During this holiday, you will spend six nights at House of Fusion Marrakech. Here, all rooms are double rooms, except for Itri room, which is a twin or king room. All en-suite bathrooms are inspired by Philippe Starck and have underlit cascading hand basins.

All bedrooms have bedding by Simmons, walls of tadelahkt, tiled floors, regional rugs, French antique bed linen, antique kasbah door headboards, toiletries, and fresh flowers.

Echaama room is a wonderful room with a double bed, natural lighting, and a marzipan-like ceiling. Itri is a twin room flooded with afternoon sunshine, tiles laid as little carpets, long windows, and an intricate ceiling.

Tamsrite room is a sunny double bed overlooking the courtyard with beautiful hand crafted ceiling and long windows. Targa is a lovely courtyard double room, perfect for couples. This room has an ornate ceiling, deep-silled windows, bathrooms inspired by Philippe Starck, and a wonderful old Kasbah door headboard.

The accommodation for the remaining four nights is all en-suite with the emphasis on charm and delight. Two of these nights will be spent in an oasis and the other two will be spent in a kasbah.

Day 1 - Sunday: Arrival day

Tonight, you will enjoy a welcome feast beginning with Moroccan wine and a champagne.

Day 2 - Monday: Gourmet picnic day

Today, you will have a gourmet picnic along the Tiz-n-Test and visit the 12th century Tinmal mosque. Enjoy morning tea in the hidden fields and stroll around the mosque, which you will most likely have to yourselves.

You will then have tea with an olive-farming family across a wobbly bridge, picnic lunch and wine beside the river await. Later, enjoy some wine and tapas for dinner wine in the riad and walk to Djmna F'na for ginseng tea and sellou.

Day 3 - Tuesday: Feasting day class

Today, a lunch and dinner class of 10 dishes, will be part of the itinerary. You will be deciding the menu over breakfast coffee and will be getting the shopping list in English and then Arabic, which will help you shop for produce in your new language.

This will be a day of prepping and eating, with a walk in the late afternoon to a spice trader, where you will buy saffron from a jar kept in the dark beneath the counter.

Day 4 - Wednesday: Cooking in a Berber village

Go shopping in a weekly market in a remote village and take your produce up the mountain to cook with the local ladies who await you with morning tea and the kitchen fires set. Dinner and wine will be served in the riad.

Day 5 - Thursday: Shopping extravaganza

Today, you will go shopping in hidden places holding your hearts' desires and have lunch around 14:00. Before you set off into the souks, you will visit the Dar Si Said, located only minutes away from the riad, while you wait for the stalls to open.

At 15:30, enjoy a hammam and massage. There will be some champagne before the 10-minute walk to dinner. Beverages are not included tonight at dinner.

Day 6 - Friday: The road trip begins

The trip will begin as you go up and over the Tiz n'Tichka Pass, having morning tea along the way to the kasbah, where lunch awaits on a terrace top, high above the river. This afternoon, enjoy a walk through abandoned kasbahs beside the river below. You will stroll through fields of nut and fruit trees, palms, and crops. Tonight, dinner and wine will be served at the terrace top.

Day 7 - Saturday: Hidden gorge

Today, you will visit a hidden gorge. You will first drive up the mountains beyond the clouds, walk a little along the way, and drop down into a gorge, where you will have a picnic lunch and wine followed by a walk through this astonishing rock formation. Tonight, dinner and wine will be served at the terrace top at the kasbah.

Day 8 - Sunday: Oasis

You will be on the oasis auberge for two nights, stopping along the way at the Sunday market, a few kilometers from the kasbah to maybe pick up some dates or an antiquity. Lunch awaits at the oasis auberge by the pool in the very heart of nowhere. Wine and dinner upon the terrace here too, after a walk along the palmeraie and river bed.

Day 9 - Monday: Walk around the oasis

Early in the morning, walk around the oasis. After breakfast, you will go to the village where Babel was filmed to walk the kasbah and have tea. The ladies in this village knit wonderful carpets and you might want to take one, or nine, home! Lunch and dinner will be served in the auberge accompanied with wine. In the late afternoon, the pool late afternoon, you can take a dip in the pool or a walk into the sunset.

Day 10 - Tuesday: Back to Marrakech

Today, you will go back to Marrakech. There will be a roadside barbecue lunch along the way. Dinner will be prepared by Hasna and will be accompanied wine.

Day 11 - Wednesday: Departure

Today, you will be transferred back to the airport for your departure flight.

    Edwina grew up in a home where dinner parties and entertaining were the life blood. She was a medical social worker. It was not until July 2000, when having shed everything, she left Australia bound for Spain with receipts for things to follow. Later, she bought a riad in Morocco, adding another culinary destination to her seeming empire. In February 2007, the doors were flung open in welcome.

This holiday will take place in Marrakech, Morocco.

The food prepared at the House of Fusion and taught in the cooking school is a combination of traditional Moroccan dishes and some dishes from Hasna and Moroccan Fusion, with recipes which are Edwina's.

The food on the road trip is with prior consultation with the chefs where you will stay. Your meals will certainly not be what is common fare found in tourist destinations, mainly because you will not be going to any!

    Perfectly brilliant

    CONS Cons: I should have stayed longer.

    PROS Pros: The food was absolutely delicious and the "cooking" was very much "hands on". The whole experience of buying the ingredients in the local market (in Arabic of course), preparing, cooking, and eating was absolutely fabulous - I had a really terrific holiday!

    "I took the class on December 19, 2016, on my own. The location is in the medina, very easy to find with the help of Google maps. The house is beautifully decorated. The teacher, Edwina, is from Melbourne, Australia. Her helper is a young Moroccan lady who does not speak a lot of English. They are very nice people. "

    "Edwina's riad is both elegant and comfortable, you immediately feel very much at home. Apart from being a beautiful place to stay at, it is situated right in the medina so you can easily walk to the square and soak up the wonderful atmosphere of old Marrakech. At relatively short notice, Edwina cooked our group a delicious tapas dinner, which was the best food we had tasted during our whole trip to Morocco. Edwina also makes a pretty deadly mojito! Perhaps the highlight for me though was the cooking class the following day. I was fortunate to have a one-on-one session with Edwina. We talked, we laughed, we cried, and we cooked! Together we prepared the most amazing eight-course lunch. Back home in Melbourne some of these dishes, including the beetroot and orange soup, are now part of my standard repertoire. The whole experience was just amazing. Thanks, Edwina."

    "It was a celebration and an adventure in a wonderful country full of friendly people. Edwina's riad is stunning, restful, and elegant. Our cooking classes were fun and enlightening, not forgetting shopping for our ingredients in the market trying out our skills in Arabic. The road trip was marvelous but tiring at times. We were privileged to visit much more than the usual tourist route. Two extra days would be good."

    "The House of Fusion is a wonderful, colorful reflection of its owner, the gorgeous Edwina. The riad, in the heart of old Marrakech, has been beautifully renovated. The bedrooms and bathrooms are very comfortable with personal touches. The riad abounds with art work and many collectables. Our road trip with Edwina through Morocco was an adventure to non-tourist areas. The House of Fusion cooking classes are fabulous!"

    "We wandered into the house, intrigued by the name, and stumbled into a wonderful experience. Edwina, the owner, is a gem. We left the riad Dar and had a wonderful experience with cooking classes, as well as a wonderful guide to Morocco. Rooms were comfortable and the food was great."

    "We stayed here for five nights as part of a cooking program with Edwina. If you are looking for the tourist experience with average tagines and usual spots visited, then do not come here. If you want to see some less visited places like the extraordinary Tinmal Mosque and have tea with a Berber family, then this is the place. Having said that, the real highlight here is the food. No place we ate at, including the Richard Branson Kasbah Tamadot and Relaix and Chateaux, came close to Edwina's food. These were the most sparkling flavors I have ever experienced. You have to try her version of a pigeon b'stilla; of course, after you try the beetroot orange soup and the amazing chicken with lemon tagine. Make sure you still leave some room for an astonishing rose water meringue with saffron custard."

    "It was a relaxed home-stay riad in the heart of the medina; we had very good Moroccan cooking lessons. We also had excursions into the countryside with opportunities to meet local Moroccans, camel riding, and an overnight stay in the Sahara. There were carpet buying opportunities and attractive overnight stays on excursions. A little more of free time was needed to visit gardens, galleries, and palaces, but this could be arranged with Edwina, who is very accommodating."

    "We were staying down the road and walked past the House of Fusion each day. We were delighted with the fact that Edwina provided cooking courses. We booked the full half-day, which runs from 08:50 to 15:30 and starts with a chat about the type of food we wanted to cook and how to order it in Arabic. The trip to the market was great fun and I must say it was the freshest chicken I have ever cooked. The cooking was brilliant and we both learned so much about a great range of dishes, some of which I have already re-created at home to the delight of my family. Not only did we take part in the cooking course, we also had our New Year meal, which was delicious and mouth-watering. It was also lovely to sit with Edwina at the end of the evening and just chat about how she ended up in Marrakesh. It was a lovely evening that my friend and I thoroughly enjoyed. Thanks for a great experience; I am looking forward to returning in the future."
