Aimed at home cooks that wish to expand their general cookery skills the Intermediate cookery week is all about mastering the core cookery skills required to build your confidence and competency in the kitchen. You will leave the course with good skills, and bags of confidence and passion to recreate the many recipes and ideas that you have learned on family and friends.

Ashburton Court offers quality bed and breakfast accommodation to Ashburton Cookery School students. The campus offers 12 rooms in two historic town houses in central Ashburton, just a short walk from all the town's amenities, restaurants, pubs and shops, and of course on the edge of Dartmoor National Park. Rooms have en-suite bathrooms, and televisions, and free wireless internet access is available throughout.

Apartments

Apartments have a double bedroom, en-suite with shower, and also include a large living room, with kitchen facilities (fridge, stove, cutlery etc), a sofa, dining table and chairs, as well as a large LCD TV.

Attic rooms

Attic rooms provide affordable, comfortable accommodation in rooms full of character. One attic room is en-suite, another has a private bathroom.

Standard rooms

All rooms offer comfortable accommodation with a double bed, television, tea and coffee making facilities, an en-suite shower and toilet, and wireless internet access.

  • Arrival - meet your fellow students and chef tutor, who will talk you through the week ahead over tea and coffee
  • Morning session - topics covered: knife skills; beef stock; vegetable stock; fish cookery; risotto;

  • Afternoon session - topics covered: chocolate decoration; chocolate dessert; whole chicken butchery; flavored oils; potato garnish; vegetable garnishes;

  • Pre-session - tea and coffee on arrival, followed by a short recap of previous day, including a theory session
  • Morning session - topics covered: chicken stock; white bread; soups; praline; fruit preparation; dauphinois potato

  • Afternoon session - topics covered: lamb butchery; meat cookery; vegetable preparation and cooking; sweet sabayon; wild mushroom identification and preparation; reduction based sauces; tomato sauce;

Day 3

  • Pre-session - tea and coffee on arrival, followed by a short recap of previous day and theory session
  • Morning session - topics covered: sorbets; flavored oils; egg cookery; slow-cooked meats; shortcrust pastry; fish cookery; cooking ham;

  • Afternoon session - topics covered: sweet pastry; tuille biscuits; pork preparation; roasting vegetables; reduction based sauces; potato garnishes;
  • Dinner

Day 4

  • Morning session - topics covered: crème brulee; fresh pasta dough; pasta fillings; pesto; vinaigrettes and dressings; quiches

  • Afternoon session - topics covered: pasta types and making; filled pasta; vegetable preparation; potato preparation; flavored butters; meat cookery

Day 5

  • Breakfast
  • Pre-session - tea and coffee on arrival, followed by a recap of the week
  • Morning session - topics covered: shellfish preparation and cooking; round fish filleting and cooking; flat fish filleting and cooking; reduction based sauces; fish stock; lemon tart; salsa verde

The cookery school accommodation at Ashburton Court is located 200 yards from the center of Ashburton Town with easy access to pubs, shops and restaurants. Parking is on street, although at weekends there is access to a car park where you may leave your car for the weekend. A complimentary minibus will run you the 500 yards to the new cookery school in the morning and back at the end of the day, although on a warm day most students prefer to walk.

A little further away you will find the Cities of Exeter and Plymouth which provide plenty in the way of shopping, services and entertainment. And of course, the Cornish border is only 1 hour away. Devon is one of Europe's finest food regions, and you will be spoiled for choice when it comes to food producers, farmer's markets, fine restaurants and some of the UK's best pubs.

The delicious organic buffet breakfast comprises fruit juices, tea, coffee, homemade jams and preserves, marmalades, home-baked bread, cereals, yogurt, fresh fruit salad, fruit bowl, dried fruits, seeds, nuts, Westcountry cheeses and hams, toast fresh-baked croissants and organic free-range eggs cooked to order.

  • Lunch: poached salmon, saffron and dill risotto
  • Dinner: char-grilled chicken breast, garlic and basil oil, paysanne vegetables and new potatoes; dark chocolate and amaretto pot with crème Chantilly and chocolate garnishes

Day 2

  • Dinner: best end of local lamb, dauphinois potato, green vegetables, wild mushrooms and Madeira jus; fresh fruit salad, Cointreau sabayon and praline

Day 3

  • Lunch: baked smoked haddock, poached egg, Fosseway fleece cheese and curry oil
  • Dinner: pork tenderloin en papilotte, honey-glazed celeriac and carrots, apple mash and cider reduction; coconut and lemon-grass sorbet with tuille biscuits

Day 4

  • Lunch: smoked ham hock and mature cheddar tart with salad leaves and mustard vinaigrette
  • Dinner: tortellini of goats cheese and red pepper with fresh basil pesto; fillet steak with café de Paris butter, fat chips, stuffed flat mushroom and balsamic roasted tomato; vanilla crème brulee

Day 5

  • Lunch: stuffed plaice fillets with pan-fried scallops and saffron sauce; pan-fried mackerel with crisp pork belly, tomato and cannellini bean stew and salsa verde; caramelised lemon tart
