Laura Castro

Laura Castro who is from Colombia has more than 16 years of experience in the restaurant industry and loves experimenting with plant-based cuisine. Laura is a free-spirited person who is truly passionate about cooking and baking and has been traveling around the globe for the love of food. If you walk into Laura's kitchen, you will know she is around because of the smell of baked goods she is testing!

Khun Keng

Khun Keng is the assistant instructor who is an expert in traditional Thai cuisine and has been trained in plant-based cuisine for the past year. Dedicated, meticulous, and passionate about the art of food styling, he is always keen on sharing his experience and knowledge with students.

Ivor Madzar

Ivor is from Croatia. He worked with raw food and has been on a plant-based diet for four years. Because of his curiosity and experience in nutrition, he is bringing an interesting nutritional expertise to the culinary approach of Blue Lotus. You will recognize him by the notebook he carries around with his written poetry. Blue Lotus encourages you to ask him questions about everything you want to know on healthy plant-based lifestyle.

Christophe Berg

Christophe, from France, has a background in project management and teaching, before embracing the vegan culinary world. Having worked as an executive chef and consultant, he is also the author of countless recipe books on plant-based cuisine. He is the steady foundation of the learning center. Christophe is a passionate trail runner, specializes in plant-based cuisine for active people. He always has great stories and kitchen tips up his sleeve to share.

Kate Kasbee

Kate earned her certification as a plant-based chef from Matthew Kenney Culinary in 2016. Two years later, she is thrilled to return to Evason Hua Hin - this time to work behind the chef's demo station. She is the recipe developer and content creator for Well Vegan and the co-author of Frugal Vegan (2017). Kate is currently completing her holistic health coach certification at the Institute for Integrative Nutrition.

Amie Rader

In addition to being a yoga teacher, Amie loves to write and posts weekly on her blog and website, where she details the struggle of living your yoga in the real world. She is passionate about showing others that perfection and toe touching isn’t needed to be a yoga practitioner, just a willingness to get and stay uncomfortable, which is where true growth happens.

I had an amazing time at the Blue Lotus Academy, both during the Masterclass with Jean-Christian Jury and during the Workshop with the dedicated team of the culinary school. Not only they were all extremely knowledgeable and more than legit when it comes to nutritional aspects and health benefits of their foods, but also I felt I had space for my own creativity, while they were guiding us through the making of colourful and beautiful plant-based foods. I would definitely recommend this place to anyone who wants to take a break from reality, because this is a dreamy place where you learn how to nourish your soul!

I came here with a group of friends and did the raw asia 3 hour workshop. The tuition was very knowledgeable and the facilities so professional. I was also so pleased to see that the cooking school has influenced the rest of the Evason hotel. All the restaurants have interesting and creative vegan marked options. I would 100% recommend this to people as a fun way to spend the weekend and for people visiting the area. I'd give it 10 stars if I could!

It was a sensational experience when cooking with the Blue Lotus crew. We took Raw Asia couse, and I felt more resourceful to cook plant-based raw cooking after taking the course. The kitchen is modern, spacious, and equipped with fancy culinary tools. The staff were welcoming, encouraging and supportive, so I had no any pressure to learn and cook. One rewarding part was eating the dishes that we cooked, and it was a lovely reminder that the plant-based cuisine is healthy and tasty. Highly recommend! It is a must try when staying in Evason.
