The main questions and topics that will be covered are gluten-free baking, lactose-free cream and dairy, egg replacements, cooking sugar and refined-oil free, MSG-free by using natural sources of umami flavor, playing with seaweeds, plant-based sauces and dressings, and adopting unrefined sweeteners.

Laura Castro who is from Colombia has more than 16 years of experience in the restaurant industry and loves experimenting with plant-based cuisine. Laura is a free-spirited person who is truly passionate about cooking and baking and has been traveling around the globe for the love of food. If you walk into Laura's kitchen, you will know she is around because of the smell of baked goods she is testing!
Khun Keng is the assistant instructor who is an expert in traditional Thai cuisine and has been trained in plant-based cuisine for the past year. Dedicated, meticulous, and passionate about the art of food styling, he is always keen on sharing his experience and knowledge with students.
The cooking holiday will take place in Hua Hin, Pranburi, Thailand. Pranburi is named after the River Pran. Sun, sea, charming local villages, and a convenient location 20 miles (30 kilometers) to the south of Hua Hin are just some of the reasons for Pranburi’s popularity. It is very much a family holiday resort area with good shopping and multi-national restaurants, including excellent Thai seafood.
