This culinary vacation in the heart of Italy is all about unique experiences, where you will stay in a picturesque Italian town and have access to experiences most travelers don’t have. You will be introduced to local artisans who will share their life experience with you. You will hunt truffles with a real truffle hunter and see how fresh Ricotta cheese is made. You will enjoy cooking classes, indulge in a private wine tasting session, and take unforgettable day trips to stunning towns in Umbria.
Your home for the tour is a privately owned 15th-century palazzo that has been beautifully restored. It has beautiful Italian gardens and stunning views that you can enjoy while having your breakfast. Each room, with its unique architecture, color, and décor is reminiscent of a noble’s room of the past.
You will be met by the representatives of Food N' Wine Vacations at Rome Fiumicino Airport (FCO) around noon and will drive to the historic palace in the heart of Spoleto. You will have time to unpack and settle in your room. In the evening, you will take a walk to arrive for dinner at a family owned restaurant
Begin your day with a hearty breakfast on the beautiful terrace enjoying the stunning views. You will then be heading to an organic farm near Assisi where you will have an unforgettable experience of cooking with your hosts, a warm welcoming family, using fresh and seasonal produce. Your lunch is included and you will enjoy eating in the family's restaurant overlooking the green landscape.
In the afternoon, you will visit Assisi, the home of Saint Francis. Perched high above the flat valley floor next to Monte Subasio, the cobbled streets of Assisi wind across the hill offering spectacular views of the valley below. You will have time for shopping and explore the area before you return to Spoleto for a light dinner.
Prepare your taste buds for a day packed with delicacies. After breakfast, you will enjoy one of the prettiest drives in the region. You will drive through Valnerina (little valley of Nera) with its dramatic craggy mountain peaks, perched hamlets, and stone villages until you reach a family farm where you will watch the 'mama' making Ricotta cheese. Later, you will join with her son, the truffle hunter, and his dog to search for the elusive and famous truffles of Umbria.
To complete the experience, you will enjoy a truffle and other local specialty based lunch at the family’s restaurant. After lunch, you will drive through Monti Sibillini National Park enjoying spectacular views. Your last visit for the day will be at Norcia. Norcia has become famous for its art of pork butchery and preparation of cured meats.
The butchers across Italy now use the term norcino to indicate all kinds of meats preserved in this manner. You will be tasting the delicacies produced only in this area. In the evening, you will drive back to Spoleto, followed by a free evening to be on your own.
After breakfast, you will spend the morning discovering Spoleto. You will walk to the magnificent 13th-century fortress, from where you will see the striking 13th-century aqueduct. Then, enjoy free time to be a part of a real Italian town, walk the cobblestone streets, grab a bite, or sit in a café relishing local cuisine.
In the afternoon, you will drive through the wine roads of Umbria getting to know Sagrantino di Montefalco, a high-quality red wine made from a grape found virtually nowhere else in the world. You will spend a memorable evening in a winery enjoying a private wine tasting session combined with a cooking class and followed by dinner.
Today you will visit two medieval gems, the towns of Bevagna and Spello. Bevagna, a fairytale town is listed as one of the most beautiful villages in Italy. It boasts stunning Roman mosaics, a pair of fascinating Romanesque churches, and the re-creation of a medieval merchant’s house of the early 14th-century. You will have time to walk around and enjoy lunch on your own. In the afternoon you will explore Spello.
The pink stoned Spello is a perfect example of one of Umbria’s medieval small towns, which preserves the major number of monuments testifying to the Roman era. Spello's main point of interest is the town itself made up of stone houses decorated with flowers, hundreds of steep medieval streets and stairways, arches, and angles nestled into a pristine Umbrian countryside. These are second to none in their beauty. After enjoying Spello, you will drive back to Spoleto for a free evening.
This morning, you will depart to discover Orvieto, Umbria's grand hill town. The town sits majestically on a big chunk of volcanic rock called tuff. Built over several generations, the Duomo is one of the seven wonders of Italy. The dense, organic, medieval fabric of the town dictates the human scale of today's centro storico, with its cafés and restaurants, its bookshops, and artisans' work.
Orvieto has long kept the secret of its labyrinth of caves and tunnels. You will have a special access to private underground caves under a bakery that was accidentally discovered by the owners. Next, you will visit an olive mill and have a light lunch. In the afternoon, you will go back to Spoleto. You will celebrate your amazing week with the group at night, followed by a dinner at a restaurant.
Head home or extend your stay. All flights to North America depart early and check-out and transfer will be early. If you choose to extend your stay in Italy, Rome is only 90 minutes away from Spoleto by train.
You will be visiting Assisi, Valnerina, Norcia, Bevagna, Spello, and Orvieto to take cooking classes, enjoy delectable food, explore the wonderful surroundings, and enjoy some wine tasting respectively in these wonderful locations of Umbria.
