Home of Saint Benedict, patriarch of Western monasticism, Norcia is the capital of Valnerina, a land of mysticism from which the spiritual adventures of the Saint began. The town is considered a wine and food capital of the region. In the last weekend of February every year in Umbria the National Exhibition of black truffle happens with typical products of Valnerina. This event has grown to international status in recent years and is of top interest to lovers of prosciutto, salami, capocollo, ricotta, fresh and seasoned cheeses and, naturally, the famous Norcia black truffle, as well as a host of other local specialties. The entire event takes place in the open air, in the Piazza San Benedetto.

During your cookery holiday in Italy, you will stay on a beautiful, spacious, working farm in the heart of Umbria - a region famous for its green countryside, cuisine and medieval towns. Your culinary escape into the Italian rural lifestyle is conveniently located, only 15 minutes from Perugia airport.

Just 4 kilometres away lies the capital city of Umbria, Perugia, which is steeped in history, dating well back before 309 BC. Perugia has a flare for culture and the arts. You will have free time to get to explore it, know it and fall in love with it.

The farm is home to your host, Rafaella, her husband, and many pets. Rafaella has a great passion for her home region of Umbria, its people, food and culture. Your Italian cooking classes will take place within her traditional kitchen, using the freshest products from the local surroundings and producers.

'La volpe e l'uva' (The Fox and The Grapes) farm is a little corner of paradise - a quiet, peaceful oasis, an ideal place to relax and unwind surrounded by the Umbrian hills, valleys and medieval villages. The property consists of 10 hectares of olive groves, vineyards and orchards.

Five lovely, two-room apartments (named Rocco, Riding, Fico, Oca and Paulownia) have been renovated paying close attention to detail. The apartments are sunny and comfortable so that guests, even those who stay for a few days, feel welcomed.

In your free time you can hike, try the local wineries, or jump in the car for a day trip to one of several surrounding medieval cities. Or, perhaps, for something more leisurely, you can unwind by the swimming pool, in the gardens under the shade of the fruit trees, or in the bright communal garden.

Refine your cooking skills and daydream on this lush, laid back, Umbrian farm, packed with regional specialties and the mountains and valleys awaiting you.

Program

Day 1 - Arrival

  • Arrive at the country farm La Volpe e l'Uva.
  • Check-in time from 14:00 to 19:00.

Day 2 - Cooking class, wine tour

  • Your first hands-on cooking lesson starts around 10:00. You will prepare a four-course lunch.
  • For lunch, you will eat your creations accompanied by wines from the farm.
  • In the afternoon, you will enjoy a wine tour in a winery that produces Sagrantino di Montefalco DOCGS. You will have a guided tour of the vineyard and cellars, ending with a test of local Umbrian specialties and the wines.
  • You will also visit the medieval cities of Bevagna and Montefalco.

Day 3 - Cooking class, truffle hunting

  • In the morning, you will start with the second hands-on cooking lesson around 10:00. You will prepare a four-course lunch.
  • You will then eat your creations accompanied by wines from the farm.
  • Your guide will drive you to the educational itineraries on the truffle track in the afternoon. These are fascinating and unique experiences to discover the mysterious world of the truffle. The guided visit is run by experts, who will guide you along the itinerary from the digging up of the truffle to its processing and use in cooking, also teaching you how to distinguish and taste its different varieties.
  • Get ready for a demonstration of truffle hunting with dog, tour of the farm and visit of the small museum, tasting of cooked dishes, and local wine tasting.

Day 4 - Cooking class and black truffle festival

  • As expected, the day will start with the hands-on cooking lesson around 10:00. You will prepare a four-course lunch that you will then enjoy accompanied by farm wines.
  • In the afternoon, you will have a guided visit of Norcia and its beautiful monuments: the Duomo, the beautiful central square and the Castellina, home of the Civic-Diocesan Museum with works of painting and sculpture from the all over the territory of Valnerina.
  • You will participate in the Nero di Norcia festival, one of Italys most important black truffle markets. Beside stands selling black truffles, a number of gastronomic events and demonstrations are held throughout the fair including guided tastings of wines, salamis and cheeses.

Day 5 - Departure

  • You will depart after breakfast, as your tour comes to an end.

The farmhouse La Volpe e l'Uva is located in central Italy, Umbria, North of Perugia, in a hilly position, very near to the main Umbrian towns and near to the Tuscany. It is only 4 kilometers far from the historic centre of Perugia and it offers a suggestive view of the Umbrian hills. The proximity of Perugia makes the farm's position ideal for visiting other artistic towns in Umbria, such as Assisi, Gubbio, Todi, Orvieto, the Trasimeno Lake, and towns in Tuscany like Siena, Arezzo, and Cortona.

During your stay at the farm, make sure to enjoy your breakfasts; in your apartment you will find coffee, milk, biscuits, jams, butter, and sugar. The three hands-on cooking classes will result in four-course meals that you will enjoy accompanied by Umbrian wines from the farm; liquors will be served after dinner/lunch. You will also enjoy one guided tour of a local vineyard and cellar, ending with a tasting of local Umbrian specialties and wines.

Enjoy the truffle hunting and tasting: get familiar with their flavor in order to better face the Nero di Norcia festival that you will participate on the third day of your trip. There, you will find stands selling black truffles and a great deal of gastronomic events and demonstrations that are held throughout the fair including guided tastings of wines, salamis, and cheeses. During these cooking classes, you will learn how use the traditional Italian ingredients and how to combine them to make delicious recipes. You will prepare a four-course meal: starter, first course, main course, and dessert.

Cook in Umbria will teach you to cook authentic Italian and Mediterranean dishes in an informal and friendly environment, where people learn the passion of the Italian kitchen and have fun doing it. In the cooking classes all pasta, pizza, gnocchi are homemade. Recipes vary according to the seasons, utilizing only the freshest and quality ingredients available. The farm Cook in Umbria produces vegetables, fruits, eggs, jams, wine and extra-virgin olive oil: the same local ingredients that are used to prepare the food during the cooking lessons.
