Casa Tolentino is an ancient monastery of Saint Nicholas of Tolentino dating back to the 17th century. This small boutique hotel with just 13 rooms is located in one of the main streets of the city, at the foot of the hill of San Martino and next to the "Quartieri Spagnoli" (Spanish District).

The terrace of Casa Tolentino is one of the finest spots in the city to admire the beauty of the Gulf of Naples. The hotel is centrally located with just a five-minute walk to the Funicolare Centrale - connections with Via Toledo, old town, and Piazza Fuga Vomero. The decor is in perfect harmony with the convent, minimalist but with all comforts. Your partial or total sea view room has Wi-Fi, TV, mini-bar, heating, and private en-suite bathroom.

Since 2010 the beautiful garden has been classified as an “Asset of Historic and Artistic Interest” and National Monument by the Ministry of Cultural Assets and Activities with five thousand square meters of greenery for you to enjoy. The management and hospitality services of the structure are entrusted to the keen young people of a social co-operative, with the aim of enhancing the area and creating employment.

Day 1 - Arrival

Day 2 - A real Neapolitan culinary experience with a gastronome, winetales

  • Breakfast at Casa Tolentino.
  • Experience with esplora Napoli's gastronome, Sergio Corbino (up to 8 persons).
  • Cooking class

The hands-on course covers traditional, Neapolitan recipes, the wonderfully intense flavors of traditional Neapolitan dishes in a private historic dwelling located on Posillipo Hill, one of the most beautiful districts of the city close to the sea, to get in touch with a typical Neapolitan upper class family. The class is held in a friendly atmosphere and warm, seasoned with an ingredient that makes Neapolitan people, unique: the art of conviviality. You’ll discover that for Neapolitan people a foreign is a guest never a tourist.

You’ll have a chance to know some secrets of the cuisine and and immerse in the Neapolitan energy. Cook and eat dishes prepared using fresh, natural and organic ingredients. A complete meal (3 recipes and an appetizer), pizza di scarole (vegetable pizza) or di friarielli, a pasta dish, a vegetable or fish dish and then a dessert, prepared and accompanied by the wine which best complements it.

Please note that there is a small dog, Chica. If you don’t like dogs, please let your host know in advance.

Class includes 3 courses preparation, welcome drink, tour of the house, and lunch. Class can last from 1 hour 30 minutes to 2 hours. All the experiences are scheduled to last 3 hours, sometimes 3.5 hours. The duration depends on the dishes prepared. Neapolitan cuisine is an elaborated cooking, for example, to prepare the ragù (a sauce) it takes about 8 hours, that’s why esplora Napoli prefers to prepare simple dishes.

Guests will see, cook and eat the dishes. If there will be a dish that requires a lot of time to be cooked, they will see how to prepare it and then eat the ones already prepared. Most of the recipes will be prepared by guests, led and supervised by the gastronome.

The cooking class will start at about 11:30am. Esplora Napoli will meet you at about 10:30am at Casa Tolentino. You arrive at 10:45 at Villa Rivalta, depending on the traffic. You then meet the gastronome and owner Sergio Corbino. Have a welcome drink and tour of the house and some chat.

The location is an incredible place with a stunning terrace overlooking the entire Gulf of Naples, the Mount Vesuvius and Capri. Chat to get to know a bit, then start the class. After

preparing all dishes you‘ll have a lunch, water and wine included, end up with a dessert, then chat again. Caffè and ammazzacaffè (kills coffee) is a stiff drink - what you need after a Neapolitan lunch.

  • Hands-on cooking class at Cooking Academy (from 9 up to 16 persons)

Late in the afternoon, transfer from Casa Tolentino to a city winery for a sensorial and cultural path. Meet your local contact and transfer by car or van to Alto Grado for a wine tasting. Upon arrival, you will be welcomed by Enzo, the owner and wine expert. Enzo will lead you into the Campania wine world through an extraordinary sensorial experience.

All tastings are accompanied by local products of mozzarella, salami, and meats. Wine has a fundamental "emotional" value, a seductive and very strong power linked to the ability to create contacts between people in addition to its taste and pleasures.

Day 3 - Experience Naples, City of Sun, City of Shadows

Highlights: Esplora Napoli's exclusive guide: The Wanderer, Piazza del Plebiscito, San Martino Castle and Charterhouse, Pignasecca Market, Piazza del Gesù e and Chiesa del Gesù Nuovo, Artisan Mauro Squillace, gloves’ stylist, Spanish quarters (if there will be enough time : Waterfront).

  • Enjoy your breakfast at Casa Tolentino.
  • Meet your exclusive guide “The Wanderer” Il Vagabondo at Piazza del Plebiscito, one of the most largest italian squares, and reach Piazza Fuga on Vomero Hill by Funicolare centrale. This is a half day, about 5 hours, of responsible and sustainable tourism. Go around the city, visit some historic sites. Your guide Il Vagabondo will disclose the hidden truths about the city through tales concerning history, people and traditions, what the entire world doesn't know about Naples.
  • On the Vomero hill your guide The Wanderer, Il Vagbondo, will start his narration while sitting on the wall in front of the castle tasting a yummy cake, “sfogliatella napoletana”.
  • After visiting the castle, the rooms, the charterhouse, the gardens, the church and the famous Christmas crib of Cuciniello, you go down by walk to the Pignasecca, a noisy market.
  • You are now in the heart of the city that represents a culture melting pot. Reach Piazza del Gesù where there is one of the most beautiful churches of the city the “Chiesa del Gesù Nuovo”, a gorgeous architectural example dating back to the 16th Century.
  • Lunch in a Neapolitan pizzeria to taste the renowned pizza or at Cu-qu, cucina di quartiere (quartier cuisine) for typical Neapolitan dishes cooked in a modern style.
  • Continue to the bottega of Mauro Squillace artist’ gloves. Mauro and his son, Alberto, undeniable skilled and talented, will welcome you as if you were a friend. They will tell you legends, anecdotes, talk about art, history, life, future prospects, even in dialect, to show how a glove is made using the same technique handed down for 5 generations, handmade gloves in 25 steps!
  • You reach Toledo on foot, metro art station, today one of the most iconic photos of the city, and continue through Spanish quarter, to show you how different is the realty from what’s narrated by media.

Day 4: Neapolitan traditional dance class

  • Breakfast at Casa Tolentino.
  • Transfer from Casa Tolentino (by walk and funicolare) to Vico Pazzariello for a Tarantella and Tammurriata fun course.
  • La Tarantella: Love for dance, keenness for dance

An intensive training, theory and practice of ancient traditional Neapolitan dances with live music and singing in a small theatre. An awesome Tarantella & Tammurriata’s lesson takes place. Duration is approximately 2 hours.

“Dance the life to the rhythm of the spirit", is the slogan of the artist and dancer, Angelo, who will lead the guests to feel the passion of the popular dance, learning involving movements which seem to free the spirit from the worries.

Folklore, sound, ritual and magic take possession of the mind and body in a perfect union. The dancers, as if bitten by the tarantula and possessed by a strange evil, launch into a wild dance moving every part of the body.

The Neapolitan Tammurriata is a "quid" of the traditional music, it was born in 18th century in Naples but its history takes you a lot further than that, to the Greek cults in honor of Dionysus.

During the class you'll have brief presentation, the theory / practice. Internship provides the basic rudiments of Tarantella, the most widespread dance in various forms of southern Italy. The lessons will be accompanied by live music with Angelo 'O Capitano Picone at the organ and Kevin Stefanini at the drums and the voice. The conduct of the dance will be performed by Angela Esposito (dancer expert).

Dances practiced: some forms of Tarantella will be discussed, in particular La Tammurriata, in use in Naples and the province, but there will also be raids in the Tarantella

Montemaranese and Cilento. The interns will be supplied with castagnette (castanets/nacchere) and other typical folk instruments, such as triccabballacche, putipù and scetavajasse. Place: The Teatrino di Perzechella. Duration: approximately 3 hours. Suggested dress code: shoes and comfortable clothing (it is suggested tzigane skirts for women and waistcoat for men).

  • Marenna Spettacolo

An original alternative to the show lunch with a delicious Neapolitan sandwich filled with the classic contours of the Neapolitan culinary tradition, with dairy products or meat, wine and tarallucci, served in the splendid Perzechella Teatrino. With a show of theater and music entitled "O Captain and the crew of Mamma Schiavona."

A journey into the World of Tarantella. Particularly suitable for interns who can rehearse in complete freedom, what they learned during the course.

The course will begin at 11am and approximately finish at 4pm, including time for lunch and rest.

Day 5 - NeapoliTales dinner and music event

Villa Rivalta, the warm atmosphere of a real Neapolitan house! A unique experience; a journey into the deep soul of Naples, its traditional music and cuisine, set in a historic dwelling, a magnificent terrace overlooking the entire Gulf of Naples, on the Posillipo Hill, the villa is an astonishing mansion dating back to the 19th century. During winter the event takes place inside or on request outside with outdoor heaters depending on the weather.

Experience a live musical performance underlined by the narration of an expert while savoring the flavors of the Neapolitan cuisine unchanged over time. An emotional live concert performed by tremendous interpreters of the traditional Neapolitan songs that represent a heritage not only for Naples but for the whole world.

This cooking holiday will take place in Naples. The cooking class itself will take place in an incredible place with a stunning terrace overlooking the entire Gulf of Naples, the Mount Vesuvius, and Capri.

Daily breakfast at Casa Tolentino

Breakfast at Casa Tolentino consists of Neapolitan coffee made with Neapolitan coffee maker, or té, milk, harvesting seasonal fruit, oranges, and a fresh orange juice, seasonal fruits, grilled toast with cheese and ham, some cheese, croissant or sweet handmade.

Normally the hosts interact with clients telling the history that lurks behind the Neapolitan coffee, coffee for the people is a moment to savor all the way. "Coffee break” is a moment to share, it’s a pleasure and it's energizing.

Sample menu for cooking class on day 2

  • Summer menu: Parmigiana di Melanzane (eggplant parmigiana with parmigiano cheese, provola, tomato sauce, basil) or Melanzane Imbuttunate (stuffed eggplant), Spaghetti alla Nerano (spaghetti with parmesan cheese and provolone del Monaco cheese, basil, zucchine and a secret ingredient that will be revealed only on spot) or spaghetti con le vongole (spaghetti with clams)
  • Winter menu: Pizza di Scarole o di Friarielli (vegetable pizza with scarole or with friarielli), Pasta e Fagioli o Pasta e Patate (pasta with beans or with potatoes), Mozzarella in Carrozza (mozzarella cheese in a carriage fried) or the Sartù (a timbale of rice made with ragù sauce, small meatballs, parmigiano cheese, provola cheese, peas). It takes about 2.5 hours to prepare and cook. The ragù sauce shall be made beforehand. It is a very social experience; someone sees and then prepares the meatball; someone cooks the peas and so on. Also casatiello and pastiera napoletana. Pastiera is a typical Neapolitan cake. Casatiello is a rustic brioche, prepared with lard, provola or fior di latte cheese, parmigiano cheese, salame meat and bacon. These are dishes that require a lot of time to be prepared, so if guests want to cook it, you can cook only one.
  • Traditional Neapolitan sweet such as babà or caprese

  • Lunch: very tasty and fun. In a very special location, the typical "Neapolitan basso" with the typical dishes of the Neapolitan culinary tradition (Ziti with Ragù, Sausages and Friarielli, various side dishes) home cooked, wine and water included.
  • Alternative: brunch: light meal, buffet, with various tastings of typical side dishes (friarielli, parmigiana, zucchini alla scapece), pizza, casatiello. Wine and water included.
