Pronounced ba-boor-tea, this delicious national dish is a mixture of curried meat and fruit with a creamy golden topping, very similar to moussaka.

The ingredients are:

  • Two slices of white bread
  • Two onions, chopped
  • 25 grams butter
  • Two garlic cloves, crushed
  • One-kilogram packet lean minced beef
  • Two tablespoons of Madras curry paste
  • One tablespoon of dried mixed herbs
  • Three cloves
  • Five allspice berries
  • Two tablespoons of peach or mango chutney
  • Three tablespoons of sultana
  • Six bay leaves

For the topping:

  • 300 milliliters full-cream milk
  • Two large eggs

How to cook

First, heat the oven to 180 degrees Celcius / fan 160 degrees Celcius / gas. Pour cold water over the bread and place on the side to soak.

Second, fry the onions in the butter, stirring regularly for 10 minutes until they are a golden brown. Add the garlic and beef, stirring well. Crush the mince into fine grains until it changes color. Stir in the curry paste, herbs, spices, chutney, sultanas, and two of the bay leaves with one teaspoon of salt and a good serving of ground black pepper.

Third, cover the pot and simmer for 10 minutes. Squeeze the water from the bread, then beat into the meat mixture until it's mixed well. Tip into an oval ovenproof dish (23x33 centimeters / 9x13 inches and about 5-6 centimeters / 2 inches deep).
