Day 1

Arrival at the charming Blair House Inn by 15:00.

Your first demonstration will begin with our executive chef in our commercial kitchen at 16:00.

After dinner you participate in a short discussion with our chef. This will include an itinerary and recipe assignments for the next two days.

Day 2

Chef will await you at 07:45 and your first lab will begin by preparing breakfast.

After enjoying your meal you will have a short break to explore the Hill Country and return to the kitchen by 10:00. At this time you will receive instructions and break off to prepare you assigned recipes for lunch.

An afternoon break will be after lunch and at 15:00 you start to prepare your evening dinner.

Once complete you will have a feast of the finest foods to enjoy and top the evening off.

Day 3

You will once again report to the kitchen at 08:00 and begin breakfast preparation.

A small break will be allowed and then you will enjoy preparing a picnic lunch to be taken on a Hill Country outing to a local Texas vineyard or farm. You will be given a tour of the vineyard grounds and enjoy your prepared picnic lunch.

This will conclude your three day course at approximately 14:00.

Cooking theme

Classic French - Learn the art of haute cuisine. Create exciting fare such as shrimp scampi, French onion soup, coq au vin, steak au poivre, and beef bourguignon. Learn the art of roasting canard (duck) served with an orange sauce. Prepare delectable desserts like chocolate torte with raspberry coulis and crme caramel. Chef Chris will teach you basic French techniques that you can apply to all of your home cooking.

Taste of New Orleans - Spend 3 days and 2 nights in the beautiful Texas Hill Country while learning a variety of New Orleans cooking skills. This class will focus on the two main cuisines in and around New Orleans - creole and cajun - and will deliciously reflect their mix of Spanish, African and French heritages. You will learn to prepare dishes such as award winning gumbo, blackened snapper, cajun barbequed shrimp, Louisiana brined roasted loin of pork, king cake and the classic beignet.

Country French - Chef Chris will teach you basic French techniques that you can apply to all of your home cooking. In the process, learn how to make dishes like steak Diane, poulet Wellington, raspberry tarts and chocolate crme brule plus sauces Francais 101! Never again feel like recipes are written in a foreign language!

Italian Cuisine - Come enjoy the taste of Italy as you prepare classic dishes such as osso buco Milanese, roasted red pepper risotto with pine nuts and Italian espresso tiramisu. Youll learn traditional Italian sauces such as fresh basil marinara and roasted garlic alfredo, and how to make the fresh pasta and potato gnocchi.

BBQ Camp - Summer in Texas means barbecue. Youll be the envy of your friends and family once you learn the secrets to preparing wonderful meals on the grill. Try your hand at cedar planked wild king salmon with jerk spice and mango salsa, St. Louis style baby back ribs with cherry coke glaze, chicken fajitas, Texas brisket, and Fredericksburg peach cobbler with homemade vanilla bean ice cream.

Mediterranean Cuisine - If you cant make it to the Mediterranean this summer, let Blair House take you on a culinary tour of the region from the Strait of Gibraltar to Cypress with plenty of tasty stops along the way! You will prepare risotto, hummus pita bread, pasta, fruits de mer, calamari, baklava, classic Greek salad, focaccia, polenta and crema Catalana. These are just a sampling of what you have to look forward to on your journey.

Spanish Cuisine - New for 2016, this class will teach the technique and history of Spanish cuisine. Traditional favorites like paella and arroz con pollo will serve as a backbone for the flavors that make up Spanish style cooking. Enjoy potato and chorizo trinxat, tortilla espanola, salmorejo, and a traditional favorite- cocido, a stew made with chicken, pork, chick peas, vegetables, and smoked paprika. Discover the influence and taste of Spanish cuisine around the world.

Oktoberfest German Cuisine - The Texas Hill Country has a long tradition of German culinary influences. Spend Oktoberfest with Blair House Inn and learn some classic dishes, such as, German pot roast known as sauerbraten, pork schnitzel, bratwurst with sauerkraut and potato pancakes, and braised red cabbage. End your meal with rich German black forest cake and apple strudel for dessert. Im sure we will find some room for a German beer or two. Prost!

Hill Country Holiday Feast and Baking - Get in the mood of the Holidays. Learn a variety of ways to cook turkey and side dishes. Make holiday dishes such as mesquite smoked turkey, chocolate truffles, pumpkin cheesecake, ginger cookies, classic pecan pie, sweet potato brule, pecan and sage cornbread dressing, and sausage stuffed pork tenderloin with cranberry port glaze! Make this holiday traditional, but with a twist!

    Sarah originally studied in South India under a traditional school of thought inspired by the Krishnamacharya lineage. Wanting to share the same essence of both devotion and play learnt in India, she did a Yoga Alliance and International Yoga Network recognized teacher training program in Shakti Power yoga in London. There, she began developing sala, a unique creative Vinyasa style with a strong focus on core and body conditioning by combining Hatha yoga with strength building postures from Ashtanga and Pilates.

Wimberley is at the heart of Texas Hill Country. Whether you are lucky enough to live here or only have the opportunity for a weekend visit, we want to make sure you "get what you came for." Wimberley, Texas was established in 1848. Today, the picturesque village is a resort area in the beautiful Texas Hill Country.

Visitors to Wimberley, Texas are entranced by cool, shady pools beneath towering cypress trees, frothy cascades on the Blanco River and sparkling Cypress Creek, green meadows and majestic hills. They find abundant white-tailed deer and natural wildlife around every corner. Climbing, hiking, fishing, swimming, boating, golf, tennis, arts and crafts, and camping are popular Wimberley, Texas activities.

There are plenty of events and live music venues available in and around Wimberley. Devils Backbone is one of Texas most scenic drives, officially RM 32, the Devils Backbone is a winding, razor-backed ridge overlooking Hill Country vistas. It extends from RM 12 just south of Wimberley, Texas west some 24 miles to near Blanco. Arts and crafts galleries in Wimberley display the many artists and authors who make their homes here.

Hill Country scenes captured in oils, handicrafts, hobbies and souvenirs, are available in several quaint shops and studios clustered on and around the Wimberley, Texas town square at a casual joining of several roads. Wimberley offers great vistas, beautiful surroundings and BBQ to die for.

Market Day, sponsored by the Wimberley Lions Club is held the first Saturday of the month from March through December. It is a bargain hunters paradise for the unusual, one of a kind, hard to find something-or-other youve been looking for! As residents of the Hill Country we can give you insider tips on where to eat and visit!

You definitely will want to set your alarm to ensure that you do not miss the gourmet Texas Hill Country breakfast experience at the Blair House. From our signature huevos rancheros to our mouthwatering hill country eggs benedict, our delicious three-course breakfasts are the perfect way to start your day!

The Blair House Inns premier Wimberley day spa, located in a serene Hill Country setting is open daily from 8 a.m. to 6 p.m. The sauna room is available 8 a.m. to 8 p.m. every day at no charge for Blair House guests. We offer a changing room and shower in the spa. Our comfortable and completely private massage room is available for all treatments. Blair House day spa uses Mountain Rose massage products. Mountain Rose uses no synthetics, no additives, no parabens, and is 100% all natural. Please provide a minimum of 24 hours notice in case of cancellation. A USD 45 cancellation fee will be charged within 24 hours from time of massage.


Full body Swedish massage: 60 minutes or 90 minutes. A classical European massage technique characterized by a delicate manipulation of the muscles with special oils by therapeutic stroking and kneading of muscle tissue to promote stress relief. It is used to improve circulation, relieve muscle pain and tension, increase flexibility and induce relaxation. It combines three basic strokes to the skin: long, firm strokes; kneading strokes; and small circles. This is our most requested and one of the most enjoyable massages.

Full body deep tissue massage: 60 minutes or 90 minutes. Deep tissue massage is used to address chronically tense areas of the body. Employing techniques that are slower and pressure that is deeper, your therapist will concentrate on areas of tension, pain, the sore muscles and stubborn stress knots that nag at our bodies. This massage will leave you feeling relaxed and rejuvenated.

Aromatherapy massage: 60 minutes. Enjoy a relaxing Swedish or deep tissue massage using four essential oils and hot, steamy towels to sooth and relax tense muscles.

Prenatal massage: 60 minutes. This massage is tailored to suit the mother-to-be, with a complimentary aromatherapy massage, using lavender oil with hot towels, soothing the body and soul during this special time.

Hot stone massage: 90 minutes. Smooth, heated basalt stones are integrated into the massage and placed on key tension areas of the body. The warmth and energy from the hot stones transmits soothing warmth which combined with the pressure of the massage strokes, loosen and melts stiff muscles into submission. Releases stress, creates a feeling of well-being, balance and a sense of wholeness.

Lomi Lomi massage: 60 minutes or 90 minutes. Given in a fluid, rhythmic motion, Lomi-lomi relaxes the nervous system, increases circulation and creates a sense of well-being as it works with the bodys natural flow and rhythm. Our traditional Hawaiian Lomi-lomi massage boasts several deep tissue massage techniques. This legacy of techniques is the product of generations of contribution, and works wonders to deepen your state of consciousness and promote a higher level of healing.


Acupressure facial: 60 minutes. Using organic skin care products to cleanse, exfoliate, masque, tone and rejuvenate, this full hour facial relaxes and restores balance to your skin. Along with acupressure points on the face, a neck and shoulder massage, and a choice of a hand or foot massage, this treatment leaves you in a completely pampered and relaxed state of mind.

Botanical facial: 30 minutes. This 30 minute facial may be added to an hour long massage.


Foot scrub with salt & oils: 30 minutes. This 30 minute foot scrub may be added to an hour long massage.

Reflexology for feet: 60 minutes. In reflexology theory, points and areas on the feet, hands, and ears correspond to specific organs, bones and body systems. Reflexology uses reflex maps to identify areas on the feet, that may correspond with and energetic blockages in the glandular system of the body.

Hands, feet, scalp: 45 minutes. Enjoy a relaxing and soothing experience of sheer bliss. Feel renewed and ready to greet the world! Peppermint oil helps to relieve tired feet. Other oils applied by request.

Specialty treatments with young living oils.

Raindrop technique: 60 minutes. With the use of young living oils, a combination of eight essential oils, valor, thyme, oregano, cypress, wintergreen, basil, peppermint, and marjoram are placed along the spine. The raindrop technique is a method of using reflexology and massage techniques and essential oils to bring the body into structural and electrical alignment. It is designed to bring balance to the body with its relaxing and mild application. This is not considered massage, but rather a deep therapeutic treatment.

    "We stayed in the Ft. Worth room which offered a king sized bed. Our room was the prefect size and offered a deck to sit outside and drink coffee. Great location which was quiet and very romantic. The staff was very kind and helpful. We certainly want to come back again and again. The breakfast was delicious!!"

    "My husband and I are celebrating our 2 year wedding anniversary. The best word to describe our stay is "whimsical". The room was gorgeously decorated with soft safari theme. The room included a private deck that overlooked hill country hills. The oatmeal and lavender and spearmint soaps, shampoo, and conditioner were divine, so much so that my husband purchased shampoo as a takeaway. The pool was great, we couldn't enjoy it because the weather is still a bit cool in the morning, but, it was clean, towels were provided if you prefer to swim, and the hot tub, which we did use, was a relaxing experience. Friday evening we received a turn down service that consisted of red wine and decadent brownies. Then there's the food. My husband and I were so stuffed all weekend. The Chef Chris is AMAZING! Saturday morning we had fresh fruit, roasted potatoes, and vegetable quiche, with fresh squeezed juice. The quiche is the best I have ever had. It was fluffy!! Saturday night was a five course meal to die for. They were able to accommodate my husband's allergies to certain foods and took such great care to ensure he was not compromised. Then there was the service. This is an important piece. We were so comfortable at the Blair House Inn. Chris, Lois, and all of the staff and other residents were so kind and hospitable. It's evident the Blair House Inn is used to accommodating and servicing an internationally diverse clientele which speaks to their stellar rating as an internationally known bed and breakfast"

I can't say enough about how much we enjoyed the class and overall experience while at the Blair House. The chef and Inn staff for very pleasant, and the property itself is beautiful...very quiet and relaxing! We will definitely be back."

    "The Blair House Inn is polished Diamond in the beautiful Hill Country. The location is central to many of the most popular destinations in the area - good home base. The facility is excellent and maintained immaculately. Each of the rooms we saw/stayed in were well designed and very romantic. World... ...go away! Deer roamed the property and ate food from our Host's hands. The Hosts, Chris and Lois, were very friendly and interacted with all of the guests, making the stay pleasurable from every aspect. Second stay, will not be the last."

    "Great location for shopping in Wimberley. Beautiful property with a nice trail and roaming deer. Our suite was quite comfortable, we were in the El Paso and had no trouble with the bed or the air conditioning as was reported in another review. Also had a nice porch and a hammock where we could watch the stars. We were there on Saturday night and were required to purchase the dinner. We had the salmon and the lentil soup and they were both excellent. The risotto with the pork was also excellent. Wine was very good and it was poured generously. Breakfast was included in the room rate and was excellent."

    "Perfect location, only minutes away from the "downtown" shops and only 15 - 20 minutes away from two great wineries, Wimberley Valley and Duchman Family Vineyards. The property itself is beautiful and peaceful - deer wandering the grounds and a resident cat, Mr. Oliver, adding even more charm. We stayed in the San Miguel cottage, which provided the right amount of privacy but close access to the pool and main house. I would definitely recommend the Blair House Inn for those looking to have a quiet weekend away in a beautiful setting. Also, the three-course breakfast is amazing! Can't finish this review without mentioning the food too."

    "My wife and I recently spent our 20th anniversary at Blair House Inn and it was exactly the best thing we could have done in the Hill Country of Texas. The setting and grounds are beautiful and peaceful. The friendliness of the staff is great. The food is superb. Relaxing and enjoyable. We both received a 90-minute massage in the spa house on the property and found ourselves the most relaxed in the past few years we have been. We had a six course Spanish gourmet dinner with select wine and it was delicious. A plus!"
