This package is focused on learning how to cook the great regional dishes of Italy. Your trip begins in Bologna where you will be greeted by your personal chef with a visit to the local markets. You will then head to the Apennine Mountains and cook in the mountain retreat of Chef Stefano Corvucci. You will stay at a hotel or apartment in the small village of Balze.
You will be given personal cooking lessons by Stefano. He will teach you the culinary secrets of Pellegrino Artusi, the father of modern-day Italian cuisine. Writing only two decades after the unification of Italy, Artusi was the first to include recipes from all the different regions of Italy in a single cookbook. He is often credited with establishing a truly national Italian cuisine for the first time.
You will work in the kitchen with a cooking program catered to your interests. These are private classes and custom-designed to meet your needs.

During this holiday, you will stay in a private mountain retreat.
This package is focused on learning how to cook the great regional dishes of Italy. You will stay in the mountain retreat of Chef Stefano and cook side by side with him morning till night.
The mountain retreat was once part of a convent and was built in the 19th century. It has two fireplaces and a stone oven. The kitchen leads out to a garden with the Tevere River (which is a humble brook) on its border.
You will have the entire house to yourself and your party.
You and the Chef will determine the cooking program based on your interests and the availability of ingredients.
Trips to local markets
Stefano believes that cooking must be a shared experience. His job is to question and then to listen. He views himself more as a facilitator, imparting knowledge, answering questions, and coming up with a plan of what to prepare for a meal but always starting from the student-cook taste and preference. The goal is for the students to leave with the knowledge that they can return home to wherever they live and duplicate what they made at the school. His classes are about learn cooking skills and having fun.
This holiday will take place at the Culinary Institute of Bologna (CIBO) in Balze, Italy. It is near Mt. Fumaiolo on the borders of Tuscany, Emilia Romagna, and Marche.
Each day you will be preparing both lunch and dinner as well as eating together with the chef.

During your free time, you can visit the murals, sculptures, and statues such as the Fontana del Nettuno elaborated by sculptor Giambologna, or explore the museums, galleries, castles, and palaces nearby such as the Museo d’Arte Moderna di Bologna, the music museum in the spectacular Palazzo Aldini Sanguinetti, and the Palazzo Comunale, a mélange of building styles and constant modifications.
You can also explore the surroundings and visit the multiple religious sites such as Basilica di San Petronio, the San Domenico basilica, and Santo Stefano.
