This package is focused on learning how to cook the great regional dishes of Italy. Your trip begins in Bologna where you will be greeted by your personal chef with a visit to the local markets. You will then head to the Apennine Mountains and cook in the mountain retreat of Chef Stefano Corvucci. You will stay at a hotel or apartment in the small village of Balze.

You will be given personal cooking lessons by Stefano. He will teach you the culinary secrets of Pellegrino Artusi, the father of modern-day Italian cuisine. Writing only two decades after the unification of Italy, Artusi was the first to include recipes from all the different regions of Italy in a single cookbook. He is often credited with establishing a truly national Italian cuisine for the first time.

You will work in the kitchen with a cooking program catered to your interests. These are private classes and custom-designed to meet your needs.

During this holiday, you will stay in a private room in a hotel, BnB or apartment near the Culinary Institute of Bologna (CIBO) in Bologna, Italy.


This course develops organizational skills in the operation of preparation and organization of a catering, restaurant, or a culinary business. The course is designed to learn or improve techniques applied to many different recipes. Using a 38 mattarello or rolling pin you will transform flour and eggs into flavorful Bolognese dishes such as tortelloni and lasagna with Bolognese ragu.

Students will acquire practical knowledge and professional experience, reinforced by having hands-on experiences in a professional kitchen. Along with learning specific culinary skills, you will acquire a vast range of specific skills and practical capabilities in function in a professional kitchen.

First you will meet at the Culinary Institute of Bologna (CIBO). Then, you will take an historical tour on route to the Bologna market area. Your English speaking, chef and guide, will inform you about the history and culture of Bologna.

The schedule includes lunch, a time to relax, and dinner. After lunch, relax, and resume early afternoon for more hours of cooking lessons. You will be preparing both lunch and dinner, and eating together.

The dishes you will prepare are based on product availability, students preferences, and food seasonality. All classes include learning how to make hand made pasta using an authentic matterello and a variety of ragus.

Some of the dishes you will learn to prepare are handmade pastas such as lasagne, cannelloni, tortellini, ravioli, and sauces such as ragu bolognese, ragu-rabbit, and ragu-lamb.

You will also learn how to make stuffings for pasta, risotto, soups, house pate and starters, main courses, bread, and desserts such as panna cotta and tiramisu.

This holiday it's a great course filled with a visit to Italy's most famous seafood market and informative cooking lessons. It's a fun-filled holiday of dining on some Italy's best, freshest food that you created and a holiday of drinking great Italian wines. CIBO guarantees you will advance your cooking skills because you will not be just be taught recipes, but rather, you will be learning cooking techniques that will generalize to all types of dishes.

You can also explore the surroundings and visit the multiple religious sites such as Basilica di San Petronio, the San Domenico basilica, and Santo Stefano.
