Cooking classes with Chef Sompon Nabnian

A challenging 5-day course in Chiang Mai Cooking School is for those looking to take their Thai culinary skills to the next level. Learn how to cook some of the most delicious Thai dishes ever created! The master classes are designed for people who are passionate about Thai food and want to learn more than what is usually offered in a Thai cooking course.

The menus have been specially designed to cater to professional chefs whilst still being accessible to food lovers who already have some knowledge of Thai cooking. Don't worry, vegetarian options are available for all dishes. There are 5 different courses to choose from, each with its own exiting selection of dishes. Course 5 (final day) specializes in northern food which is becoming more and more popular. Each person will be given the ingredients for 5 dishes that they will cook.

You will have to prepare them from scratch and make any curry pastes that are needed. Once the preparation is completed, you will cook all the dishes. Chiang Mai Thai Cookery School

Classrooms: The classrooms are designed so that every student can view the demonstration area. Overhead mirror and stadium style seating along with air-conditioning makes our classroom cooking and preparation presentations comfortable and educational for all students.

Cooking and preparation area: Every student enjoys a personal cooking station in our large preparation area. Specially designed working stations allow you to easily organize, prepare and cook your favorite Thai food with ease. Each station is equipped with everything you need during your course.

Dining area: Dining area is located next to our Organic Herb Garden, this provides a very comfortable and relaxing place to enjoy your cooking creations when you have finished them. Complementary coffee water tea are always available in the dining area throughout the day.

Organic herb garden: The tranquil surroundings of Master Chef Sompons house provide you with access to his organic herb garden to pick some of your own ingredients fresh from the soil. Essential Travel Thai Cooking School Tour Itinerary

Day 1 - Arrival

  • Arrive at Chiang Mai Airport (CNX).
  • Private transfer to hotel for a six-night stay.

Day 2 - Excursion, cooking class

  • After a leisurely breakfast, you will begin your tour of Chiang Mai's temples. The city of Chiang Mai has a wealth of beautiful and historic Buddhist Wats (temples), 36 Wats within the old city walls and many more in the surrounding countryside. *Today's trip will take you on a fascinating tour through Lanna Thai history, as you explore four of the most important temples, Wat Chedi Luang, Wat Phra Singha, Wat Suan Dok, and finally, Chiang Mai's most revered temple, Doi Suthep.
  • After finishing your tour of Chiang Mai's temples, you will stop for lunch at a local market. Your guide will provide an introduction to local ingredients and dishes.
  • After lunch, you will return to your hotel and have some free time for relaxation before your evening cooking class.
  • At approximately 15:30, you will be picked up from your hotel and transfered to the Chiang Mai Cooking School to begin day 1 of your Masters Cooking Class program - a challenging 5-day course for those looking to take their Thai culinary skills to the next level.

  • Departing Chiang Mai, you will head for The Thai Elephant Conservation Center (TECC).
  • Transfer back to Chiang Mai hotel and have some free time for relaxation.
  • At approximately 15:30, you will be picked up from your hotel and transfered to the Chiang Mai Cooking School to begin day 3 of your Masters Cooking Class program.
  • At approximately 20:00 - 20:30, you will transfer back to your hotel and you can spend the rest of evening at leisure.
  • Meal plan: breakfast, dinner

Day 5: Free time, cooking class

  • Take the morning free and spend it as you wish to.
  • At 15:30, you will be picked up from your hotel and transferred to the Chiang Mai Cooking School to begin day 4 of your Masters Cooking Class program.
  • At approximately 20:00 - 20:30, you will transfer back to your hotel and you can spend the rest of evening at leisure.

Day 6: Free time, cooking class

Day 7: Departure

  • At the appropriate time, you will transfer to the airport for your onwards flight.

Chiang Mai temples tour

  • Doi Suthep - Chiang Mai's most important and visible landmark overlooks the city from its forest mountain backdrop 3,520 meters feet above sea level. The temple is approached on foot by climbing a steep staircase comprising of 290 steps. Those with less energy can ascend by funicular railcars. The temples' golden pagoda contains holy Buddha relics and attract Buddhist pilgrims from all over the world as do the fantastic views of the city of Chiang Mai below.
  • Wat Phra Singha - one of Chiang Mai's most important sanctuaries, construction began in 1345 and was completed in 1400. This temple contains exquisite examples of traditional Lanna art. Nearby, the small Phra Wiharn Lai Kham, made from 700-year-old teakwood, is considered to be the most spectacular building in Chiang Mai. It contains the venerated image of the Phra Singh Buddha.
  • Wat Suan Dok, also known as the Flower Garden Temple was built in 14th century Lanna Thai monarch's pleasure garden and is a favourite spot for photographers. Several of the white chedis contain ashes of Chaing Mai's former royal family.
  • Wat Chedi Luang, this temple is the site of an enormous pagoda, originally 280 feet high, and which was partially destroyed by an earthquake in 1545. At one time, Wat Chedi Luang housed the revered Emerlad Buddha image now enshrined in Bangkok's Wat Phra Kaew. One of Wat Chedi Luang's most striking architectural features is a magnificent Naga staircase adorns the chapel's front porch. At Wat Chedi Luang there will be the opportunity to particiapte in the Monk Chat program, a culture exchange program that is desinged to help the temples Monks improve their English whilst also allowing visitors gain an insight into Buddhist culture and life as a monk.

The Thai Elephant Conservation Center

Founded in 1993 under Royal Patronage, the TECC cares for more than 50 Asian elephants in a beautiful forest. Beyond being an exciting tourist experience, the TECC is also known for its pioneering work in conservation and science. The TECC also proudly houses six of HM King Bhumibol's ten white elephants in the Royal Elephant Stables. You will arrive in time, this morning, to watch the Elephant's bathing. Bathing is quite a spectacle, with fifteen elephants submerging and rolling and spraying water with their trunks. The mahouts very nimbly manage not to fall into the water while scrubbing their charges.

After observing the bathing, it is time to watch the fascinating elephant show. The central theme of the show demonstrates traditional logging techniques that were widely practiced in Thailand for hundreds of years until logging was banned in 1989. A healthy elephant can drag about one half of its body weight, so the display exhibits the animals' strength but also their great delicacy and finesse, particularly when stacking logs with great precision. Beyond showcasing the elephants' prowess, logging demonstrations illustrate the incredible ability of the mahouts to control their elephants, using a subtle mix of voice commands (most elephants understand about 35-40 commands), body movements, and "touch" points. The show also demonstrates the elephant's agility and their ability to do complex behaviors on their own.

Day 2

You will try local specialties such as Chiang Mai sausage, nam prik noom (savory and sour chilli dip), sai grob (fried pork skin) and khao soy (rich and creamy noodle soup curry during your local market trip. The following is your menu for day 1 Masters Cooking Class.

  • Maa hor: Minced chicken, pork and prawns served on a bed of pineapple and orange.
  • Phad phet moo: Stir fired pork with red curry and green peppercorns.
  • Po dtheak: Mixed seafood soup with holy basil.
  • Seang waa goong pao: Barbecued prawns with a kaffir lime dressing.
  • Yam makua yaaw: Spicy long eggplant salad.

Day 3

  • Chu chee plaa: Deep-fried fish with a red curry sauce.
  • Gaeng juut dtheang kwaa: Clear soup with cucumber stuffing.
  • Mieang pha ma: Palm sugar, ginger and grated coconut served in pepper leaves.
  • Sii krong tord kratiem: Pork spareribs with crispy garlic and pepper.
  • Yam phiset: Chefs special salad.

Day 4

  • Geang boom bai: Boombai curry with pork.
  • Goong makham: Prawns with tamarind sauce.
  • Geang som plaa chon: Sour soup with snake-headed fish.
  • Takrite goong: Lemongrass sticks with minced chicken, prawns and pork.
  • Yam hau plee: Banana flower salad.

Day 5

  • Gaeng lieng goong: Mixed vegetable soup with prawns.
  • Geang paa moo: Jungle curry pork (water-based curry).
  • Goong phad normai farang: Stir-fried prawns with asparagus.
  • Plaa chon neung manow: Steamed snakehead fish with a chili and lime sauce.

Day 6

  • Geang hang lay moo: Chiang Mai curry with pork.
  • Khao soi gai: Chiang Mai noodle soup with chicken.
  • Nam prick oong: Minced pork northern style.
  • Saa makhau: Crispy eggplant salad.
  • Yam jin gai: Spicy chicken soup northern style.
  • Yam nuea: Spicy beef salad Thai Style.

Explore the ancient streets of Chiang Mai, relax by the hotel pool or perhaps partake in an optional tour in the morning/afternoon of day 3 to 6. Optional tous include cultural cycling tours around Chiang Mai and the surronding countryside and a trip to the ancient city of Wiang Khum Kham. If you wish, there will be the opportunity to ride one of the elephants (additional cost for this activity) or you can spend exploring the site taking in the elephant hospital, elephant nursery and the dung paper factory on day 4.

    "I was very glad that I signed up with this tour especially since I didn't have any time to plan anything on my own because I had a big exam to study for. About 2 / 3 of your days are planned so don't worry about having too much or too little luggage.They plan just enough of the day so you can rest if you're tired, or you can do something else at night if you have enough energy left. The real advantage of signing up with these guys is that you hang out with a local tour guide.He will tell you which foods to try out , interesting things about the country, and tidbits you wouldn't get by traveling without a tour guide. You will really get a sense of how people live in Thailand. This is something hard to understand without someone else to lead you around the place.All in all, I'm really glad I did it with these guys.
