Private cooking lessons

Stefano’s style of tuition is eclectic and, at the same time, comprehensive. The word ‘recipe’ is almost banned at his school, as he is determined to teach foodies new skills, rather than focusing on a prescriptive approach that sees them leave with just the ability to cook one or two dishes.

You will learn how to handle a chef’s knife, but there will never be a knife skills course: Stefano will tell you that his granny had only one knife her entire life and still managed to turn out exquisite food! The day starts with a trip to the market, to buy what they have on the stall that day and what is in season.

Back to the kitchen, the food is gloriously displayed on the work surface, and only at this moment the chef and the students will together decide what ingredients to use, which dishes to create, which culinary techniques to use and how to present the food. A great food day starts: inspiration and creativity guided by a deep knowledge of ingredients and techniques will transfer skills and indelible memories.

Sample itinerary

Basically, you’ll spend five days in each location:

  • 5 days/4 nights in Bologna with cooking classes at the Culinary Institute of Bologna, wine gourmet food tastings and city tours
  • 5 days/4 nights on the Apennines mountains with daily cooking classes, wine tastings, and tours: one day in Tuscany, one day in Montefeltro, one day in Ravenna. Lodging here will be in an ancient house or a hotel.

In 10 days, you’ll discover the beautiful regions of Emilia Romagna, Tuscany, Umbria, Marche, and Veneto.

Food

During this culinary vacation, you will get lunch, dinner, and wine. You may get breakfast and local food tastings as well. You will try 10 recipes a day. You will cook and eat together the best Italian dishes, including according to the season, porcini and chantarelle mushrooms, white truffles, local meat and seafood, the best salumi and cheeses, vegetables, and handmade pastas. You will also drink 2 wines a day (not just "taste"). The favorite Italian wines here are Barolo and Barbaresco, Valpolicella and Amarone, Sangiovese, Chianti, Brunello di Montalcino, and Sassicaia.
