Italy Truffle Culinary Holiday

On this two-day course, you will get a profound understanding of truffles, white or black, depending on the time of year you visit. You will join a professional truffle hunter and his trained dog searching for truffles in the woods. Although it is never guaranteed that you will actually find some, Academia Culinarium can say that they never returned empty-handed since 2014!

Program

You will learn a lot about this fungus: how to find them, how to buy, clean, prepare and store the different types of truffles. We will eat a fabulous truffle lunch for us, prepared by someone who knows best, the truffle hunter himself! You will have the opportunity to buy truffle products from our truffle hunter which are perfectly suited to be transported home without cooling. We can also organize fresh truffles for purchase and takeaway.

Day 1

On the day of your arrival, enjoy a welcome drink at the terrace and get to know the premises. Chef Michael will personally take you on a walk into the olive grove and the herb garden where you will get to know about what Tuscany has to offer. In the evening, prepare a light truffle-themed dinner together, which you'll decide jointly based on the raw materials at hand. Some glasses of wine, and maybe a digestive later, it is time to listen to the birds say goodnight.

Day 2

On the second day, start with an early breakfast, which Chef Michael will prepare for you, after which you'll leave for Volterra in order to meet up with the professional truffle hunter and one of his dogs. Before you leave for the forest, you'll learn how to source, buy, clean, store, and of course, how to best prepare truffles. After this, you'll go truffle hunting in the forest.

Chef Michael is almost sure that you will find the black or the white "gold" of the Tuscan hills. Returning to the cabin, a fabulous four-course truffle lunch is prepared by the truffle hunter and his family. You will have the opportunity to buy fresh truffles or some of the highest quality truffle products, such as truffle honey or truffle salt.

They are members of the slow-food movement, so they will not rush you. A siesta on the terrace will do you good. Should you want to stay, an extra night in the Casa Delizia can be arranged for a fee.

Cooking classes

Location

Tuscany is known for its landscapes, history, artistic legacy, and its influence on high culture. It is regarded as the birthplace of the Italian Renaissance and contains well-known museums such as the Uffizi and the Pitti Palace. Tuscany produces excellent food and famous wines, including the Super Tuscans, Chianti Classico, and Brunello di Montalcino.

Tuscany is a very popular destination within Italy. The main tourist spots are Florence, Pisa, Siena, and Grosseto. The breathtaking Tuscan landscape with its smooth hills and cypress alleys are world-famous, so Academia Culinarium has decided to establish their second location in the middle of it all: Lajatico, in the Val d’Era, the valley of the Era River, it is the birthplace and residence of world-famous tenor, Andrea Bocelli, who can be seen now and then riding through the village.

The hamlet was first mentioned in the 12th century so it has historical roots which you can see on every wall. The house, Casa Delizia is a 300-year old farmhouse that has been lovingly renovated to house foodies and wine lovers from around the world. The purpose-built bright kitchen is ideal for joint cooking, as it is spacious with the right dimensions to offer a good view into pots and pans.
