Join Cook in Umbria for a small group cooking tour of the mystic Umbria. A journey through the medieval heart of Italy where art, religion, and way of living were strongly tied up and where you can get a true idea of the origin of the Italian spirit. Umbria exudes an almost serene sense of spirituality, perhaps as a result of the thousands of pilgrims who, over the centuries, have walked through its green valleys to pay homage to Saint Francis of Assisi. In the cooking classes pasta, pizza, and gnocchi are homemade, while the olive oil and the wine are produced from the farms own trees.

La Volpe e l'Uva is a beautifully restored farmhouse overlooking the Umbria Valley. If you wish to experience the joy of authentic Umbrian living and explore the region and its splendour, then this is the right place for you. The farmhouse is surrounded by 10 hectares of olive groves, vineyards, and fruit trees. Five independent apartments have been restored around the ancient stone house, which dates back to the 17th century.

There is a lovely swimming pool from which you can enjoy the panoramic view. All apartments have been comfortably furnished in farm-style teak furniture with great attention for detail. The farm lies on a hill and offers absolute peace and quiet with spectacular views of the surrounding hills and Perugia. The farmhouse has a lounge with cooking area, a bedroom with a double sofa bed, and bathroom. Bed linen, towels, and final cleaning are included. Each apartment has a living space with a well-equipped kitchenette and a double sofa bed, a double or twin bedroom, and a bathroom. In the communal garden, each apartment has its own area, equipped with table and chairs to have lunch or dinner al fresco.

Day 1: Arrival

  • Arrive in Perugia and transfer to your country farm, La Volpe e l'Uva.

Day 2: Cooking class, excursion

  • At 10:00, you will start your hands-on cooking class. You will prepare a four-course lunch that you will enjoy at the end of the class, accompanied by local wines.
  • From 15:00 to 19:00, you will visit the mystical city of Assisi, a beautiful medieval town based on Mount Subasio, overlooking a peaceful Umbrian landscape. The tour will allow to get to know the main landmarks where Saint Francis lived. You can see the Saint Francis Basilica whose superior walls were frescoed by Giotto and Cimabue. You will also visit the Eremo delle Carceri, one of the oldest Franciscan convents.

Day 3: Cooking class, excursion

  • At 10:00, you will start your hands-on cooking class. You will prepare a four-course lunch that you will enjoy at the end of the class, accompanied by local wines.
  • Later on, you will go on a tour to Orvieto. The city of Orvieto exists in symbiosis with the tuff cliff on which it stands, an extraordinary example of the integration of nature by the work of man. The cathedral, dating back to 1263, is the most important architectural landmark of the city, with its splendid Gothic facing and the richness of the ornaments and internal chapels. In the ancient town we also find the St. Patrizio well, built in 1527.

Day 4: Cooking class, excursion

  • At 10:00, you will start your hands-on cooking class. You will prepare a four-course lunch that you will enjoy at the end of the class, accompanied by local wines.
  • In the afternoon, you will visit the Valnerina Valley around Norcia which was a main area for retreats, and a center of spirituality because of the early presence of Syrian monks, who provided the base for the following development of the Benedictine order. Woods, abbeys, landscapes and truffle flavor are to be experienced along the valley of the Nera River. You will visit the Church of Saint Benedetto, built upon the birth place of Saint Benedict and his twin sister Scolastica, it preserves a few Roman remains. You will also visit the Romanesque Saint Eutizio Abbey, early hermitage for Christian and Oriental anchorites and later a famous Benedictine monastery.

  • Raffaella Bucefalo

    Raffaella is the owner of the farmhouse La Volpe e l'uva and the organizer of the programs of Let's Cook in Umbria. She has been living there since 1996, with her husband who is a musician, and their two children. The idea of this project was born thanks to Raffaella's love for the region of Umbria, its products, and traditions. Her goal is to offer an unforgettable holiday in central Italy that combines Italian food, art, and local culture, a holiday during which people can live in a real farmhouse surrounded by Umbrian hills and discover the secrets of traditional cooking.

    A special role in Raffaella's cooking programs is played by her mother-in-law, Alberta; she manages the agricultural aspect of the farm, she produces an excellent red wine, extra virgin olive oil, and she has a large vegetable garden where she grows the vegetables that you will use in your cooking classes. She organizes the work during the olive harvest package.

  • Stefania

    She was born and raised in the hill town of Perugia, in central Italy. Her passion for cooking is rooted in the Italian and Mediterranean tradition of cooking together with her family in their home. After finishing her study of economy, she had a short experience in Zambia as an economist, but she has never abandoned her passion for cooking. When she came back to Italy, she worked in several restaurants, and after the birth of her son, she decided that the best way to share her passion for Italian cooking was through cooking classes and catering.

The farmhouse La Volpe e l'Uva is located in central Italy, Umbria, north of Perugia, in a hilly position, very near to the main Umbrian towns and near to the Tuscany. It is only 4 kilometers far from the historic centre of Perugia and it offers a suggestive view of the Umbrian hills. The proximity of Perugia makes the farm's position ideal for visiting other artistic towns in Umbria, such as Assisi, Gubbio, Todi, Orvieto, the Trasimeno Lake, and towns in Tuscany like Siena, Arezzo, and Cortona.

During your stay, Cook in Umbria will offer you daily breakfasts and lunches. In your apartment, you will find everything you need for your breakfast, such as coffee, milk, tea, cereals, bread, biscuits, eggs, jams made with fruits from the farm, fruits, and yogurt. You will prepare your breakfast in your apartment respecting your time. Send Raffaella a list of foods that you want to find in your apartment. For lunch, you will dine on your creations from the cooking classes accompanied by local, delicious, organic, red wines completely made in the farm. The lunch will be in Raffaella's home or in the garden of the farm.

Dinners are not included. The lunches from your cooking classes are very rich and the afternoon tours often include tastings, so you should enjoy light dinners in order to be ready for your next cooking class. In the apartments, your well-equipped kitchen is at your disposal and, after each tour, your driver can make a stop at a supermarket from where you can buy anything you will need. You can also ask the driver to bring you in the historical center of Perugia and dine in a restaurant; the driver will come to pick up them after the dinner at no extra rate.

During your classes you will be preparing a wide variety of dishes that include appetizers, first course, main course, and dessert.

Appetizer

Tasty and delicious, starters have evolved as a true course meal of the Italian cuisine. Cold or hot, it can open a tasty meal or a special buffet. Some of the dishes you can prepare are:

First course

A journey into the preparation of the symbol of Italian diet: pasta. The dry and fresh versions will alternate with different fillings and combinations of sauces inspired both by tradition and fantasy. Pasta sauce is made of fresh and seasonal ingredients.
