Cooking classes in Bologna

Meet at CIBO then we take an historical tour on route to the Bologna market area. We have a light breakfast at a local cafe or cappuccino and a pastry and then we walk through the market, sampling the Bolognese foods, decide with the chef what we will be preparing that day and then return to the class and prepare antipasti, main dishes, sides, and desserts.You will prepare two delicious, complete, authentic, Bolognese meals. Every CIBO class includes learning how to create hand-made pasta using a 38 inch long matterello (rolling pin). You will be having lunch, time to relax and then dinner. Each meal includes unlimited wine.

CIBO, the Culinary Institute of Bologna for Foodies, offers unique, hands-on cooking classes. Taught by English-speaking, professional restaurant chefs, classes are for foodies of all cooking skill levels and we also provide special courses for culinary professionals and chefs. All classes are aimed at advancing your knowledge and skills for preparing authentic Italian cuisine. It is often reported that back home, our guests rarely eat Italian food out now because what they make at home is better than what they can get at most local restaurants.

Cheese factory tour

Venture out on a morning excursion to a cheese factory, there you will meet Alessandro, where you will see all the working steps in the production of Parmigiano Reggiano DOP, the world's most famous artisanal cheese made only in the Emilia-Romagna countryside. This special part of the tour takes you to a factory, where they have invested their entire lives in maintaining the quality and tradition of this fantastic product. You will have the rare opportunity to witness the entire process, from the early morning delivery of the milk from local farmers to the crafting of the curds by the master cheesemaker Big Cheese to the final aging process.

You'll also see a Parmigiano bank, storing millions of this incomparable cheese. At the end of the visit, you will enjoy the breakfast of the champions with a glass or two of good, dry Lambrusco, and, of course, plenty of Parmigiano Reggiano cheese. Afterwards, you can buy Parmigiano, aged for 13 or 25 months, for a quarter of the price you pay back home.

Italian balsamic tour

From the Parmigiano factory to the Acetaia, to see the secrets of the famous Aceto Balsamico Tradizionale di Modena DOP, certified balsamic vinegar that is at least 12 years old). This isn't factory balsamic you can find in a market back home, this is a single family producing small amounts of the world's finest vinegar for generations. They are using the same ancient technique of aging grape, must from Lambrusco or Trebbiano grapes in oak barrels (batterie), that Italian families in this region have been using for centuries.

The result is a condimento so delicious it has to be tasted to be believed. Enjoy a full tasting of Aceto Balsamico Tradizionale DOP, allowing you to compare 6-year balsamic dressing with 15 and 45-years balsamico, ricotta (fresh from the cheese factory) and Balsamic Gelly and Gelato with balsamic dressing.

Prosciutto tour

From aceto balsamico to one of the best Prosciutto producers in the region, where you'll meet a family that, for over three generations, has been committed to the production of Prosciutto di Modena DOP, a Prosciutto equal to the more famous Prosciutto de Parma. This Prosciutto did not have the same name recognition, since its produced within the city limits of Modena and not Parma, but it is made with the same food regulation.

There, you'll learn the careful craft that goes into creating one of the most delicious pork products this planet has ever known. Also here, enjoy a full tasting of fresh slices of prosciutto di Modena D.O.P in a combination with some nice Lambrusco. Please note that some rooms are cold storage. You will have lunch at a countryside original Trattoria, a perfect ending to a day filled with the very best of Italian food culture.

    "In early 2016 I made the decision to travel from the U.S. to Bologna for the purpose of learning the craft of pasta making. I wanted experienced restaurant chefs who understood the demands of professional kitchens and were also committed to the highest standards of teaching proper technique and execution. I found all this at CIBO with chef Stefano and chef Lucia. Teaching on professional equipment, Chefs Stefano and Lucia were both very generous with their regional knowledge and technical expertise. Chef Stefano, the owner, is excellent in every way a teaching chef should be. And chef Lucia is one of the best instructors and passes to you all the knowledge and passion for Bolognese cuisine she has to offer. Lastly, if you are lucky you will meet Katia, the pasta maker for the restaurant. Watch her in action and marvel at how fast and perfectly she makes enormous amounts of hand rolled tagliatelle every day."

    "I did a 3 day course at CIBO 3 years ago and it was fabulous. I try to do cooking courses in every country I go to and it is very hard to find a course that is truly a cooking course and not just a cooking demonstration with the odd bit of helping to chop/stir. CIBO is perfect if you want to learn some serious skills in Italian cooking - my dinner parties have been up a notch ever since! It's fun, the instructors are awesome and you learn a lot. I'm going to Italy again next year and am planning to do another course at CIBO. Can't wait!!"

    "My wife and me had a great day in June at CIBO in Bologna. Stefano Corvucci the chef had other obligations, but we learned a lot with Gabriela and Christina in a warm atmosphere with a lot of fun. Starting with shopping the ingredients at the market for a wonderful menu was an experience of its own: meat, chicken, vegetables, cheese and much more went into our basket before preparing a wonderful lunch. Choosing the right products, compiling the menu and working hands-on, that was what I was looking for: stuffing zucchini blossoms, de-boning a chicken, preparing cotoletta bolognese, creating sauces from bones and vegetables, rolling and cutting tagliatelle, stuffing tortellini and tortelloni, preparing ragu, making tiramisu, and sampling all this! It was a great day and we had a lot of fun with Gabriella who guided us professionally."

    "I did a morning pasta class with Gabriela and it was one of my highlights from Italy! Gabriela made it fun and friendly while also clearly explaining exactly what to do. We made delicious pasta and sauces and sat down to eat it with a nice glass of red wine.     "A month ago, I took a three day cooking course at the Cibo culinary institute of bologna. I have prior experience in cooking, mainly in Italian and Bolognese cooking, and over the years have taken cooking classes and seminars in Italy. After reading enthusiastic reviews on TripAdvisor, I was expecting an above average course, but what I received exceeded all expectations. Chef Stefano and his team were professional, with never-ending patience, lots of enthusiasm and good will to share their knowledge with the students. The planned schedule of 8 hours a day in their amazing kitchen ran way beyond the scheduled time, the clock did not interest anyone. The fresh ingredients that were purchased every morning in the market were of the highest quality and generous portions. Stefano was attentive to my needs and desires, and throughout the entire course I felt as if he and his team were intent on sharing their vast kitchen experience with me, and to make my time with them as pleasant as possible. Unlike prior courses in which I took part, the emphasis here was not on the recipes, not that they were lacking, but rather on cooking methods and techniques, allowing one to acquire the knowledge to create infinite possible combinations limited only by one’s imagination. In short, I learned how to cook. From the first moment, Stefano made me feel at home, part of the family, and after three days, I left with the feeling that I had not only learned an incredible amount of culinary skills, but also gained new friends. At the end of those three days, I felt as if I had completed at least one month of tutoring. Thanks Stefano, I will return."

    "I love to cook. I love the way that food can create a memory, that a meal can have such an impact, and that it can bring people together from such different backgrounds to a common purpose. I chose to take the full day cooking course because I was looking for a challenge. I wanted to walk away knowing that I could do justice to the beautiful food that Bologna (and really Italy in general) has to offer and I truly feel confident that I can. Michelle and Gabriella (who shares my name!) were such amazing teachers. We went to the market in the morning to get our supplies and by then I already knew, I was in for quite an education. I worked one on one with Michelle the entire day, starting with filled pastas in the morning and ending with a beautiful five-dish dinner in the evening. We were joined by Gabriela and another couple in the afternoon session, and it was so much fun having a full kitchen. Michelle could not have been a better teacher. From knife skills to pasta rolling techniques, I feel like I have learned at least six months of skills in one day. Having attempted making pasta on my own before this trip, I not only learned what I had done wrong, but how I could build on what I learned today when I practice at home. I am so looking forward to using these skills when I get back home! I can't recommend these classes enough. If I had more time in Bologna, I would sign up for another session!     "CIBO is an authentic culinary school in the heart of Bologna, attached to a popular, vibrant restaurant. It is run by Stefano and two great chefs, Michelle and Gabrielle. I booked a two-day course where I was taught to make pasta, sauces, meat, and vegetable recipes. Michelle was a patient, informative, friendly, and communicative chef. A perfect course for those who require chef's tips and to gain confidence in the kitchen. I was joined at various times by friendly Americans, Australians, and a well-behaved, French, hen party of eight. The school is flexible for the solo travelers (I was made very welcome by the chefs and teachers), families, friends etc. Health and safety requires shoes and trainers for kitchen work and you are expected to arrive promptly for the market walk or shopping at the beginning of the day. Apart from that just turn up and enjoy the cooking. I found it a wonderful experience."

    "I have always wanted to properly learn how to cook in the traditions of Bologna, renowned for its excellent cuisine. I booked an evening class for four hours of learning how to prepare the Bolognese ragu as it should be. Stefano lead me through step by step method of creating a meat sauce that was primarily of meat and not overwhelmed by too much tomato. He watched as I fumbled through the procedures and gave me guidance when I was running off course, in a friendly and enjoyable way. By far the highlight of my trip to Europe was to take that class from the Maestro Stefano Corvucci. CIBO is well worth the time and effort. You will learn how to cook authentic and delicious fare, but will be able to eat and enjoy a fine meal with most pleasant company, Stefano and your fellow students of CIBO."

    "Attending the CIBO was our sole reason for visiting Bologna. We completed the two-day course in October 2015 and wished our time allowed for even more lessons. The morning visit to the market was a highlight each day as it reinforced the principle of buying the finest and freshest ingredients. It became so clear why this is important as the lessons unfolded. And perhaps more importantly, Stefano and Lucia were so interested to learn what we liked to eat, what foods we could find at home and what we wanted to learn. They tailored one entire menu around our tastes for seafood, for example. The staff at CIBO were terrific in all respects, and we also enjoyed meeting the very small group of other students. The facility is impressive and impeccably clean - a beautiful commercial kitchen with all the equipment and facilities. The food we prepared was, although way too much, the best food of our entire trip to Italy! The wine, the espresso, and the deserts were plentiful and delicious as well."

    "What a fun night. My clients all had a wonderful time, many of them cooking for the first time. I love how Stefano and his staff had my entire group, even the men who never cooked before, and swore they wouldn't, Stefano had them very excited about cooking. I always include a cooking lesson in my culinary wine tours and Stefano makes CIBO a must on my next tour through Bologna. Grazie Stefano and CIBO!"

    "I have attended many courses at various Culinary Institutes and the local college that has a degree program in Culinary Arts. Lucia, the chef instructor at CIBO, was wonderful. The class was for two people, perfect for true learning. My fellow student was also a foodie and fun to work with.Lucia agreed to take us to the market to shop for our ingredients after offering us a choice of what dishes we wanted to learn. Her English is excellent and we chose three pastas and four sauces. We walked to the fresh open market, selected our cheeses, meats, veggies, and fruits. She showed us how to recognize real parmagianno from other cheeses that are sometimes sold as the real thing.She described the ingredients in detail so we knew how to find them in the states. When we returned to CIBO, we were brought into the new, bright, professional, and clean kitchen just for lessons. CIBO has two such kitchens. They also have a pasta room with large tables for rolling pasta sheets. She showed us what to do but made sure we did the actual work so we would remember it. She explained why things were done a certain way. We made everything ourselves, pastas, ragu, bolognese sauce (which is the best I have ever had), and two other sauces. We were given access to the recipes on line and left with a certificate that I will treasure as it was a wonderful memory. She is patient, very talented as a chef and fun to work with. Our lesson was to be from 8:30 to 12:30 but at 14:00 we sat down and enjoyed our dishes with some lovely red wine, she did not rush us. A very relaxing and productive lesson. I will be making lots of pasta when I return home. I highly recommend this school for a valuable lesson that is relaxing and personalized."

    "This class exceeded my expectations from the moment we walked in the door. We did the full day cooking class- which I highly recommend versus the half day class. We learned how to make tagliatelle, ravioli, and tortelloni along with the stuffings and sauces. Lucia was great at simplifying pasta making and I feel like I will be able to easily replicate it at home.In the afternoon, we learned how to debone a chicken and rabbit (with great patience from Falina). Stephano was an awesome teacher and cared about providing a truly memorable experience for us. The whole group made this experience so much fun and educational and I am glad that we chose CIBO for our cooking experience. It is a must for any foodie or one wanting to learn how to cook an authentic italian meal!"

    "Influenced by a 'foodie' colleague, and as a novice in the field of cooking, I recently attended the CIBO Culinary Institute in Bologna for a three-day cooking course - and came away with not only a whole new set of skills, but also a wonderful philosophy about the preparation of food.The professional environment; the incredibly helpful assistants; the passion for food that flowed from head Chef Stefano; but most importantly, the hands-on experience of food preparation was just the right mix for me to gain confidence and valuable experience. And my lack of knowledge going in was never an issue - I felt right at home from day one.One never felt that we were participating in a set program - but more like colleagues collaborating together to create a wonderful food experience, not just a meal.
