Italy Culinary Cooking Holiday

On this two-day course, you will get a profound understanding of Italian, and more specifically, of Tuscan cooking. The courses are always full of scents, flavors, and colors, like nature around you. You'll always use what the garden gives you, and what you'll buy from friends in the villages nearby. Academia Culinarium follows a hands-on approach where you'll cook together, explaining as you go along, so don’t think of lessons with slides and note-taking, it’s going to be much more fun than that! However, at the end of the course, you will leave with your apron, and a bunch of recipes to impress at home, and hopefully, with memories for a lifetime.

Casa Delizia, located in Lajatico, the birthplace and residence of world-famous tenor Andrea Bocelli, is a 300-year old farmhouse that has been lovingly renovated to house foodies and wine lovers from around the world. The purpose-built bright kitchen is ideal for joint cooking, as it is spacious with the right dimensions to offer a good view into pots and pans.

Casa Delizia is not a resort where other guests are housed as well, the farmhouse is at your disposal throughout your stay. You can choose between four guest rooms, all in classical Tuscan style. Besides the lovely kitchen, the dining room, and the bedrooms, the house has a nice living room, a library with a fireplace, and of course, the lovely terraces.

Program

You will harvest herbs and vegetables in the garden, you will stroll through olive groves and vineyards, and you will understand why they think that food is the straight way to the soul. In the evening of the first day, and after the cooking the next day, you will all sit together at a large table and celebrate “la dolce vita” with a wonderful six-course meal on the terrace between lavender and lemons.

Day 1

On the day of your arrival, enjoy a welcome drink at the terrace and get to know the premises. Chef Michael will personally take you on a walk into the olive grove and the herb garden where you will get to know some of the participants of the meals to follow. In the evening, prepare a light dinner together, which you'll decide jointly based on the raw materials at hand. Some glasses of wine, and maybe a digestive later, it is time to listen to the birds say goodnight.

Day 2

On the second day, start with a bespoke breakfast, which Chef Michael will prepare for you, then you will go shopping to nearby Volterra where you will have the opportunity to visit the Etruscan Museum or just sip in the atmosphere of this medieval, and/or do some serious food shopping. Loaded with greens and vegetables, return to Casa Delizia where you'll start the cooking session with a glass of light prosecco and to the tunes of some Italian Belcanto.

The menu consists of one or two starters (fish and/or meat or vegetable), a pasta dish as primo, and a main course which can be either fish or meat, you'll decide that on the evening before. Talk and taste your way through the process, so on-hand learning is guaranteed! After everything is prepared, lay a stylish table and have a pompous late lunch which you flush down with a bottle of chilled white or a not-so-chilled fresh red wine. After a short break, they'll serve the dessert with a well-balanced espresso from their “own” roaster in Viareggio.

They are members of the slow-food movement, so they will not rush you. A siesta on the terrace will do you good. Should you want to stay, an extra night in the Casa Delizia can be arranged for a fee.

It is regarded as the birthplace of the Italian Renaissance and contains well-known museums such as the Uffizi and the Pitti Palace. Tuscany produces excellent food and famous wines, including the Super Tuscans, Chianti Classico, and Brunello di Montalcino.

Tuscany is a very popular destination within Italy. The main tourist spots are Florence, Pisa, Siena, and Grosseto. The breathtaking Tuscan landscape with its smooth hills and cypress alleys are world-famous, so Academia Culinarium has decided to establish their second location in the middle of it all: Lajatico, in the Val d’Era, the valley of the Era River, it is the birthplace and residence of world-famous tenor, Andrea Bocelli, who can be seen now and then riding through the village.
