After your are transferred from Bari airport or station, make your way to Tran - the city known as the pearl of Puglia -, where you will check into a luxurious hotel, overlooking the spectacular views of the seaside port. Meet Tania (from Food I Am) and Melina (from Manuelina Culinary) in the terrace bar at 17:00 for a welcome drink. Your culinary journey of Puglia now begins in a palatial restaurant set on the water. Tonights menu plays with tradition, and will perplex your senses, drawing you into the magic that is Puglia.
Swap the sundrenched coastline and immerse yourself in cheese and wine as you head towards Andria. The first stop is the busy market, where the miracle of cucina povera or peasant cooking begins. The star in Andria is the delicious burrata, a typical cheese of the area only produced in Puglia. As the artisans make this soft and creamy cheese, you will lunch antipasto style, before heading off to visit the Museum of Confetto (confetti are traditional puglian sweets). Next, head to the magnificent wine estate, owned by the Antinoris family. There you will enjoy a private cellar tour and dine on the palatial balcony as you watch the sunset.
In the morning, head down to the market to chat with the local fisherman before heading into the picturesque old town that hosts Italys most important Jewish quarter, scenic harbor and stunning Cathedral, set right on the seafront. After a quick transfer, head out for a walk through olive groves, caves and country roads, at an authentic underground oil mill and lunching on site. In the afternoon, check into your luxury resort and head for the picturesque town of Polignano a Mare, a shining gem on the coast of the Valle dItria. The breathtaking Grotta Palazzese, a marine cave carved out of magnificent limestone rocks, with an unparalleled view over the bluegreen Adriatic, will be your location for dinner. Dine on the local seafood whilst listening to the sounds of the waves.
Celebrate the revival of street food. In Bari, families often sit with windows and doors open, filling the air with the fragrance of home food, an open invitation for the curious passer-by. Tania and Melina will take you on a tour of the best that Bari has to offer: focaccia, panzerotti, scagliozze, popizze and orechiette! Your day will continue with a visit and city tour of Bari old town. In the afternoon, head back to Polignano a Mare to enjoy some free time. Join the group for an afternoon gelato or granita.
Matera, rich and vibrant in history and culture, is famous for many things, but one of the most important is pasta. Your first destination will be an artisan pasta maker. Next, take a tour of an astonishing UNESCO World Heritage Site, the Sassi di Matera (stones of Matera). After your walking tour, enjoy some free time and lunch at your leisure, before being transferred to your luxury accommodation, set right in the heart of the honeycomb of natural caves. Take some time before dinner to browse the local artisan shops and pick up gifts or join the group for aperitivo. Dinner tonight will complete the day, as you venture out for a real Apulian experience.
Have a guided walk around the streets of Alberobello, home to the World Heritage Site of trulli, traditional dry stone huts with conical roof. Alberobello is also a center of linen making, and its artisans are internationally renowned for this fine and detailed craft. If you are interested, make your way to an artisan crafter of linen, or if you prefer, you can stay behind and meet some of the locals in a bar. In the afternoon, you will be involved in a cookery course like no other: learn how to make fresh pasta and limoncello in a charming 1600 masseria (farmhouse). Agriturismo Masseria Salamina is immersed in a wonderful expanse of olive trees and your dinner will be based on your efforts. Overnight in a beautiful relais, in the town of Ostuni.
Home to the stunning relais, Ostuni has long been an awe inspiring gem. Regarded as an architectural jewel, Ostuni is commonly referred to as the white town, for its white walls and its typically white painted architecture, at the heart of which sits the magnificent gothic cathedral. After an early morning tour of the alleys, amongst workshops and Baroque churches, you will have time for a quick coffee before setting off through the dramatic scenery of the Itria Valley, where you will first visit an estate producing an extraordinary quality of typical cold cut meat called capocollo. From there, head to the city of Ceglie Messapica, the gourmet capital of the south. Return to your relais, followed by dinner at a Michelin star restaurant.
After breakfast, you will be transferred to either Bari or Brindisi airport, for your journey back home.
