tuscany. Her family owned a restaurant and she starts her life to direct contact with the world of hotelerie. She gets by the family the passion for the cuisine, sensibility for the traditions, good food, and wine. She opened Il Falconiere restaurant in 1989 and starts to cook new dishes and realize her life focusing on cuisine and welcoming art. She had a lot of exchanging experiences with chefs from all over the world who enriched her know-how.
This holiday will take place at The Relais Il Falconiere and Spa in Cortona, Italy. The Relais Il Falconiere and Spa is a charming house kept in the heart of the Tuscan countryside, where the hills give way to the enchanting Etruscan hill-town of Cortona. Silvia and Riccardo Baracchi’s love for this land, rich in history and ancient traditions, is the foundation of the best expression of food and wine of Tuscany which inspired and guided this great dream of them, transforming the ancient villa of the 17th century, once home to the famous poet Antonio Guadagnoli, into a jewel of hospitality.
You will be served daily buffet breakfast and welcome aperitif and dinner (with beverage) at the arrival. Also, lunch or dinner with matched wine selection will be served after your cooking lessons. During your excursions, you will get with lunch break or dinner.
