If you are enthusiastic and want to learn how to make pastry such as choux and puff, and how to make delicious breads such as brioche, or even fashion tarts and pies, then this course is for you. You will master the skills and techniques you need to achieve perfect pastry from choux to puff as you create a repertoire of sweet and savory dishes. You will also create artisanal breads - from fermented dough to enriched brioche and pies and tarts with delicious fillings which will act as base for future creativity. During this course, you will also have time to take advantage of the beautiful surroundings that Kent has to offer.

Eastwell Manor

Quality without compromise and peaceful seclusion - this is the Eastwell Manor experience. Step over the threshold and be welcomed by warming log fires and discreet service. Your stay with us begins in the magnificent paneled reception hall which leads through to the luxurious drawing room, bar, and dining room, all overlooking the beautifully manicured lawns set in the Garden of England.

Leaveland Court Farm

Leaveland Court is an enchanting timbered farmhouse dating back to the 15th century that nestles comfortably between woodlands and the ancient parish church of Saint Laurence. Over the past few years the house has been sympathetically restored so that today guests are offered the comfort of modern facilities with old world charm. The true character of the place, as a family home and the heart of a downland farm, is apparent. The secluded and spacious gardens are an invitation to pause for awhile and enjoy the peace and quiet, read a book, take a nap in the summer house or a swim in the outdoor heated pool. On a good day the green woodpecker might be spotted. Please note this is a non-smoking establishment.

The Woolpack Inn

The Woolpack Inn is within easy reach of Alresford, Basingstoke, Winchester and Southampton. Eight newly refurbished, en-suite bedrooms, with heavy emphasis on home comfort are on offer at The Woolpack Inn, complete with king size or twin beds; plasma screens and DVD; broadband and mini-bar they are truly luxury. Bathroom requisites are supplied by The White Company. Shooting parties, guests withdogs, families, walkers, and cyclists will all find a warm and friendly welcome at The Woolpack Inn.

Reads Restaurant with rooms

A gorgeous country-house restaurant with rooms, Read's stands in five acres of lawned grounds with a half-acre kitchen garden that supplies much for the table. Inside, youll find warm elegance at every turn. There's a sitting room bar for pre-dinner drinks, then a couple of beautiful dining rooms where you eat at smartly clothed tables surrounded by ornamental fireplaces and lots of good art. As for the food, it's some of the best in Kent. Locals and travelers come for their delicious delights: a hot souffl of Montgomery's heddar on a bed of smoked haddock, local venison with pickled pears and walnut croquettes, a chestnut and whisky parfait with toasted hazelnuts and Seville orange curd meringues. The bedrooms are just as good - country-house splendor in spades. Expect decanters of sherry, Roberts radios, huge beds dressed in crisp white linen, wonderful bathrooms with robes to pad about in.

Day 1

  • 09:30 - Registration and coffee. The instructors will explain you the class program and how the day will run before you move through to the purpose-designed kitchen, surrounded by the beautiful Oast gardens.
  • 09:30 to 16:00 - Demonstration and cooking. During the baking session, you will be provided with a light lunch, and you may be able to taste some of the baked goodies you've prepared, with plenty to take home with you.

Day 2

  • Today, you will continue your baking session. You will have a light lunch provided. After the session, you will receive a recipe booklet to take away with you.

You will have a chance to take advantage of what Kent has to offer - from the historic cathedral city of Canterbury, the medieval market town of Faversham selling the finest fruits and cheeses, noble Kentish family houses, to the coastal fishing town of Whistable.

Driving directions from North and East

  • Take the M2 as far as Junction 5 - signed A251 Ashford/Faversham.
  • Take A251 direction Ashford, and after approximately 2 miles you will approach the village of Sheldwich.
  • Just past the church (on left), turn left at the sign to Sheldwich Lees.
  • Follow this small road - through the cricket field - for about 2 miles: you will drop down a small hill, bear round to the left into Fisher Street Road, and up another hill.
  • At the top of the hill, Fisher Street Oast is the 4th property on the left - turn in just before the circular kiln by the side of the road.

Driving directions from South and West

  • Take the M20 (to either Junction 10 or 9) and join the A251 direction Faversham.
  • Continue towards Faversham after the roundabout at Challock for approximately 3 miles, and turn right into Dayton Road - signed Badlesmere Church, Fisher Street and Molash.
  • Follow this road around the church, down into the valley and up the other side into Fisher left - turn in just before the circular kiln by the side of the road.
