Online Culinary Course in Indian Cuisine

Parthvi of Beyond Highways has designed a complete module for online classes and will be sharing the same here. You could join a free induction session and choose for a minimum of two classes for enrolling in the program. The first session of 30 minutes is free for everyone where you could hold a discussion about the program and how each participant has to be prepared for every session. The cuisine is mainly Indian and desi Chinese (meaning the Indian form of Chinese).

Classes are to be held at 5:00 p.m. Indian time (GMT +5:30). Beyond Highways is open to altering time as per participant after the first class which is free.

Course information

All of these below is Module 1 of the program. Beyond Highways shall come up with the next step post this, though you could opt for a minimum of two levels. They do invite you for a free welcome session and you could decide after that if you actually want to take this up. They assure you a fun learning session with all-time support.

Level 1: Snacks (40 minutes)

  • A: Pakoras or Gram Flour Dumplings

The most famous Indian snack which could be prepared in six to seven varieties, so once you master the skill you could end up hosting great parties with this loved starter for all age groups. Here, Parthvi will showcase mix veggie Pakoras, Paneer Pakodas (Cottage Cheese), and Chicken Pakoras.

  • B: Alu ki Tikiya Chaat or Potato crispy cutlet

Right from the streets of India, this is the most loved street food again people love its variety and topping options. Here, Parthvi will demonstrate chickpea topping version and yogurt topping.

  • C: Tamarind Sauce

It's a must-have topping or sauce served along and you could store it in a refrigerator for as long as a month.

Level 2: Snacks (40 minutes)

  • A: Masala Anda Platter / Boiled egg snack

A super quick and easy egg starter and loved by all.

  • B: Honey Chilly Potato

A famous veg snack of crispy potato fingers cooked in honey and chilly sauce.

  • C: Besan Chilla

Also called a veg omelet or spicy pancake, it's a wonderful brunch or tea time craving recipe topped with grated cheese. A definite hit!

Level 3 (40 minutes)

  • A: Tamatar ka Shorba

A famous Indian recipe of tomato soup with a dominant coriander flavor. It’s a blend of all fresh herbs and spices, highly nutritious, and super taste.

  • B: Stuffed Paranthas

Unique and a favorite form of flatbread which is consumed for a heavy breakfast or lunch / dinner. It’s a stuffed bread and here, we shall display how you could prepare Alu Parantha (potato stuffing), Keema Parantha (minced chicken stuffing), and Gobhi Paneer Parantha (cottage cheese and cauliflower stuffing).

  • C: Yogurt

Nobody likes to do their own yogurt or curd though it's super simple and so healthy if you do it at home and avoid the packaged one. Curd is also a must-have with Paranthas so there you go.

Level 4 (40 minutes)

  • A: Dal Tadka

A staple in all Indian homes, lentils with a basic idea of It you could go on preparing the various kinds of lentils. Here, Parthvi will demonstrate how to prepare yellow lentils or moong dal.

  • B: Bhindi do Pyaza (Okra / Ladyfinger)

An all-time favorite is a dry okra curry. One needs to know how to do it to get the perfect outcome, it's all about the technique here. So you’ll get to learn a famous main course dish.

  • C: Tawa Chapati (Indian roti bread)

This flatbread is a must-have with the above.

  • D: Beverage Butter Milk

A drink made out of yogurt, an absolute favorite and a perfect way to complete this Indian meal.

Level 5 (40 minutes)

  • A: Baigan Bharta

Roasted Aubergine Curry (Indian main course dish of Brinjal or aubergine curry).

  • B: Keri ki launji or Raw Mangoe Curry

Beyond Highways' most liked recipe over the years. Parthvi has been demonstrating this for all her classes and you will all love it.

  • C: Masala Papad-Papadum

This is a side dish or starter with food or beverages. Parthvi will show a wonderful way to prepare it. For this you shall need a packet of Papadums.

Level 6 (40 minutes)

  • A: Tawa Murgh Masala / Dry Chicken Curry

This is a special chicken preparation for authentic Indian flavors. It is native and is slightly spicy, but you could alter the spice level depending on your taste. Once you cook this, you will beat all Indian restaurants around you, it's the best!

  • B: Anda Curry (boiled egg curry)

Another favorite for egg lovers who do not wish to confine eggs to breakfast, this is a beautiful preparation.

  • C: Papaad ka Saag (Papadum Curry)

Special from the Rajasthan Cuisine, this is one of the quickest and easiest of the recipes. A lot of first-timers who tried through this class call it the Indian pasta.

Level 7: Indian Desserts (40 minutes)

  • A: Kesar Kheer or the Saffron Rice Pudding

Parthvi is sure you must have tried this and loved the taste. They'll want you to cook it often and once you learn it, it's going to be a weekly affair.

  • B: Atta Halwa

This is a beautiful sweet preparation of wheat flour and butter, best served warm.

  • C: Gajja Halwa

A hot favorite, this is a carrot pudding made of grated carrots topped with cashews.
