Take your cooking to a higher level with this highly practical and enjoyable week of cookery training in charming Ashburton of Devon, UK. Aimed at home cooks who wish to expand their general cookery skills, this intermediate cookery week is all about mastering the core cookery skills required to build your confidence and competency in the kitchen. You will leave the course with good skills and bags of confidence and passion to recreate the many recipes and ideas that you have learned on family and friends!
You will be staying at Ashburton Court. There are 14 rooms available at Ashburton Court that are only available to cookery school students and their guests. You will enjoy a comfortable stay within walking distance of the town center with easy access to the local shops, bars, and pubs. The buildings are listed as Grade II.
It is only a five-minute walk from town amenities, pubs, and cafes. All rooms are en-suite. There are also tea and coffee-making facilities. The guests may enjoy free Wi-Fi. The rooms will be cleaned daily. Towels are provided. Continental breakfast with eggs cooked to order are available. There is also a guest lounge. Complimentary minibus transport to the new cookery school is provided.
All Ashburton Cookery School courses offer a certificate upon successful completion of a course. Successful completion of a course is determined by the chef tutors based on a minimum rate of attendance, learning progress, and attitude.
Certificates are issued at the discretion of the chef tutors. Please note, to maintain the value of Ashburton Cookery School course certificates, students that have a partial attendance record will find that reflected on their course certificate.
This intermediate course is aimed at the typical home cook. These courses will build your confidence in all areas of the kitchen. You should be familiar with common cookery concepts such as frying, baking, grilling, and be able to follow a recipe. No other special skills are required.
Soups, sauces, and stocks; breads and pastries; shellfish, fish, meat, poultry, and game; vegetable dishes; chocolate, sugar, creams, and custards; and a whole lot more are all condensed into five days. It's hard work, but immensely satisfying and provides a comprehensive introduction to all aspects of cooking and the kitchen.
The recipes you will learn are designed to give you as broad a range of cookery techniques as possible in order to build your skills and confidence. You will leave with the ability to cook lots of delicious, well presented dishes for home cooking and entertaining. These are the examples of recipes you will learn during the course:
Please note that since Ashburton Cookery School uses the best quality seasonal and local produce as much as possible, some recipes will sometimes change to match the produce available.
Meet your fellow students and chef tutor who will talk you through the week ahead over tea and coffee. In the morning session, you will learn about knife skills, fish cookery, savory pastry, salad garnishes and dressings, fruit-based dessert, and tuile biscuits. Your lunch will be baked organic salmon fillet en papilotte with buckwheat salad, poached egg, and nut butter balsamic dressing.
In the afternoon session, you will learn about whole chicken butchery, sauces, wild mushroom preparation, potato garnishes, and vegetable garnishes. Your dinner will be roasted chicken breast, Anna potato, sautéed wild mushrooms, glazed green vegetables, and Madeira sauce, with rhubarb and stem ginger créme brulee.
You will have tea and coffee upon arrival at the school. Then, you will have a short recap of the previous day and a theory session. In the morning session, you will learn about confit chicken, lamb butchery, vinaigrette, pannacotta, and quiche. Your lunch will be smoked haddock and mature cheddar tartlet, mustard and herb vinaigrette, and mixed salad leaves.
In the afternoon session, you will learn about pasta work, sauces, vegetable garnishes, fruit garnishes, and terrines. Your dinner will be pork, fennel, and lemon meatballs, tomato ragu, and herb linguini, with honey and Greek yoghurt panna cotta with orange and glazed figs.
You will have tea and coffee upon arrival at the school. Then, you will have a short recap of the previous day and a theory session. In the morning session, you will learn about French baguette, condiment, beef stock, cooking crab, desserts, ice creams, and chocolate sweet pastry. Your lunch will be confit chicken terrine with red onion marmalade and French baguette.
In the afternoon session, you will learn about savory sauces, lamb butchery, vegetable garnishes, marinades, sweet sauces, and strudel. Your dinner will be roasted saddle and braised breast of Dartmoor lamb, turnip and prune gratin, and wilted spinach and tarragon jus, with apple, almond, and cinnamon strudel with vanilla ice cream.
You will have tea and coffee upon arrival at the school. Then, you will have a short recap of the previous day and a theory session. In the morning session, you will learn about chicken stock, sorbets, custards, vegetable garnishes, soups, and crab preparation. Your lunch will be Thai chicken noodle soup.
In the afternoon session, you will learn about salsa, potato garnishes, meat cookery, flavored salts, and chocolate tart. Your dinner will be honey, soy, and ginger flank steak, piperade, sweetcorn chili salsa, and spicy potato wedges, with warm dark chocolate tart, pistachio Anglais, and raspberry sorbet.
You will have tea and coffee upon arrival at the school. Then, you will have a short recap of the week. In the morning session, you will learn about bread, shellfish cookery, sorbet, polenta cake, fruit compote, mayonnaise, fish stock, round fish filleting, and reduction based sauces. Your lunch will be Devon crab and tiger prawn cocktail with dill and sun blushed tomato bread; pan-fried fillet of John Dory with mussels, cockles, baby leeks, peas, and vermouth; and lemon, orange, and vanilla polenta cake, blueberry compote, and yogurt sorbet.
In the afternoon session, you will have a course round-up and a certificate presentation.
