Marrakech based ex-Melbourne girl and turned chef, Edwina Golombek, invites you to cook, eat, and swoon your way around Marrakech, the High Atlas and the seaside, staying in her riad cooking school in the heart of the Marrakech medina. During this vacation, you will learn to cook pastry, soup, tapas, tanjia, and many other dishes. Along with that, you will enjoy visits to local markets, explore the High Atlas Mountains, and spend the day by the Atlantic in charming Essaouira. House of Fusion Marrakech is a beautiful riad in the heart of the Marrakech medina, a sumptuous accommodation that offers fabulous cooking classes and celebrations. The rooms of this lovely riad are reserved exclusively for guests booking culinary holidays. All rooms are doubles, except for Itri, which is a twin / king room. All en-suite bathrooms are inspired by Philippe Starck and have cascading glass hand basins.

Bedrooms all have bedding by Simmons, walls of tadelahkt, tiled floors, regional rugs, French antique bed linen, antique Kasbah door headboards, toiletries, and fresh flowers. There is a laundry service in House of Fusion Marrakech at the additional cost of 10 MAD. Your cloth will be washed, dried under the Moroccan sun, ironed and / or folded with a whoosh of rose water to finish. In House of Fusion Marrakech, you will find shampoo and body lotion in your room, and theres a fabulous hairdressing supply shop nearby if you want specialty shampoos. The riad has sun block for guests.

Rooms

  • Echaama. A wonderful room with a double bed, natural lighting, and a marzipan-like ceiling.
  • Itri. A twin room flooded with afternoon sunshine, tiles laid as little carpets, long windows, and an intricate ceiling.
  • Tamsrite. A sunny double bed overlooking the courtyard with beautiful hand crafted ceiling and long windows.
  • Targa. A lovely courtyard double, perfect for couples. This room has an ornate ceiling, deep-silled windows, bathrooms inspired by Philippe Starck, and a wonderful old Kasbah door headboard.

Day 1, Sunday - Arrival

Today, you will have welcome feast with wine and champagne.

Day 2, Monday - Gourmet picnic day

  • 07:45 Breakfast.
  • 08:30 You will depart from your riad for a glorious day in the High Atlas along the Tiz nTest pass.
  • In the morning, you will have a picnic tea in hidden fields, stroll in the Tin Mal Mosque, and have some tea in a tiny hamlet with a farming family you will walk to, beside the river and across a wobbly bridge.
  • You will have a picnic lunch beside the river, a trillion miles from everywhere.
  • Tonight, you will have dinner in DjmnaFna at the food stalls, finishing at one of the stalls pouring Gingseng tea from their marvelous copper urns, served with little plates of sellou.

Day 3, Tuesday - Feasting day class

  • 08:00 Breakfast.
  • 08:50 The class begins with a discussion as to the days menu, writing the shopping list, firstly, in English then in Arabic, to go forth into the market shopping in your new language. Then, you will be back to the riad to prepare.
  • 13:30 to 14:00 Lunch.
  • After lunch, you will finish the preparation for the evening feast with wine, beginning at 19:30. You will have a glass of champagne in celebration of the days cooking!

Day 4, Wednesday - Cooking class in a Berber village

  • 07:45 Breakfast.
  • 08:15 Leave with Mustapha for a wonderful day cooking in a Berber village.
  • First, you will choose in the market the produce you will prepare with Aisha in her earth and stone built kitchen and outdoor bread oven.
  • Later on, attend the class high up in a High Atlas village, 90 minutes away from Marrakech.
  • Close the day with tapas and wine in the riad.

Day 5, Thursday - Shopping extravaganzas

  • 09:00 Champagne and breakfast.
  • 09:45 Depart the riad for shopping.
  • 14:00 Lunch.
  • This afternoon, you will visit the spice trader and the perfume maker.
  • 19:30 Dinner at terrace top in the basket square. Drinks tonight are extra.

Day 6, Friday - Essaouira

  • 07:30 Breakfast.
  • 08:00 You will depart the riad in Mustaphas van, for the day by the Atlantic in charming Essaouira, a Portugese-settled port, located two hours away. You will stroll along the medina and lunch on the terrace top in the sun.
  • Dinner tonight consists of tapas and wine in the riad, prepared by Hasna, House of Fusion Marrakechs dada.

Day 7, Saturday - Fusion cooking class

  • 08:15 Breakfast.
  • 08:50 You will begin by preparing the tanjia, a Marrakech specialty, cooked in the coals of the nearby hammam and collected hours later for dinner.
  • 13:30 Lunch.
  • 19:30 Return to the hammam to collect wonderful dish.
  • 19:30 Dinner with wine.

Day 8, Sunday - Champagne brunch

  • 10:00 Champagne brunch followed by a few hours of shopping or visiting the Marjorelle Gardens, the gardens of La Mamounia Hotel or just lolling terrace top.
  • 15:00 God and Goddess Pamper of hammam, massage and for gentlemen, barber shop shave, haircut, nose, neck, and ear trim.
  • 19:30 You will head for dinner in the Palmeraie, dining on a degustation menu in wonderful surroundings. Beverages tonight are extra.

Day 9, Monday - Departure

Today, you will fly back home.

Shopping extravaganzas

One of the ways to explore Marrakech is Edwinas extravaganzas shopping tour. During this tour, you will explore wonderful things to take home such as spices, leather goods, fabrics, and rugs. Edwina will take you to hidden places holding hearts desires in Marrakech. When traveling, you will go to the homes of the locals who make lovely things, to an isolated village where the carpets are chosen from the looms of the ladies, the potter in the mountains. Edwina offers shopping extravaganzas to hidden places holding hearts desires where she has carefully sourced wonderful things being sold and often made by good guys in tucked away spots not visited by guides.

    Edwina grew up in a home where dinner parties and entertaining were the life blood and this lifestyle continued for the million married years that followed but in July 2000, came the time for re-invention. Shedding everything with a key, she left Australia bound for Spain with receipts for things following. After a few years, with the re-invention still a work in progress, she bought a riad in Morocco, as a culinary destination for gourmands wanting to come, be and do fabulous, with cooking classes and way off the tourist trail, wonderful fooding road trips and picnics.   • Dada Hasna

    Dada Hasna is House of Fusion Marrakech's resident chef. Dada teaches all the more traditional Moroccan dishes using her own recipes. Edwina and Dada have been cooking alongside each other for more than five years, quite the team!

    Perfectly brilliant

    CONS Cons: I should have stayed longer.

    PROS Pros: The food was absolutely delicious and the "cooking" was very much "hands on". The whole experience of buying the ingredients in the local market (in Arabic of course), preparing, cooking, and eating was absolutely fabulous - I had a really terrific holiday!

    "I took the class on December 19, 2016, on my own. The location is in the medina, very easy to find with the help of Google maps. The house is beautifully decorated. The teacher, Edwina, is from Melbourne, Australia. Her helper is a young Moroccan lady who does not speak a lot of English. They are very nice people. "

    "I discussed the things that I would like to learn with Edwina. Then, she taught me some Arabic words, which I used when we were shopping for meat and veggies in the local market.     "Edwina's riad is both elegant and comfortable, you immediately feel very much at home. Apart from being a beautiful place to stay at, it is situated right in the medina so you can easily walk to the square and soak up the wonderful atmosphere of old Marrakech. At relatively short notice, Edwina cooked our group a delicious tapas dinner, which was the best food we had tasted during our whole trip to Morocco. Edwina also makes a pretty deadly mojito! Perhaps the highlight for me though was the cooking class the following day. I was fortunate to have a one-on-one session with Edwina. We talked, we laughed, we cried, and we cooked! Together we prepared the most amazing eight-course lunch. Back home in Melbourne some of these dishes, including the beetroot and orange soup, are now part of my standard repertoire. The whole experience was just amazing. Thanks, Edwina."

    "It was a celebration and an adventure in a wonderful country full of friendly people. Edwina's riad is stunning, restful, and elegant. Our cooking classes were fun and enlightening, not forgetting shopping for our ingredients in the market trying out our skills in Arabic. The road trip was marvelous but tiring at times. We were privileged to visit much more than the usual tourist route. Two extra days would be good."

    "The House of Fusion is a wonderful, colorful reflection of its owner, the gorgeous Edwina. The riad, in the heart of old Marrakech, has been beautifully renovated. The bedrooms and bathrooms are very comfortable with personal touches. The riad abounds with art work and many collectables. Our road trip with Edwina through Morocco was an adventure to non-tourist areas. The House of Fusion cooking classes are fabulous!"

    "We wandered into the house, intrigued by the name, and stumbled into a wonderful experience. Edwina, the owner, is a gem. We left the riad Dar and had a wonderful experience with cooking classes, as well as a wonderful guide to Morocco. Rooms were comfortable and the food was great."

    "We stayed here for five nights as part of a cooking program with Edwina. If you are looking for the tourist experience with average tagines and usual spots visited, then do not come here. If you want to see some less visited places like the extraordinary Tinmal Mosque and have tea with a Berber family, then this is the place. Having said that, the real highlight here is the food. No place we ate at, including the Richard Branson Kasbah Tamadot and Relaix and Chateaux, came close to Edwina's food. These were the most sparkling flavors I have ever experienced. You have to try her version of a pigeon b'stilla; of course, after you try the beetroot orange soup and the amazing chicken with lemon tagine. Make sure you still leave some room for an astonishing rose water meringue with saffron custard."

    "It was a relaxed home-stay riad in the heart of the medina; we had very good Moroccan cooking lessons. We also had excursions into the countryside with opportunities to meet local Moroccans, camel riding, and an overnight stay in the Sahara. There were carpet buying opportunities and attractive overnight stays on excursions. A little more of free time was needed to visit gardens, galleries, and palaces, but this could be arranged with Edwina, who is very accommodating."

    "We were staying down the road and walked past the House of Fusion each day. We were delighted with the fact that Edwina provided cooking courses. We booked the full half-day, which runs from 08:50 to 15:30 and starts with a chat about the type of food we wanted to cook and how to order it in Arabic. The trip to the market was great fun and I must say it was the freshest chicken I have ever cooked. The cooking was brilliant and we both learned so much about a great range of dishes, some of which I have already re-created at home to the delight of my family. Not only did we take part in the cooking course, we also had our New Year meal, which was delicious and mouth-watering. It was also lovely to sit with Edwina at the end of the evening and just chat about how she ended up in Marrakesh. It was a lovely evening that my friend and I thoroughly enjoyed. Thanks for a great experience; I am looking forward to returning in the future."
