CIBO gives you the possibility to spend your time in enjoyable hands-on cooking classes, to advance your knowledge and skills to prepare authentic Italian cuisine, working with recipes that have been handed down for centuries and learning cooking techniques that will quickly transform you into you into a great Italian cook! The chefs will guide you through a memorable cooking experience, most of the classes start with a shopping tour in Bologna Middle Market where together with the chef and according to season availability, you will decide the menu for the day. So come and experience culinary pleasure and satiate your cravings.
During this holiday, you will be staying at a nearby hotel or apartment in a private room.
There will be a morning cooking session from 8:30 a.m. and continue till 1:00 p.m. Lunch will be served afterwards. Afternoon cooking session starts at 4:00 p.m and continues till 7:30 p.m. Dinner will be served after the session. You will meet at CIBO then take a historical tour route to the Bologna market area with the chef where you will decide what to prepare in the kitchen and do the shopping at market stands.
After strolling and sampling through the market and purchasing ingredients, you return to the school and the culinary adventure begins.
Each day, you will be preparing a complete meal, one for lunch and one for dinner, including handmade pasta using a 38-inch long mattarello (rolling pin). You will be enjoying lunch and dinner as well as a little bit of relaxation between the morning and the afternoon session.
One day is dedicated to balsamic cooking. You will meet at CIBO at 8.30 a.m. and go for shopping to the market with the chef and back to the kitchen, where you will be preparing a delicious meal using traditional Balsamic vinegar of Modena, Saba, and the Balsamosaba sweet and sour condiment collection as the main thread.
You will be enjoying lunch and a little bit of relaxation and at 04:00 p.m. you will leave downtown Bologna, with the chef, to travel to Vignola (Modena) and visit the vinegary La Cà dal Non in English “the house of the grandfather” where Mariangela and her family will lead you to the discovery of the fascinating world of traditional Balsamic vinegar of Modena aged over 12 and 25 years.
The tour will last for two hours and it will unlock the “secrets” of the production of this famous vinegar. You will walk in the ancient lofts where the product ages for many and many years and you will be guided through the tasting of these amazing vinegars and if you want you can shop them. Once you are back to Bologna, you will enjoy your dinner.
You will have breakfast, and visit the Prosciutto di Modena factory. You will enjoy Italian family style lunch with wine tasting. You will have the rare opportunity to view each step of the process, including the heating of the fresh milk and the separation of the curds and whey, the crafting of the curds by the casaro, the master cheese maker, the formation of a single cheese mass, and the birth of “twins”. Your discovery of the ageing process will take you on an exploration of the impressive “cheese library”, which houses more than six million euros worth of Parmigiano Reggiano.
At the end of the visit, you will be treated to a full tasting of Parmigiano Reggiano aged 13 and 25 months, as well as other delectable breakfast treats. CIBO will then take you off the beaten path to one of the best Prosciutto factories in the region. Here you will meet a family that for over three generations has been committed to making one of the world’s most delicious pork products.
At their factory in Modena, you will learn all about the strict regulations, the lengthy curing process, and the tremendous care that goes into ensuring that all D.O.P. prosciutto, including Prosciutto di Modena D.O.P. and Prosciutto di Parma D.O.P., meets exactly the same high standards. After the tour you will be treated to some freshly cut slices of Prosciutto di Modena D.O.P. together with some refreshing Lambrusco Grasparossa wine.
You will enjoy authentic Italian lunch at a countryside original Trattoria or in a certified organic winery, a perfect ending to a day filled with the very best of Italian food culture, here you will experience the famous Italian Days “LIGHT” lunch. You will be drinking and eating the best food and wine that the area has to offer.
Begin your adventure at 7:00 a.m. in Bologna. Your chef or instructor will accompany you on a quick ride and you will arrive in Venice by 9:00 a.m. You motor-launch through the picturesque Venetian canals and you shortly arrive at the stoned piazza of the famous Rialto seafood market. You then have a Prosecco Aperitive combined with typical local snacks in an authentic Venetian Osteria. You then walk to a local typical restaurant and have a great Venetian seafood lunch. After lunch, you walk to Piazza San Marco for an espresso and go back to Bologna.
Stefano believes that cooking must be a shared experience. His job is to question and then to listen. He views himself more as a facilitator, imparting knowledge, answering questions, and coming up with a plan of what to prepare for a meal but always starting from the student-cook taste and preference. The goal is for the students to leave with the knowledge that they can return home to wherever they live and duplicate what they made at the school. His classes are about learn cooking skills and having fun.
This holiday will take place in Bologna, Emilia Romagna region, Italy. The cooking classes will be taking place in CIBO which is located in Bologna city center, a short walking distance from the old Middle Market, the very food beating heart of the town.

You can catch bus C – Cestello, at the second stop Righi, get down of the bus and follow Via Righi up to Via Venturini. Walk along Via Venturini until the crossing with Via A. Zappoli. You’ll find them at n. 5 Via Zappoli. (approximate time: 10 minutes)
