You will be staying in Evason Room at Evason Hua Hin Resort in shared double and private room occupancy basis. Overlooking the vast resort parklands, Evason Hua Hin has 196 guest rooms, suites, and villas. Evason Rooms offer the perfect combination of comfort and modern conveniences. The air-conditioned guest rooms has a sitting area and a king or twin beds depending on your preference.
All rooms have en-suite bathrooms with rain showers, are newly renovated, and offer eco-friendly designs with unique natural ambience highlighting natural fabric and calming hues in line with Evason Hua Hin Resort's responsibility to the environment.
This class includes a variety of raw and cooked dishes that are mostly gluten-free, ranging from smoothies, breakfast, energy bars, balanced meals, to healthy snacks. All are delicious, satisfying and nutrient dense, and help to support an active, busy lifestyle. All classes are designed for all levels, from beginners to advanced conventional chefs, who are interested in learning about colorful healthy plant-based cuisine.
The plant-based and raw cuisine at Blue Lotus Learning Center is creative and confident, made with fun and innovative selection of organic ingredients with the methodology to create modern cuisine. They do not use any unnatural additives. Most of their produce comes from their own campus garden, using solely organic cultivation techniques.
The learning center is located adjacent to the resort’s three restaurants and within walking distance of a large organic garden, which supplies the vegetables and herbs used in their plant-based raw and cooked organic food courses. Every week, students will take a trip to a nearby local market to acquire regional specialty items to incorporate into their culinary creations.
Your classically-trained instructors provide comprehensive instruction in plant-based organic culinary techniques. From refined recipes, knife skills, cooking equipment, to operation techniques. Artful plating and texture balancing are presented in a low-pressure environment, where students are encouraged to reach their full creative potential.
At Blue Lotus, all classrooms provide every student with a cooking station that is in essence an individual kitchen, with access to a professional-grade cooking range, dehydrator, food processor, juicer, sous vide, turning slicer, and more! All tools needed to create modern plant-based cuisine will meet the requirements of your organic and raw cuisine curriculum.
Blue Lotus limit their raw cuisine classes to 16 students. Each class is led by a classically-trained chef and a helpful instructor who gives hands-on instruction and encourages students to learn through action and creativity. The teaching approach is by giving direct feedback to students, which they believe gives the most efficient results. All lessons will be delivered in English. The Thai assistant instructors can guide, explain, and answer your questions in Thai. Blue Lotus' instructors speak Spanish, French, and Croatian too.
This course includes field trips and personal research time.
Khun Keng is the assistant instructor who is an expert in traditional Thai cuisine and has been trained in plant-based cuisine for the past year. Dedicated, meticulous, and passionate about the art of food styling, he is always keen on sharing his experience and knowledge with students.
Ivor is from Croatia. He worked with raw food and has been on a plant-based diet for four years. Because of his curiosity and experience in nutrition, he is bringing an interesting nutritional expertise to the culinary approach of Blue Lotus. You will recognize him by the notebook he carries around with his written poetry. Blue Lotus encourages you to ask him questions about everything you want to know on healthy plant-based lifestyle.
This course will be held at Evason Hua Hin Resort in the peaceful area of Pranburi to the south of Hua Hin township. The resort is set amongst 20 acres of landscaped lush tropical gardens with lotus ponds and provides calming views of the Gulf of Siam. It is located in a remote, quiet area, surrounded by nature, which makes the learning experience unique.
There is no stress from the hectic city and everyday life. Enjoy the time to reflect, focus on yourself, and what you want to learn. King Rama VI built a palace in Hua Hin in 1926 and it remains the Thai Royal summer palace to this day.

Car transfer with Toyota Camry costs 5,500 THB, while BMW or Mercedes costs 8,000 THB. Please inform Blue Lotus your flight details at least 24 hours before your arrival.
