During this holiday, you will stay in a private room in a hotel near the Culinary Institute of Bologna (CIBO) in Bologna, Italy.
This course develops organizational skills in the operation of preparation and organization of a catering, restaurant, or a culinary business. The course is designed to learn or improve techniques applied to many different recipes. Using a 38 mattarello or rolling pin you will transform flour and eggs into flavorful Bolognese dishes such as tortelloni and lasagna with Bolognese ragu.
Students will acquire practical knowledge and professional experience, reinforced by having hands-on experiences in a professional kitchen. Along with learning specific culinary skills, you will acquire a vast range of specific skills and practical capabilities in function in a professional kitchen.
First you will meet at the Culinary Institute of Bologna (CIBO). Then, you will take an historical tour on route to the Bologna market area. Your English speaking, chef and guide, will inform you about the history and culture of Bologna.
The schedule includes lunch, a time to relax, and dinner. After lunch, relax, and resume early afternoon for more hours of cooking lessons. You will be preparing both lunch and dinner, and eating together.
The dishes you will prepare are based on product availability, students preferences, and food seasonality. All classes include learning how to make hand made pasta using an authentic matterello and a variety of ragus.
Some of the dishes you will learn to prepare are handmade pastas such as lasagne, cannelloni, tortellini, ravioli, and sauces such as ragu bolognese, ragu-rabbit, and ragu-lamb.
You will also learn how to make stuffings for pasta, risotto, soups, house pate and starters, main courses, bread, and desserts such as panna cotta and tiramisu.

It's a fun-filled holiday of dining on some Italy's best, freshest food that you created and a holiday of drinking great Italian wines.
