This culinary holiday in Morocco is a wonderful culinary collaboration between the fabulous Tonya Jennings of Cooking on the Bay, Melbourne and the zany, ex-Melbournian, Edwina Golombek of the House of Fusion Marrakech. Together, they offer wonderful culinary escapades in Morocco, home to Edwina since 2003.

Combining nine nights at the House of Fusion Marrakech, where sumptuous sleeps and gourmet eats, abound, with cooking classes, gourmet picnic days, shopping extravaganzas and feasts upon the terrace and then, a six-night road trip to the Sahara, staying in an oasis, a kasbah, an auberge upon the sands, and an en-suite desert camp, all a trillion miles from everywhere.

Day 1, April 20, 2017 - Arrival

  • Welcome Feast with Moroccan wines

Day 2, April 21, 2017 - Gourmet picnic day

  • You will enjoy breakfast at 07:45
  • At 08:30, you will depart the riad for gourmet picnic day along the Tizn Test Pass to the 12th century mosque at Tinmal, picnic morning tea in hidden fields, strolling the mosque, tea with a terrific family in a tiny remote farming village, gourmet picnic lunch beside the river, continued by dinner and wine in the riad

Day 3, April 22, 2017 - Long half day cooking class of eight dishes - a lunch class

  • You will enjoy breakfast at 08:00
  • At 08:50, the class begins with a discussion as to the lunch menu for the long half-day class of eight dishes plus Moroccan tea making - a lunch class. You will write the shopping list firstly in English then in Arabic to go forth into the market shopping in your new tongue. Then you will return to the riad to prep
  • Lunch will be around 13:30 to 14:00
  • After lunch, you are free to loll before enjoying champagne and tapas at 18:30
  • At 19:30, you will be off to the big square, Djmna F’na for ginseng tea and sellou

Day 4, April 23, 2017 - Shopping extravaganza to hidden places holding hearts' desires

  • You will enjoy breakfast at 09:00
  • At 10:00, you will hit the souks! Then, you will lunch deep inside the medina around 14:00
  • Champagne served in the riad before setting off to dinner
  • Dinner tonight is a 10-minute walk away to a hip and happening roof top restaurant. The dinner and alcohol tonight are not included in price.

Day 5, April 24, 2017 - The six-night road trip

  • This morning, you will enjoy breakfast at 06:45
  • At 07:30, you will depart the riad for the Tizn Tichka Pass and the oasis
  • There will be morning tea along the pass
  • Next, you will enjoy picnic lunch under the trees
  • You will visit the Babel village for a couple of hours to stroll the kasbah, to be enticed by the ladies who weave and knot. In this most remotest of villages, rugs, they are happy to sell the handcraft to you
  • Then it's on to the auberge in the oasis for the night. Dinner will be paired with red wine
  • You may enjoy a walk through the oasis and the kasbah older than time before dinner

Day 6, April 25, 2017 - To the desert

  • Enjoy breakfast at 07:45
  • At 08:30, you will be in the car, ready for the drive through more spectacular scenery on the way to the desert
  • You will journey through the Draa Valley before turning to drive up the middle of Morocco to Rissani and then half an hour to the turn off to the desert auberge, 12 kilometers off the road
  • Lunch today will be a roadside barbecue stop. Dinner and red wine will be enjoyed at the auberge under the stars by the pool

Day 7, April 26, 2017 - Desert cooking class and camel ride to the camp

  • Today, you will enjoy your breakfast at 08:00
  • At 08:30, depart the auberge for the class "Cooking up a Desert Storm" with Fatima and her family, in their desert home, 30 minutes from the Algerian border.
  • Today’s class will be cooking the food of the region and cooking it in the community oven, pre-dating Islam
  • After lunch, you will go to an emporium hidden away, to buy your scarves for the ride into the desert for dinner and the night, sleeping in en-suite delight, later in the afternoon. Tonight is grog free

Day 8, April 27, 2017 - Dune climb and the day in the auberge

  • Cimb the dune before the sun is up for a spectacular sunrise. This will take 15 to 30 minutes.
  • Then, it’s a slide down the dune to breakfast before climbing aboard your camel and returning to the auberge for a lazy day beside the pool
  • Next, enjoy a wonderful starlit dinner with red wine

Day 9, April 28, 2017 - To the kasbah for two nights

  • This morning, you will enjoy breakfast at 08:00
  • At 08:45, you will be in the car, ready for the drive to the kasbah. You will have lunch along the way and arrive at the kasbah mid afternoon in time for a wonderful walk through the kasbahs below and through fields of nut trees and palms beside the river
  • Next, you will enjoy dinner, red wine, and spend the night in the kasbah

Day 10, April 29,2017 - Picnic day in the hidden gorge

  • You will have breakfast at 08:30
  • At 09:30, you will depart the kasbah for the hidden gorge, climbing higher than the sky and passing the most wonderful earth built villages and scenery to keep you knocked off your socks! The fields will be filled with poppies and the perfume of the harvesting of the roses

Day 11, April 30, 2017 - To Marrakesh

  • You will have breakfast at 08:00
  • At 08:45, you will be in the car for the trip back to Marrakesh but along the way, some minutes from the kasbah, you will stop at the wonderful Sunday market to buy rosebuds and rosehearts of perfumed petals. There will be lunch in a garden along the way
  • A wonderful dinner awaits in the riad, prepared by Hasna

Day 12, May 1, 2017 - Hammam experience

  • This morning, you will enjoy breakfast at 08:30
  • At 09:30, you will be off to the Marjorelle Gardens
  • At 12:30, you will return to the riad for lunch
  • At 14:30, enjoy Hammam and massage sessions
  • At 18:00, you will enjoy champagne in the riad
  • At 19:00, you will depart the riad for the degustation menu somewhere wonderful in the Palmeraie
  • Tonight's drink at extra price

Day 13, May 2, 2017 - Tanjia, pastry, soup class

  • Enjoy breakfast at 08:15
  • At 09:15, the class begins with the prepping of the tanjia, then it's on with the soup and the pastries
  • At noon, you will be taking the tanjia to the hammam coals for cooking over many hours
  • Lunch will be at 13:00
  • This afternoon is free for a little more shopping
  • At 18:00, you can relax with champagne
  • At 19:30, dinner is served. The menu will be tanjia, paired with wine

Day 14, May 3, 2017 - Essaouira for the day

  • Enjoy breakfast at 07:00
  • At 07:30, you will be off to Essaouira for lunch and the day (drinks at lunch extra)
  • Tapas and wines for dinner in the riad

Instead of Essaouira, you may opt for a cooking session in a Berber kitchen. It is also possible to offer both these days providing there are at least two guests for each choice. If you choose to have a cooking class in a Berber kitchen, the schedule will look like this:

  • Enjoy breakfast at 07:45
  • At 08:30, depart the riad for market day in a remote High Atlas village where after selecting your produce
  • You will join the ladies in their courtyard kitchen to traditionally prepare lunch. After lunch, you will stroll fields and olive groves, taking tea in between times. It's quite a magical day
  • Tapas and wines for dinner in the riad

Day 15, May 4, 2017 - Master class of pigeon b'stilla, seafood b'stilla, seafood tajine

  • 08:00 Breakfast
  • 08:30 Discussion as to the day’s menu. Those who would love to join the instructors in the market to do the shopping, will again do the shopping list in English and then in Arabic. Those who choose to linger over breakfast are most welcome to do just that and wait their return!
  • 13:30 Lunch
  • 14:30 Prepping the last remaining then to the spice trader's for saffron, coffee spices, amber, musk, frankincense
  • 19:30 Dinner paired with Moroccan wines

Day 16, May 5, 2017 - Departure

  • This is the end of your cooking holiday in Morocco. You will check out and head for the airport to catch your flight home

During the culinary holiday, you will visit local market and villages, and Marjorelle Gardens among others.

  • Edwina Golombek

    Edwina grew up in a home where dinner parties and entertaining were the life and blood and this lifestyle continued for the million married years that followed but in July 2000, came the time for re-invention. Shedding everything with a key, she left Australia bound for Spain with receipts for things following. After a few years, with the re-invention still a work in progress, she bought a riad in Morocco, as a culinary destination for gourmands wanting to come, be and do fabulous, with cooking classes and way off the tourist trail, wonderful food, road trips, and picnics.

  • Tonya Jennings

    Tonya trained in Melbourne at Holmesglen, in Paris at Le Cordon Bleu and the Ritz Escoffier, and in Burgundy at La Varenne l’École de Cuisine. She has also visited regional cooking schools in the Dordogne, Normandy, and Tuscany, Italy. Tonya’s vibrant and engaging personality will encourage you to want to share the pleasure of the table experienced in the classes with your friends and family. You will be inspired to race home and repeat the dishes you have learnt in the day’s class.

The holiday will take place in Morocco.

Throughout the tour, you will enjoy delicious meals and wine as specified in itinerary. You will also learn to cook various dishes with instructions by Edwina and Tonya, and have the chance to join local people in their kitchen.

During the tour, you can stroll and explore the area you are staying, browse charming shops, and interact with local people.
